2 zucchinis, quartered lengthwise
2 teaspoons olive oil
½ teaspoon garlic powder
1 teaspoon Italian seasoning
1 pinch salt
2 tablespoons balsamic vinegar

Steps:

  • Preheat grill for medium-low heat and lightly oil the grate.
  • Brush zucchini with olive oil. Sprinkle garlic powder, Italian seasoning, and salt over zucchini.
  • Cook on preheated grill until beginning to brown, 3-4 minutes per side. Brush balsamic vinegar over the zucchini and continue cooking 1 minute more. Serve immediately.

⅓ cup extra-virgin olive oil
1 teaspoon sea salt
2 cloves garlic, minced
1 tablespoon chopped fresh rosemary
½ teaspoon ground black pepper
6 small zucchini, sliced lengthwise into 1/4-inch thick strips
3 tablespoons balsamic vinegar

Steps:

  • Preheat grill for medium heat and lightly oil the grate.
  • Whisk olive oil, sea salt, garlic, rosemary, and black pepper together in a bowl; brush evenly onto zucchini strips.
  • Cook on preheated grill until brown, 5 to 7 minutes per side; transfer to a serving platter. Drizzle balsamic vinegar over zucchini to serve.

1/2 cup kosher salt
1 1/2 teaspoons dried oregano
1 1/2 teaspoons dried thyme
3 medium zucchini, ends trimmed, sliced lengthwise into 1/4-inch-thick planks
Olive oil, for brushing
1/2 cup crumbled feta cheese

Steps:

  • For the herb salt: Combine the salt, oregano and thyme in a small bowl and mix to blend.
  • For the grilled zucchini: Brush the zucchini planks on both sides with olive oil and sprinkle on both sides with some of the herb salt. Transfer the zucchini to a grill pan set over medium heat and cook until tender, about 5 minutes, flipping halfway through. Remove the zucchini to a serving plate and sprinkle with the feta.

Very healthy Zucchini, lightly grilled and seasoned. My husband and had this at one of our very favorite restaurants, it was easy to re-create.

6 -8 zucchini, sliced medium thick from stem to blossom end
1 tablespoon italian seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons olive oil

Steps:

  • In a hot saute pan, saute the planks of zucchini in the olive oil, sprinkle with the italian seasoning and the salt and pepper (to taste). Saute until lightly brown, turn and cook the other side. Saute the zucchini in a single layer, so you will need to do this in batches. I think a grill pan would work very well, I just used a non-stick skillet.
  • If desired you may garnish the zucchini with a few shavings of parm. cheese.

Steps:

  • Preheat the grill over medium heat.
  • Cut the zucchini into spears. Start by cutting the zucchini in half and then in half again so you have four quarters. For large zucchini, you may need to cut them into eights.
  • Toss the zucchini with the olive oil, garlic powder, Italian seasoning, salt, and pepper.

1 1/2 cups panko breadcrumbs
1 teaspoon chopped fresh thyme leaves
1/4 teaspoon crushed red pepper flakes
Kosher salt
1/2 cup Greek yogurt
1/4 cup milk
2 medium zucchini, each cut lengthwise into 6 wedges
Nonstick cooking spray
Freshly ground black pepper
Lemon wedges, for serving

Steps:

  • Preheat a grill or grill pan for cooking over medium-high heat until hot, about 15 minutes.
  • Mix the panko, thyme, pepper flakes and 1 teaspoon of salt in a medium bowl.
  • Mix the yogurt and milk in a medium bowl. Dip the zucchini wedges in the yogurt sauce, then dredge in the panko. Spray the zucchini sticks with nonstick cooking spray and grill over medium-high heat until the zucchini is nicely marked and tender, about 5 minutes per side. Season with kosher salt and freshly ground black pepper. Serve with lemon wedges.

  • Trim ends of zucchini and slice each zucchini lengthwise just under 1/4-inch thick. In a large, shallow dish, combine oil and zucchini slices, coating slices well.
  • Place a large ridged griddle or ridged cast-iron skillet over medium-high heat. When griddle is hot, add zucchini slices in a single layer. 3 large zucchini (about 8 ounces each), cut lengthwise into 1/2-inch planks
Extra-virgin olive oil, as needed
Coarse salt and freshly ground black pepper
1 cup fresh ricotta (optional)
Fresh basil leaves (or other tender herbs, such as dill, mint or oregano), chopped capers and lemon, for garnish (optional)

Steps:

  • Prepare the grill for direct grilling and heat over high.
  • Working on a large baking sheet, brush the zucchini all over with oil, then season generously with salt and pepper.
  • Once the grill is heated, add the zucchini to the grates in an even layer, leaving about 1 inch between to avoid crowding. Cook, uncovered, until grill-marked and crisp-tender, 3 to 4 minutes per side. (The zucchini should tenderize in just the amount of time it takes to develop grill marks.)
  • In a small bowl, stir the ricotta, if using, with a couple tablespoons of water until extra creamy; season with salt and pepper. Spread the ricotta mixture on a platter, then top with the grilled zucchini, piling it organically to gain some height. Though you need no garnish, you can top with fresh herbs, capers, a flurry of lemon zest and a squeeze of lemon juice if you are feeling fancy.
