EASY ZUCCHINI COOKIES

My grandma's recipe for Easy Zucchini Cookies is one of my most treasured recipes. These cookies have the perfect texture!

2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 tsp salt
1/2 cup butter (softened)
1 cup granulated sugar
1 egg beaten
1 cup zucchini (grated)
1 cup golden raisins
1 cup pecans (chopped)
1 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees.
  • Grease baking sheets or line with parchment paper
  • Combine flour, baking soda, cinnamon and salt in a medium bowl.
  • In a large bowl, beat butter and sugar with a mixer on medium speed until light and fluffy. Add egg and beat well.
  • Gradually add flour mixer and beat until smooth. The dough will be stiff.
  • Stir in zucchini and remaining ingredients.
  • Drop by heaping teaspoonfuls, 2 inches apart onto baking sheets.
  • Bake 13-15 minutes or until lightly browned. Be careful not to over-bake.
  • Cool for 2 minutes then remove to cooling racks.

½ cup margarine, softened
1 cup white sugar
1 egg
1 cup grated zucchini
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground cloves
1 cup raisins

Steps:

  • In a medium bowl, cream together the margarine and sugar until smooth. Beat in the egg then stir in the zucchini. Combine the flour, baking soda, salt and cinnamon; stir into the zucchini mixture. Mix in raisins. Cover dough and chill for at least 1 hour or overnight.
  • Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets. Drop dough by teaspoonfuls onto the prepared cookie sheet. Cookies should be about 2 inches apart.
  • Bake for 8 to 10 minutes in the preheated oven until set. Allow cookies to cool slightly on the cookie sheets before removing to wire racks to cool completely.

1 teaspoon vanilla extract
¾ cup honey
1 egg
1 cup all-purpose flour
⅛ teaspoon baking soda
1 teaspoon baking powder
1 pinch salt
1 cup rolled oats
½ cup chopped pecans
½ cup grated zucchini
½ cup raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a large mixing bowl, cream together the shortening, vanilla, and honey. Beat in the egg until well blended. Combine the flour, baking soda, baking powder and salt; stir into the honey mixture. Stir in the rolled oats, zucchini, pecans and raisins. Drop by teaspoonfuls on greased cookie sheet, and flatten slightly using a fork.
  • Bake 10 to 12 minutes in the preheated oven, until browned. Remove from cookie sheets to cool on a wire rack.

3/4 cup sugar
1 egg
1 teaspoon lemon juice
1 teaspoon grated lemon peel
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup grated zucchini, unpeeled
1 cup chopped walnuts

Steps:

  • Preheat oven to 375°F Coat cookie sheets with nonstick cooking spray. In a medium bowl, cream together the butter and sugar until light and fluffy. Beat in the egg, lemon juice, and lemon peel. Stir in the flour, baking powder, and salt just until the dry ingredients are mixed. Stir in the zucchini and nuts. Drop by rounded teaspoonfuls 2 inches apart onto the cookie sheets. Bake for 15 to 20 minutes, until cookies are golden around the edges. Remove to a wire rack to cool completely.
  • *Note: Mr. Food topped these with a homemade glaze made of 1/2 cup confectioners sugar and 2 teaspoons of fresh lemon juice combined together and drizzled over the cooled cookies.

6 tablespoons cocoa powder
2 teaspoons baking soda

2 eggs
1 teaspoon vanilla extract
2 cups grated zucchini
1 cup chocolate chips

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Stir the flour, cocoa powder, baking soda, cinnamon, cloves, and salt together in a bowl.
  • Beat the sugar and margarine with an electric mixer in a large bowl until smooth. Beat the first egg into the butter until completely blended; beat the vanilla into the mixture with the last egg. Stir the zucchini through the mixture until evenly distributed. Mix the flour mixture into the zucchini mixture until just incorporated.
