1 tablespoon butter
1/2 cup finely chopped onion
1 pouch (6.4 ounces) light tuna in water
1 cup seasoned bread crumbs, divided
1 cup shredded zucchini
2 large eggs, lightly beaten
1/3 cup minced fresh parsley
1 teaspoon lemon juice
1/2 teaspoon salt
1/8 teaspoon pepper
2 tablespoons canola oil

Steps:

  • In a large saucepan, heat butter over medium-high heat. Add onion; cook and stir until tender. Remove from heat., Add tuna, 1/2 cup bread crumbs, zucchini, eggs, parsley, lemon juice, salt and pepper to onion mixture; mix lightly but thoroughly. Shape into six 1/2-in.-thick patties; coat with remaining bread crumbs. , In a large skillet, heat oil over medium heat. Add patties; cook 3 minutes on each side or until golden brown and heated through.

2 zucchini
1 carrot
Kosher salt and freshly ground black pepper
3/4 cup cannellini beans, drained and rinsed
2 tablespoons chopped fresh parsley
1 teaspoon lemon zest, plus lemon wedges, for serving
Cornmeal, for coating
1/2 cup vegetable oil

Steps:

  • Grate the zucchini and carrot on the large holes of a box grater in a colander set over a bowl. Sprinkle with salt and let stand 15 minutes. Squeeze the excess liquid from the vegetables. Put the beans in a medium bowl and mash with a fork. Stir in the zucchini mixture, parsley, lemon zest, a pinch of salt and a few grinds of pepper.
  • Form into 12 patties, each about 2 inches in diameter. Spread the cornmeal in a shallow dish and coat each patty with the cornmeal.
  • Heat 1/4 cup of the oil in a large skillet over medium-high heat. Working in batches and adding the remaining 1/4 cup oil as needed, cook the fritters until crisp and golden on both sides, about 2 minutes per side. Transfer to a paper-towel-lined plate and season with salt. Serve with lemon wedges on the side.

2 small zucchini
Kosher salt
4 scallions, minced
1/4 cup chopped parsley
1/4 cup chopped dill
1 large egg, beaten
3/4 cup grated Parmesan cheese
1/4 cup all-purpose flour
Olive oil, for frying

Steps:

  • Grate the zucchini into a colander in the sink; toss with 2 teaspoons salt. Let sit for 10 minutes, then squeeze out the liquid.
  • In a bowl, stir to combine the zucchini, scallions, parsley, dill, egg, Parmesan and flour.
  • Heat a thin layer of olive oil in a pan over medium to medium-high heat. Drop spoonfuls of the zucchini batter into the skillet and pan-fry, flattening with a spatula, until golden-brown in spots, 3 to 4 minutes per side. Drain on paper towels and season with salt.

1 can tuna, drained and flaked
1 teaspoon baking powder
1/2 teaspoon salt
onion flakes, dried
2 eggs
oil (for frying)
1/4 cup milk

Steps:

  • Sift flour, baking powder and salt into a mixing bowl.
  • Beat the eggs well.
  • Beat in milk.
  • Combine liquid ingredients with dry ingredients.
  • Stir until all flour is moistened.
  • Stir in the tuna.
  • Drop by teaspoonfuls into hot oil, 375 degrees.
  • Fry until golden on all sides.
  • Drain on paper towels.

2 cans light low-sodium tuna in water, flaked and drained
2 tablespoons light mayonnaise
1 garlic clove, minced
1/2 teaspoon salt
1/2 teaspoon ground pepper
1 cup carrot, shredded
1 cup sweet potato, shredded
1/2 cup shredded zucchini, shredded and chopped
1/2 cup green onion, shredded and chopped
1/2 cup frozen corn kernels, thawed
1/2 cup all-purpose flour
1/2 cup pasteurized liquid egg-whites, well-shaken
2 tablespoons canola oil

Steps:

  • Combine tuna with mayonnaise, garlic, salt and pepper. Add carrot, sweet potato, zucchini, green onion, corn and flour; stir to combine. In a separate bowl, whip egg whites until stiff; gently fold into the tuna mixture.
  • Heat half the oil in a large, non-stick skillet set over MEDIUM HEAT. In batches, drop 1/3 cup portions of the batter into the skillet; flatten slightly with the spatula.   • Place shredded zucchini in a linen towel and squeeze really well, twisting at the top and pressing on the “ball” with zucchini. I have squeezed about 1/2 cup of water.
  • Discard liquid and transfer zucchini to a large mixing bowl along with tuna, eggs, Parmesan cheese, mayo and salt. Mix really well, breaking tuna into pieces. Sprinkle flour on top and mix until well combined.
  • Preheat large ceramic non-stick skillet or griddle on medium heat and spray with cooking spray or add a bit of oil and spread with spatula (my preference). Add about 1/3 cup mixture (don’t flatten too thin), fry for 4-5 minutes, carefully flip and cook another 4 minutes or until brown. Work in batches. Fritters fry faster as skillet gets hotter, so watch closely.
  • Serve hot or cold, with a simple Greek yogurt/kefir + garlic + black pepper sauce if you wish (optional but so good).
