A ground beef and macaroni casserole topped with potato chips. This recipe was given to me by my sister-in-law.

1 cup uncooked elbow macaroni
1 pound ground beef
1 (10.75 ounce) can condensed cream of mushroom soup
¾ cup milk
⅔ cup ketchup
½ cup shredded Cheddar cheese
¼ cup chopped green bell pepper
1 cup dried minced onion
1 teaspoon salt, or to taste
1 cup crushed potato chips

Steps:

Preheat the oven to 350 degrees F (175 degrees C). Bring a saucepan of lightly salted water to a boil. Add pasta, and cook for 8 to 10 minutes or until al dente; drain.
Cook ground beef in a skillet over medium heat, stirring until evenly browned; drain. Stir in cooked macaroni, condensed soup, milk, and ketchup until well blended. Mix in the Cheddar cheese, green pepper, and minced onion. Season with salt, and pour into a 2 quart baking dish.
Cover, and bake for 40 minutes in the preheated oven. Uncover, sprinkle the top with potato chips, and bake for another 5 to 10 minutes, until chips are toasted.

1 (48 ounce) can V8 vegetable juice
3 tablespoons lime juice
1 (10 ounce) can rotel hot diced tomatoes
1 (10 ounce) can rotel mild diced tomatoes
2 cups leftover chicken breasts, shredded
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can corn
2 tablespoons fresh cilantro, chopped
chili powder (optional)

Steps:

Sauté the garlic and cumin briefly in a soup pot sprayed with cooking spray.
Add the rest of the ingredients.
Bring to a boil, reduce heat and simmer at least 30 minutes.

2 pounds ground beef
1 cup chopped onion
1/2 cup chopped green pepper
2 cans (15 ounces each) tomato sauce
1 can (28 ounces) diced tomatoes, undrained
1 can (12 ounces) tomato paste
1/2 pound sliced fresh mushrooms
1 cup grated Parmesan cheese
1/2 to 3/4 cup dry red wine or beef broth
1/2 cup sliced pimiento-stuffed olives
1/4 cup dried parsley flakes
1 to 2 tablespoons dried oregano
2 teaspoons Italian seasoning
2 teaspoons minced garlic
1 teaspoon salt
1 teaspoon pepper
Hot cooked spaghetti

Steps:

In a large skillet, cook the beef, onion and green pepper over medium heat until meat is no longer pink; drain. , Transfer to a 5-qt. slow cooker. Stir in the tomato sauce, tomatoes, tomato paste, mushrooms, cheese, wine, olives, parsley, oregano, Italian seasoning, garlic, salt and pepper. Cover and cook on low for 6-8 hours. Serve with spaghetti.

1 large potato
1 bacon strip, diced
2 tablespoons chopped onion
1 small garlic clove, minced
5 teaspoons all-purpose flour
1/2 teaspoon dried basil
1/4 teaspoon pepper
1-1/2 cups chicken broth
1/2 cup half-and-half cream
6 to 8 drops hot pepper sauce, optional
2 tablespoons shredded cheddar cheese
2 teaspoons minced fresh parsley

Steps:

Scrub and pierce potato. Microwave on high for 4-6 minutes or bake at 400° for 50-75 minutes or until tender, turning once. When cool enough to handle, peel and cube potato; set aside., In a small saucepan, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towel. , In the drippings, saute onion and garlic until tender. Stir in the flour, basil and pepper until blended. Gradually add broth. Bring to a boil; cook and stir for 2 minutes. , Add the cream, cubed potato and, if desired, hot pepper sauce; heat through (do not boil). Top each serving with bacon, cheese and parsley.

No, that's not a typo. My DH calls my soups "stoup" because I make them THICK. My oldest son is down with a head cold and a sore throat and I didn't have time for my usual, homemade chicken and noodle soup so I whipped this up instead of the planned dinner he wouldn't have been able to eat. You don't have to have a head cold to enjoy this. You just need to be looking for a bowlful of meaty goodness and colorful veggies with a little extra zip. Note -- "vegetable juice cocktail" is V-8. But that isn't in the ingredient database so I can't say it.

2 lbs ground turkey
1 large onion
1 -2 cup chopped zucchini (1, 8-10-inch or 2, 6-inch squash)
1 -2 cup chopped yellow squash (1, 8-10-inch or 2, 6-inch squash)
2 (14 1/2 ounce) cans diced tomatoes
1 lb frozen spinach (optional)
2 small fresh jalapeno peppers, minced
2 garlic cloves, put through press
1 tablespoon parsley
2 teaspoons oregano
4 cups chicken stock
8 -12 ounces vegetable juice cocktail (optional) or 8 -12 ounces tomato juice (optional)
1 cup rice
olive oil

Steps:

In a large pot, brown the ground turkey and onions in a little olive oil.
Add all the other ingredients and bring to boil.
Simmer 15-20 minutes, until rice is soft and flavors are well blended.
Note: If you prefer a thinner, more brothy consistency add more chicken stock and taste to adjust seasonings.
Note: The jalapenos don't make this really hot -- just a little zippy. If even this is too much substitute the milder Anaheims or "Cubanelle"-type sweet peppers. If its not spicy enough for you go for whatever variety suits your taste.
Note -- I haven't frozen it, but it ought to freeze as well as any other soup.
