ZESTY LEMON HUMMUS



Zesty Lemon Hummus image

A fresh and zesty lemon hummus ready in under 10 minutes!

Number Of Ingredients 8

Juice and zest of one lemon
1 (19 fluid ounce) can chickpeas (drained)
2 heaping tablespoons tahini
2-3 cloves garlic
1/2 teaspoon ground cumin
1/3 cup olive oil
Water (if needed)
Salt & pepper (to taste)

Steps:

  • Add all ingredients to a food processor except for the oil.
  • Blend on high, slowly drizzling in olive oil for about a minute, or until smooth. I usually end up stopping, scraping the sides down, and blending longer. If needed (like if the mixture is too dry), add water gradually while blending on high (start with 1/4 cup or less) until the consistency you want is reached.
  • Serve immediately or chill it first. I like to serve this hummus with a drizzle of olive oil and a sprinkling of smoked paprika.

2 (14 ounces) cans chickpeas, drained
⅓ cup tahini
⅓ cup olive oil
zest and juice of 1 large lemon
1 clove garlic, crushed
salt, to taste
pepper, to taste
4 to 6 tablespoons cold water

Steps:

  • Add the chickpeas, tahini, olive oil, lemon zest and juice, crushed garlic, and some salt and pepper to taste in the bowl of a food processor. Blitz until smooth.
  • With the food processor running, slowly pour in the water a little at a time, until your desired consistency is reached. More water will make a creamier hummus whilst less will give a thicker consistency.
  • Blend for another minute or so to get everything really smooth and well combined.
  • Serve the lemon hummus, optionally garnished with fresh chopped cilantro.

Number Of Ingredients 9

2 cups canned chickpeas, drained, liquid reserved (15.5-ounce can)
1/3 cup tahini or sesame paste
4 teaspoons minced garlic (4 cloves)
6 tablespoons freshly squeezed lemon juice (3 lemons)
8 dashes Tabasco sauce
2 teaspoons kosher salt
Sriracha, to taste
3 tablespoons toasted pine nuts
Good olive oil

Steps:

  • Place the chickpeas, 2 tablespoons of the reserved liquid, the tahini, garlic, lemon juice, Tabasco, and salt in the bowl of a food processor fitted with the steel blade and process until coarsely pureed. The hummus should be moist and thick; add more lemon juice or reserved chickpea liquid to thin, if necessary. Cover and refrigerate for several hours for the flavors to blend. Taste for seasonings. Place the hummus in a serving bowl and drizzle Sriracha over the top. Sprinkle with the pine nuts and a drizzle of olive oil.

2 garlic cloves, peeled
1 can (15 ounces) chickpeas or garbanzo beans, rinsed and drained
1/4 cup lemon juice
3 tablespoons water
2 tablespoons tahini
1 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon pepper
Pita breads, warmed and cut into wedges
Carrot and celery sticks

Steps:

  • Process garlic in a food processor until minced. Add the chickpeas, lemon juice, water, tahini, cumin, salt and pepper; cover and process until smooth. Transfer to a small bowl. Serve with pita wedges and vegetables.

¼ cup tahini
2 tablespoons olive oil
1 tablespoon lemon juice
1 tablespoon minced garlic
1 teaspoon cayenne pepper
½ teaspoon ground cumin
½ teaspoon salt
¼ teaspoon sesame oil
5 dashes hot pepper sauce (such as Cholula®)
1 (15 ounce) can garbanzo beans, drained and rinsed
2 tablespoons cold water

Steps:

  • Combine tahini, olive oil, lemon juice, garlic, cayenne pepper, cumin, salt, sesame oil, and hot sauce in a food processor or blender; blend until very smooth, about 3 minutes. Add garbanzo beans and blend for 2 minutes. Add water and blend for 3 minutes more. Chill in refrigerator.
