12 hard-boiled eggs (made on the stovetop or in the Instant Pot)
1/3 cup mayo (or plain Greek yogurt)
1 tablespoon freshly-squeezed lemon juice (or vinegar)
2 teaspoons Dijon mustard
1/2 teaspoon garlic powder
sea salt and freshly-cracked black pepper
toppings: smoked paprika and chopped fresh chives

Steps:

  • Slice the hard-boiled eggs in half lengthwise.
  • Scoop out the egg yolks and transfer them to a small mixing bowl. Using a fork, mash the egg yolks completely until they form a fine powder. Add in the mayo (or Greek yogurt), lemon juice, Dijon, garlic powder, a generous pinch of salt and pepper, and stir until completely combined. Taste the mixture and season with extra salt and pepper, if needed. Or if the mixture seems too thick, add in some more mayo or a tiny splash of water.
  • Using either a spoon or a small cookie scoop or a piping bag, fill the inside cavities of the egg whites with the yolk mixture. Sprinkle each deviled egg with a pinch of paprika and chives.
  • Serve immediately and enjoy!

Our classic deviled eggs get their kick from mustard and hot sauce. We like the simplicity of the flavor - it's the perfect recipe to use your imagination and add your favorite toppings or mix-ins.

12 large eggs (see Cook's Note)
1/2 cup mayonnaise
1 tablespoon Dijon mustard
1 to 2 dashes hot sauce, optional
Kosher salt and freshly ground black pepper
Finely chopped chives, for garnish
Smoked paprika, for sprinkling

Steps:

  • Place the eggs in a single layer in a wide saucepan, cover with 1 inch of water and bring to a boil. Lower the heat to medium-low and simmer for 10 minutes. Transfer the eggs to a bowl of ice water to cool completely, then carefully peel them.
  • Dip a clean kitchen towel in a small bowl of warm water. Wipe the blade of your knife with the towel to warm it up and to wet the blade. Slice the eggs in half lengthwise, one at a time, wiping the blade clean between each egg. (The warm, wet blade will give you clean cuts.) Remove the yolks to a medium bowl. Mash the yolks with a whisk. Add the mayonnaise, mustard, hot sauce if using and salt and pepper to taste. Whisk until very smooth. Transfer to a large resealable plastic bag or disposable pastry bag and snip off one corner with scissors.
  • Place the egg whites on a platter. Pipe the filling evenly into the egg whites. Top with chives and a sprinkle of paprika. Refrigerate for 20 to 25 minutes prior to serving.

My younger brothers and I were hungry and they were tired of regular eggs and bacon. (How they got tired of bacon is beyond me.) I asked my neighbor if there was anything that she would recommend, and she handed me a few mini limes. She said "Use these, and they will ask for more." Boy was she right! This is the recipe for one egg, but it is super easy to double or triple.

1 mini lime
1 teaspoon salt (or to taste)
1 teaspoon ground black pepper (or to taste)
1 large egg
1/4 tablespoon butter (enough to grease the pan) (optional)
1/4 teaspoon ground cayenne pepper or 1/4 teaspoon cayenne chili pepper flakes

Steps:

  • Rub your butter around your pan and put the pan on medium heat, allow the pan to heat up .
  • Cut the mini lime into fourths and set aside. if you would like scrambled eggs, whisk your egg in a bowl with 1/4 cup of milk and the juice if 2 , mini lime slices.
  • When the pan reaches desired temperature, squeeze a slice of lime to flavor the bottom of the pan for the egg. Put the egg in and squeeze another slice on top of the egg. if you are making the scrambled variation, skip adding more lime. Sprinkle the ground cayenne pepper onto the egg and cook the egg.
  • If you are making over easy eggs, watch the egg carefully so that the yolk doesn't cook to much. For scrambled, make sure all ingredients are spread throughout the egg so that you don't end up with some areas being under seasoned, or a pocket of seasonings.
  • When the egg is done, serve and enjoy! With my family, its a hit. I hope you and your family likes it too.

3/4 cup KRAFT Zesty Lime Vinaigrette Dressing
1 tsp. dried Mexican oregano
2 large yellow squash, cut diagonally into 1/2-inch-thick slices
1 eggplant (1 lb.), cut diagonally into 1/2-inch-thick slices
2 large portobello mushrooms
2 bunches green onions (about 16), trimmed
2 plum tomatoes, halved
6 bone-in chicken breasts (3 lb.)
2 limes, halved

Steps:

  • Heat grill to medium heat.
  • Mix dressing and oregano until blended. Pour 1/2 cup over combined vegetables in large bowl; toss to coat. Brush chicken with remaining dressing mixture.
  • Grill chicken 10 min. Add vegetables to grill; cook 15 min. or until chicken is done (165°F) and vegetables are crisp-tender, turning occasionally and adding limes to the grill for the last 5 min.
  • Serve chicken and vegetables drizzled with juice from grilled limes.

2 large sweet potatoes , cut into chunks
1 lime , cut into wedges
1 tbsp vegetable oil
1 red onion , sliced
½ small pack coriander , stalks chopped and leaves picked
1 tsp smoked paprika
1 tsp ground cumin
400g can black beans , drained and rinsed
4 eggs
1 avocado , sliced
handful cheese tortilla chips and some hot sauce (optional), to serve

Steps:

  • Put the sweet potato and half the lime wedges in a microwaveable bowl. Cover with cling film and cook on high for 7 mins until soft. Discard the limes.
  • Meanwhile, heat the oil over a medium heat in a large frying pan, add the onion and cook for 5 mins. Stir in the coriander stalks and spices, cook for 1 min more, then tip in the black beans and add some seasoning. Gently stir in the sweet potato (you want some chunky pieces), then make four wells in the mixture. Crack in the eggs, then cover and cook for about 8 mins until the whites are set and yolks runny.
  • Top with the avocado and coriander leaves, and serve with the remaining lime wedges. Crush over some tortilla chips and drizzle with hot sauce, if you like.
