ZESTY BROCCOLI CASSEROLE

This was originally a "light" recipe from Cooking Light. Sorry, I like it better unlightened! This is my version.

3 (10 ounce) packages frozen broccoli florets, thawed
cooking spray (buttered flavored is best)
1 1/2 cups milk
2 1/2 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 cup grated sharp cheddar cheese
3/4 cup cream cheese, softened
1 cup mayonnaise
3/4 cup chopped onion (about 1/2 medium)
1 (8 ounce) can water chestnuts, rinsed, drained, and sliced
3/4 cup panko breadcrumbs (Japanese breadbrumbs, or regular breadcrumbs)
2 teaspoons butter, melted

Steps:

  • Preheat oven to 375 degrees.
  • Arrange broccoli in an even layer in an 11 x 7" baking dish coated with cooking spray; set aside.
  • Combine milk, flour, salt, and pepper in a large saucepan over medium high heat. Bring boil. Cook 1 minute or until thick; stirring constantly. Remove from heat. Add cheddar cheese and cream cheese; stirrin until smooth. Stir in mayo, onion, and water chestnuts. Spoon cheese mixture evenly over broccoli.
  • Place panko in a small bowl. Drizzle with butter and toss. Sprinkle breadcrumb mixture evenly over cheese and broccoli mixture. Lightly spray breadcrumb mixture with cooking spray. Bake for 25 minutes or until mixture begins to bubble and breadcrumbs brown.

1 1/2 cups milk
2 1/2 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
3/4 cup shredded sharp cheddar cheese
1/2 cup reduced-fat cream cheese, softened
1 cup mayonnaise
3/4 cup chopped onion (about 1/2 medium)
3/4 cup panko breadcrumbs (Japanese breadcrumbs)

We grow a lot of broccoli in our garden, so I've experimented with different ways to prepare it. It tastes very good and is good for you.

2 cups water
4 cups fresh broccoli florets
2 garlic cloves, minced
1 tablespoon olive oil
1 can (14 ounces) water-packed artichoke hearts, rinsed and drained
1/4 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon hot pepper sauce
1 tablespoon lemon juice
2 tablespoons grated Parmesan cheese

Steps:

  • In a saucepan, bring water to a boil. Add broccoli; cook, uncovered, for 2 minutes. Drain and set aside., In a skillet, saute garlic in oil until tender. Add the artichokes and saute for 2 minutes. Add broccoli, salt, pepper and pepper sauce; saute 3 minutes longer or until broccoli is tender. Remove from the heat; sprinkle with lemon juice and Parmesan.

The sour cream sauce gets its name and zesty flavor from vinegar, poppy seeds, and ground red pepper. Something a little different to do with broccoli, a vegetable that seems to make often appearances on my table! I found this at a library fundraiser.

1 lb broccoli, fresh
2 tablespoons onions, minced
2 tablespoons butter, melted
1 1/2 cups sour cream
2 tablespoons sugar
1 teaspoon white vinegar
1/2 teaspoon poppy seed
1/2 teaspoon paprika
1/4 teaspoon salt
1 dash ground red pepper, add more if you like things spicier
1/3 cup cashews, chopped

Steps:

  • Trim off the leaves of the broccoli, and remove the tough ends of the stalks. I cut it into large spears. Wash broccoli thoroughly; cook in a small amount of boiling water or steam it for 8 minutes (for large stalks, less time for flowets), or until tender. Drain well. Set broccoli aside and keep warm.
  • While the broccoli is cooking, saute the onion in butter in a medium skillet over medium heat, stirring constantly until tender. Reduce the heat to low. Stir in the sour cream and the rest of the ingredients, except cashews. Cook, stirring constantly, until thoroughly heated. Pour over the reserved broccoli and sprinkle with the cashews. Serve immediately.

1/4 cup sharp cheddar cheese, finely shredded
2 cups broccoli florets
2 cups cauliflower florets
vegetable oil cooking spray
1 tablespoon butter, melted
1 tablespoon Dijon mustard or 1 tablespoon coarse grain mustard
1/4 teaspoon white pepper

Steps:

  • Preheat oven to 425°F.
  • Combine breadcrumbs with cheese, stir mixture well, and set aside.
  • Arrange broccoli and cauliflower in a steamer basket over boiling water.
  • Cover and steam until tender-crisp (4 minutes).
  • Coat a 1 1/2 qt casserole dish with cooking spray.
  • Drain veggies and place in casserole dish.
  • In a small bowl, mix margarine, mustard, and pepper; drizzle mixture over veggies.
  • Toss to coat, and sprinkle breadcrumb mixture on top.
  • Bake until heated through (8 minutes).

1 cup water
1/2 teaspoon salt
1 cup instant rice
1/4 cup butter
1/4 cup chopped onion
1/4 cup chopped celery
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
3 cups frozen chopped broccoli, thawed
1/2 cup diced process cheese (Velveeta)

Steps:

  • Bring water and salt to a boil. Add rice; cover and remove from heat. Let sit for 5 minutes. Melt butter in skillet; saute onion and celery until tender. In large bowl, combine rice, celery and onion with remaining ingredients. Pour into a greased 1-1/2-qt. casserole. Bake at 350° for 1 hour.

3 cups finely chopped broccoli
8 ounces cream of mushroom soup
1 cup mayonnaise
1/4 cup onion, chopped
1 cup shredded cheddar cheese
2 eggs, beaten

Steps:

  • Mix in a bowl, can of mushroom soup, mayonnaise, onion, cheddar and the 2 eggs beaten.
  • Fold mixture together.
  • Add the chopped broccoli ( I just chop up the bunch, into small pieces, maybe you will get 2-3 cups) fold that into the mixture.
  • Put into a greased casserole, sprinkle with bread crumbs.
  • Cook uncovered for 45 minutes at 350 degrees.
