2 overripe bananas, mashed
3/4 cup granulated sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 cup vegetable oil
2 eggs
2 teaspoons vanilla extract
1 1/4 cups all-purpose flour
1 teaspoon baking soda

Steps:

  • Preheat oven to 350°F. Spray a 9x5 inch baking pan with non-stick cooking spray, grease with oil or line with parchment paper and set aside.
  • In a large bowl combine bananas, granulated sugar, cinnamon, and salt.
  • Beat in the oil, eggs, and vanilla extract.
  • Add the flour and baking soda and gently stir until incorporated. DO NOT over mix.
  • Pour the batter into the baking pan.
  • Bake for 30 minutes then remove from the oven and cover loosely with foil. *This prevents the crust from burning.
  • Continue to bake for 15 - 20 minutes until a toothpick inserted in the center comes out clean or mostly clean.
  • Cool in pan 10 minutes then remove to cool completely.

Try toasting the bread and slathering with a little salted butter. We're pretty sure you'll never need another banana bread recipe.

1/2 cup melted unsalted butter or vegetable oil, plus more for greasing pan
1 3/4 cups all-purpose flour (see Cook's Note)
1 cup toasted pecans, chopped
1/2 cup granulated sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
Fine salt
1/4 teaspoon freshly grated nutmeg
2 large eggs, lightly beaten
1/4 cup buttermilk, sour cream or yogurt
1/2 cup light brown sugar, lightly packed
1 teaspoon pure vanilla extract
4 soft, very ripe, darkly speckled medium bananas, mashed (about 1 1/2 cups)

Steps:

  • Preheat the oven to 350 degrees F. Lightly butter one 9-by-5-inch loaf pan.
  • Whisk together the flour, pecans, granulated sugar, baking soda, cinnamon, 1/2 teaspoon salt and nutmeg in a large bowl. Whisk together the eggs, melted butter, buttermilk, brown sugar and vanilla in a medium bowl; stir in the mashed bananas. Fold the banana mixture into the flour mixture until just combined (it's OK if there are some lumps).
  • Pour the batter into the buttered pan and lightly tap the pan on the counter to evenly distribute the batter. Bake until browned and a toothpick inserted into the center comes out completely clean, about 1 hour. Let the bread cool for 10 minutes in the pan, then turn out onto a rack to cool completely.

1/2 Cup Unsalted Butter ((softened) - 115 grams - 1/2 cup equals 8 tablespoons)
2 Eggs ((large))
2 Bananas
1/3 Cup Milk (- 77 milliliters)
2 Cups Flour ((all purpose flour) - 240 grams)
1/2 Cup White Granulated Sugar (- 100 grams)
1/2 Cup Light Brown Sugar ((packed cup) - 107 grams)
1 Teaspoon Vanilla Extract (- 5 milliliters)
1 Teaspoon Baking Soda (- 5 milliliters)
1 Teaspoon Baking Powder ((aluminum free) - 5 milliliters)
1/2 Teaspoon Salt (- 2.5 milliliters)

Steps:

  • Preheat oven to 325 degrees F.
  • If necessary, grease/spray the bread pan or use baking parchment paper to line the bread pan.
  • Mash bananas with a fork.
  • Lightly beat eggs.
  • Soften the butter in a microwave.
  • Stir eggs, milk, bananas and butter together.
  • Mix in remaining ingredients. Stir until the batter is fully mixed.
  • Optional - If you want to enhance this 2 banana bread recipe, you can stir in 1 cup of your family's favorite dessert ingredient (i.e. chocolate chips or chopped walnuts) after you have mixed the batter.
  • Pour the finished batter into a nonstick bread pan. Smooth out the top of the batter within the bread pan.
  • Bake in the oven for 60-65 minutes or until golden brown.
  • Take bread pan out of oven and let the banana bread cool down in the bread pan for 10 minutes. Do not remove the banana bread from the bread pan during this 10 minute cool down period. Use oven mitts as the bread pan will be very hot coming out of the oven.
  • Optional - Right after taking the bread pan out of the oven, use a long wooden skewer to test if the banana bread is completely cooked. Wear oven mitts as the bread pan will be hot. See the tips section for more details on this classic "toothpick" test.
  • After 10 minutes, remove the banana bread from the bread pan. Place the banana bread on a cooling rack in order to completely cool. This cool down may take 1-2 hours. Gently slide a silicon spatula between the banana bread and the bread pan walls if the banana bread is stuck in the pan.

140g butter, softened, plus extra for the tin
140g caster sugar
2 large eggs, beaten
140g self-raising flour
1 tsp baking powder
2 very ripe bananas, mashed
50g icing sugar
handful dried banana chips, for decoration

Steps:

  • Heat oven to 180C/160C fan/gas 4.
  • Butter a 2lb loaf tin and line the base and sides with baking parchment.
  • Cream 140g softened butter and 140g caster sugar until light and fluffy, then slowly add 2 beaten large eggs with a little of the 140g flour.
  • Fold in the remaining flour, 1 tsp baking powder and 2 mashed bananas.
  • Pour the mixture into the prepared tin and bake for about 50 mins, or until cooked through. Check the loaf at 5-min intervals by testing it with a skewer (it should be able to be inserted and removed cleanly), as the time may vary depending on the shape of your loaf tin.
  • Cool in the tin for 10 mins, then remove to a wire rack.
  • Mix 50g icing sugar with 2-3 tsp water to make a runny icing.
  • Drizzle the icing across the top of the cake and decorate with a handful of banana chips.
