- In a small bowl, combine the flour, sugar, salt, baking powder and baking soda. In another bowl, combine the egg, yogurt, oil and milk. Stir into dry ingredients just until moistened. Fold in blueberries., Fill greased or paper-lined muffin cups three-fourths full. Bake at 350° for 20-22 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

- Grease a muffin tin of muffin liners with cooking spray. Set aside.
- In a large mixing bowl, whisk together eggs and sugar.
- Preheat oven to 350˚F (180˚C).
- Add Greek yogurt, applesauce, honey, vanilla extract, lemon zest, and lemon juice. Mix until well combined.
- Stir in flour, baking soda, baking powder and salt.
- Gently fold in blueberries.
- Distribute batter evenly among prepared muffin cups, filling about ¾ of the way full. Top with additional blueberries if desired.
- Bake muffins for 20-25 minutes.
- Cool muffins in pan for 10 minutes before serving.

- Preheat the oven to 400F (200C).
- In a large bowl, mix together the flour, rolled oats, 1/2 cup granulated sugar, baking powder, baking soda and salt.
- In a separate bowl, mix together the yogurt, egg, 1/4 cup lemon juice, and finely chopped peeled lemon (white pith removed first).
- Add the wet ingredients to the dry, mixing only until blended.
- Fill 12 well-greased muffin cups two thirds full.
- Bake for 20 minutes, or until a toothpick inserted into the centre of a muffin comes out clean.
- Meanwhile, prepare the syrup: Put 1/4 cup granulated sugar and the grated rind and juice of 1/2 lemon in a small pot.
- Bring to a boil and reserve.
- When the muffins are baked, prick all over with a toothpick.
- Do not remove them from the pan until cooled.
- Brush the warm syrup on the hot muffins.

If cake flour is not readily available, all-purpose flour can be substituted. The muffins will be slightly denser, but will taste just as good.

- Preheat the oven to 350°F and oil a mini muffin pan.
- In a large mixing bowl, sift together the flour, baking powder, baking soda, salt and sugar.
- Add the oats, cranberries, apricots, sunflower seeds, orange zest and bran and mix to combine.
- In another bowl combine the yogurt, honey, vanilla, butter and eggs and stir until the ingredients are well blended.
- Pour the yogurt mixture into the dry ingredients and stir to mix, just until all ingredients are incorporated.
- Take care not to overmix.

- Preheat oven to 375°F Butter a 12-cup nonstick muffin pan or line with paper liners.
- Heat 1/2 cup of the milk and figs for 1 - 2 minutes or until slightly warmed in a glass measuring cup in microwave on Medium power (50%) or in saucepan over medium heat on stove-top. Set aside.
- In a large bowl, combine flours, flax seeds, baking powder, baking soda, and salt. In another bowl, whisk together remaining milk, egg, yogurt, honey butter and vanilla, until well blended; stir in fig mixture. Pour over dry ingredients and sprinkle with walnuts; stir just until moistened.
