1-POT-LENTIL DAL
This healthy 1-pot lentil dal is creamy, satisfying and a great vegan comfort meal. The recipe is cooked in one pot and is very easy to make. Double the recipe if you want to eat leftovers on the second day.

- Rinse lentils under running water. I prefer to soak the lentils for about 10-15 minutes in lukewarm water because they are better digested this way (this step is optional). Drain the water afterwards.
- Meanwhile, chop the onion, garlic, ginger, chili pepper, and carrot (*see recipe notes below). Heat oil in a pot, stir in the onion and fry for about 3-4 minutes over medium heat. Add soy sauce, carrot, garlic, ginger, chili and reduce the heat to low.
- Now add all spices (ground cumin, ground turmeric, ground coriander), red pepper flakes (optional), the lentils and 3 cups of vegetable broth. Bring to a boil and let simmer for about 15 minutes.
- Finally, add coconut milk and cook for a further 10 minute or until the desired thickness of the lentil dal is reached. Season with black pepper, salt, and Sunfood's Golden Milk Super Blend (*see recipe notes). Taste and adjust the seasonings as to your preference.
- Serve warm with basmati rice, potatoes, or naan bread (flatbread), garnish with fresh herbs.

- Cover the mushrooms in boiling water and leave to soak for 10 mins. Boil the lentils in a pan with plenty of water for 10 mins. Drain and rinse, then tip into a pan with the dried mushrooms and soaking water (don't add the last bit of the liquid as it can contain some grit), rosemary and 2 litres water. Season, cover and simmer for 20 mins.
- Meanwhile, heat the oil in a large pan and fry the onions for 5 mins. Stir in the fresh mushrooms and garlic and fry for 5 mins more. Stir in the lentil mixture and bouillon powder, then add the carrots, celery and potatoes. Cover and cook for 20 mins, stirring often, until the veg and lentils are tender, topping up the water level if needed.
- Remove any tough stalks from the cavolo nero, then add to the pan and cover and cook for 5 mins more. If you're following our Healthy Diet Plan, serve half in bowls, then chill the rest to eat another day. Will keep in the fridge for two to three days. Reheat in a pan until hot.

- Place a medium saucepan over medium heat and add the oil. Bring to temperature. Add the mustard seeds, spices and curry leaves to the hot oil and allow to temper for 30 seconds. Add the onion and garlic and fry for two minutes. Do not allow the garlic to burn.
- Cook for a further minute before adding the chopped tomatoes. If using fresh tomatoes, add a splash of water here too. Cover the pan with a tight fitting lid and leave to simmer for 5 minutes.
- Add the lentils, water and salt. Bring to a boil then reduce to a simmer. Cover with the lid again and allow to simmer for 10 minutes, stirring occasionally.
- Remove the lid and test the lentils - they should be just slightly undercooked and still just about holding their shape. Stir in the kale and another splash of water if the lentils are looking too thick. Allow to simmer for a further 5 minutes.

- First heat a bit of oil or vegetable broth for oil free cooking. Add garlic, jalapeno, and onions (optional), then fry for around 4 minutes until the jalapeno begins it soften.
