1 pound asparagus (about 19 stalks), trimmed
1 tablespoon olive oil
Salt and freshly ground black pepper
6 to 8 paper-thin slices prosciutto, halved lengthwise

Steps:

  • Preheat the oven to 400 degrees F.
  • Snap the dry stem ends off of each asparagus and place on a heavy baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and toss. Roast until the asparagus is tender, about 15 minutes. Cool completely.
  • Wrap each asparagus with 1 piece (about 1/2 a slice) of prosciutto, exposing tips. Arrange on a platter and serve at room temperature.

1 tablespoon olive oil
16 spears fresh asparagus, trimmed
16 slices prosciutto

Steps:

  • Preheat the oven to 450 degrees F (220 degrees C). Line a baking sheet with aluminum foil, and coat with olive oil.
  • Wrap one slice of prosciutto around each asparagus spear, starting at the bottom, and spiraling up to the tip. Place the wrapped spears on the prepared baking sheet.
  • Bake for 5 minutes in the preheated oven. Remove, and shake the pan back and forth to roll the spears over. Return to the oven for another 5 minutes, or until asparagus is tender, and prosciutto is crisp. Serve immediately.

1 pound asparagus, preferably thick spears
3 to 3 1/2 ounces sliced prosciutto
1 to 2 tablespoons olive oil
Ground black pepper
Lemon zest, optional
Freshly grated Parmesan cheese, optional

Steps:

  • Heat the oven to 400°F: Line a large sheet pan with parchment paper and set aside.
  • Prepare the asparagus: Rinse and pat dry the asparagus. Snap off the tough ends of the asparagus. Set asparagus spears aside. (Reserve the snapped ends for another meal, if you like.)
  • Wrap the asparagus with prosciutto: Cut prosciutto slices in half down their length. Wrap each spear of asparagus with one strip of sliced prosciutto. Tug the prosciutto a little as you wrap it around the asparagus to give it tension. This helps to ensure that the prosciutto wraps around the asparagus tightly. Lay the wrapped asparagus spears on the lined sheet pan.
  • Drizzle the asparagus with 1 to 2 tablespoons of olive oil: Sprinkle a pinch of black pepper on top.
  • Bake the asparagus for 8 to 10 minutes: When done, the asparagus will be bright green and easily pierced with a fork, and the prosciutto will be crisped around the edges.

24 spears fresh asparagus about 1½ lbs. (*See Cook's Note)
Drizzle olive oil
Drizzle balsamic vinegar
2 cloves garlic, minced
Freshly ground black pepper to taste
24 slices prosciutto
12 - 6 inch bamboo skewers soaked in cold water for 1 hour
Tony Roma's BBQ Baby Back Ribs

Steps:

  • Trim the ends off of the asparagus spears and place in a large bowl or pan and cover with cold water and let stand for 1 hour. This will allow the asparagus to absorb a little moisture and stay crisp & moist when grilling. Drain asparagus. Drizzle asparagus with a little olive oil and balsamic vinegar. Not too much just a little, add minced garlic and season to taste with freshly ground black pepper. Gently mix to evenly coat the asparagus. Lay a slice of prosciutto vertically (short end at the bottom) on a flat work surface. Place one seasoned asparagus spear across the middle of the prosciutto at the bottom end and roll up the asparagus tightly in the prosciutto. Repeat with remaining asparagus. Line up 4 prosciutto wrapped asparagus spears.
  • Skewer the 4 spears together, 2 skewers per group of 4 wrapped asparagus.
  • This will make it easier to grill the asparagus. Repeat until you have 6 skewers of 4. They end up looking like little rafts of prosciutto wrapped asparagus.
  • Preheat grill to medium high 450-550° F. Cook asparagus until tender and prosciutto crisps, about 3-4 minutes per side.
  • Remove from grill, drizzle with a little extra olive oil and balsamic vinegar and serve immediately with grilled Tony Roma's BBQ Baby Back Ribs.

  • Wrap 2 to 3 asparagus with prosciutto.

8 thin slices prosciutto, sliced in half

Steps:

  • Preheat the grill to medium-high heat.
  • Trim the asparagus ends and put them on a sheet pan. Add the olive oil and sprinkle with salt and pepper, to taste. Toss to coat. Grill the asparagus until tender, rotating on all sides, for about 5 to 10 minutes. Remove them from the grill to a platter. When cool enough to handle, wrap each asparagus with 1 piece (about 1/2 a slice) of prosciutto. Serve immediately or at room temperature.

¼ cup low-sodium chicken broth

Steps:

  • Bundle together 3 asparagus spears, or 5 spears if they are slender. Wrap 1 prosciutto slice around each asparagus bundle, catching the beginning edge of the prosciutto around one spear of asparagus.
  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Melt butter. Place prosciutto-wrapped asparagus bundles seam-side down into the Instant Pot® and saute until prosciutto is lightly browned, about 2 minutes. Turn bundles over and cook until prosciutto is browned, 2 more minutes. Turn bundles over the rest, seam-side down. Pour chicken broth into pot. Select steam pressure according to manufacturer's instructions; set timer for 3 minutes. Allow 10 minutes for pressure to build.

I had seen this a few times before and I thought that I would give it a try. I don't like a asparagus, but with some good prosciutto, the asparagus is excellent. Prosciutto is already pretty salty, so just to be safe, I wouldn't salt the asparagus until its on your plate. Prosciutto is basically fancy Italian bacon.

1/2 lb asparagus
1/4 lb thinly sliced prosciutto
salt
pepper
olive oil

Steps:

  • Break the ends off of the asparagus, keeping the tips.
  • Wrap about 7 or 8 of the asparagus in each strip of prosciutto, repeating with each group of asparagus.
  • Drizzle some olive oil into a ten-inch skillet, and turn it up to medium-high.
  • Place three of the bunches into the skillet and cook for about 5 minutes on each side.
  • Repeat with the rest of the bunches, drizzling in some olive oil in-between batches.
  • Hit it with a little olive oil and pepper.
  • Enjoy!

1/4 teaspoon salt, plus more to taste
1/4 cup sour cream
1 egg, hard-boiled, peeled, and finely chopped
1 tablespoon chopped fresh flat-leaf parsley
2 teaspoons fresh lemon juice
1/2 teaspoon Dijon mustard
1/4 teaspoon finely grated fresh lemon zest
1/8 teaspoon fresh ground black pepper
4 slices prosciutto

Steps:

  • Snap woody ends off asparagus spears.
  • In a large frying pan, bring 3/4 cup water to boil. Add salt and trimmed asparagus, cover, and cook until asparagus is tender, about 4 minutes. Drain, dry and let cool.
  • In a small bowl, combine sour cream, chopped egg, parsley, lemon juice, mustard, lemon zest, and pepper. Add salt to taste.

A great appetizer to serve from Bon Appetit. The cheese can be hard to spread on the prosciutto, so try to get the prosciutto cut a little thicker than those in packages. I usually make half of these with the honey mustard, and the other half without it because some people think the mustard is a little too over powering. But either way, they go fast.

30 stalks asparagus
4 ounces boursin cheese, softened
1/4 lb prosciutto
1/4 cup honey mustard

Steps:

  • Trim the asparagus stalks so that the spears are 5 inches long. In a deep skillet bring 1 1/2 inches salted water to a boil and cook the asparagus until they are crisp-tender, about 2 minutes. In a colander drain the asparagus and rinse under cold water. Drain the asparagus well on paper towels.
  • In a bowl mash the Boursin with a fork until it is smooth. Cut 1 slice of prosciutto lengthwise into 1-inch strips and spread each strip with about 1/2 teaspoon Boursin. Spread about 1/4 teaspoon mustard over the Boursin and wrap each strip in a spiral around an asparagus spear, trimming any excess. Make more hors d'oeuvres with the remaining prosciutto, Boursin, mustard, and asparagus spears in the same manner.
  • Makes 30 hors d'oeuvres - count on at least 3 per person!
