This arroz con salchichas is loaded with canned vienna sausage and sweet corn. A quick and easy meal that can be made in under 30 minutes with just a handful of ingredients.

2 cups medium-grain rice
2 cups water
1 tsp sazon
1/4 cup sofrito
1 onion (finely diced)
3 garlic cloves (finely minced)
1 tsp cumin
1 tsp oregano
1 bay leaf
1 tbsp vino seco (dry white wine (optional))
2 tbsp oil
1 cup sweet corn
2 cans Vienna sausage (drained)
1 1/2 tsp salt (or to taste )
1/4 tsp black pepper (or to taste )

Steps:

  • Add the oil to a large pot and heat over medium-high heat. Add the onions and cook for 3-4 minutes. Stir in the garlic and cook for 20 seconds.
  • Add the sofrito, oregano, cumin, vino seco, and bay leaf. Cook for 30 seconds. Stir in the rice and coat it with the sofrito and spices.
  • Add the water, Vienna sausage, corn, salt, and pepper. Let it come to a boil. Once it comes to a boil, cover, and reduce the heat to medium-low. Cook for 20 minutes or until the rice is tender.
  • Fluff the rice with a fork and enjoy!

2 tablespoons olive oil
1 small onion (diced)
1 small green bell pepper (diced)
3 cloves garlic (minced)
4 ounces pimentos (drained and sliced)
8 ounces tomato sauce
2 cups uncooked long-grain rice (washed and rinsed)
3 1/2 cups water
1 chicken bouillon cube
1/8 teaspoon Bijol ((annatto) or turmeric powder to color the rice)
1 bay leaf
Salt + pepper to taste

Steps:

  • In a Dutch oven or saucepan with a lid, heat oil over medium-high heat. Add onion, green pepper, and garlic. Sauté for 5 minutes.
  • Add sliced pimentos and tomato sauce. Sauté for 1 minute. Add rice, water, bouillon cube, Bijol, bay leaf, salt and pepper to taste (start with 1/4 teaspoon and adjust later). Bring to a boil.
  • Reduce heat to low. Cover and simmer until liquid is absorbed and rice is tender, about 15 minutes. DO NOT OPEN THE LID. The steam is what cooks the rice.
  • Remove from heat. Keep the lid on for another 5-10 minutes. Fluff with a fork, never a spoon. The rice should be moist and delicious. Enjoy!

Pinch cinnamon
3 cups water
1 tablespoon unsalted butter
1/2 teaspoon salt
1 1/2 cups long grain or basmati rice
2 tablespoons sliced scallions

Steps:

  • In a medium saucepan, heat the turmeric, cumin, and cinnamon over low heat until fragrant, stirring, about 30 seconds. Add the water, salt, and butter and bring to a boil. Add the rice and stir well. Cover and reduce heat to a bare simmer. Cook, covered, without stirring until the water is absorbed and the rice is tender, about 20 minutes.
  • Remove from the heat and let sit, covered, without stirring, for 10 minutes. Fluff with a fork, add scallions, and serve.

This dish is a staple that was brought to Brazil in the 1500s by Portuguese colonizers. Saffron was originally used to season and color the rice, but turmeric became more popular due to its greater abundance and lower price. This version is based on a college friend's recipe. Her family in Brazil usually served it alongside black beans stewed with similar ingredients to compliment the flavor and make a complete meal. For special occasions, they added chicken, peppers and peas, transforming the rice into a popular dish called galinhada.

2 tablespoons olive oil
1 small onion, cut into small dice (about 1/2 cup)
1/2 teaspoon ground turmeric
1/4 teaspoon ground coriander
1/4 teaspoon ground cumin

1 cup long-grain white rice
1 3/4 cups chicken broth

Steps:

  • Add the oil to a medium saucepan and heat over medium-high heat until shimmering. Add the onions, turmeric, coriander, cumin, garlic powder and 1 teaspoon salt and reduce the heat to medium. Cook, stirring occasionally, until the onions are softened and the spices are toasted, 3 to 4 minutes.
  • Add the rice and stir until the grains are completely incorporated into the onion mixture. Add the broth and bring to a boil over medium-high heat. Reduce the heat to low, cover tightly and simmer for 15 minutes.
  • Remove the pot from the heat and let sit, covered, for 10 minutes more; the rice will continue to steam. Uncover the pot. All the broth should be absorbed and the onions will be on top. Fluff the rice with a fork before serving.

  • If making the chicken sausages, add 1/4 cup water to a hot skillet and cook sliced chicken sausages at medium heat, turning them frequently, for about 5-10 minutes until cooked through. Cook in batches, if using a small skillet.
  • Fold the sausages into the yellow rice. Serve immediately. Enjoy!

This vibrant rice is cooked with turmeric, tempered with mustard seeds, nuts and dal and finished with lemon zest and juice, resulting in an aromatic, bright, tangy and crunchy rice. It's also a great way to revive leftover rice the next day. (See Cook's Note)

1 cup basmati rice
1 1/2 cups vegetable stock or water
1 teaspoon ground turmeric
Kosher salt
2 tablespoon ghee, coconut oil or olive oil
1 teaspoon brown mustard seeds
1/4 cup peanuts or broken cashew nuts
1 tablespoon split white urad dal
1/2 teaspoon asafetida
1/2 teaspoon crushed red chiles
10 to 15 fresh curry leaves (see Cook's Note)
1 lemon, zested and juiced

Steps:

  • Wash the rice in cold water until the water is no longer cloudy, 3 or 4 times, then drain. This step is important as it removes the starch from the rice and prevents it from clumping up.
  • Heat the stock or water in a heavy pan with a tight-fitting lid. Add the turmeric, 1/4 teaspoon salt and the drained rice. Bring to a boil, then reduce the heat to low, cover and cook for 15 minutes. Do not disturb the rice or take a peek while it's in the middle of cooking. Turn off the heat and let it sit, covered, for another 5 to 7 minutes.
  • Meanwhile, heat the ghee or oil in a pan large enough to fit the rice over medium-high heat. Add the mustard seeds and let sizzle until you hear popping sounds, about 30 seconds. Add the nuts and cook until golden brown and crunchy, about 2 minutes. Lower the heat to medium and add the urad dal, asafetida, crushed red chiles and curry leaves. Be careful as the curry leaves might sputter. Cook until the urad dal turn golden brown, about 3 minutes. Gently mix in the cooked rice.
  • Remove from the heat and add the lemon zest and 2 tablespoons of the lemon juice. Taste and add more salt and lemon juice if needed.

  • Put all the ingredients in a large pan with 1 tsp salt and 500ml water, then heat until boiling and the butter has melted.

3 cups long grain rice
3 tablespoons sofrito sauce
2 (1/4 ounce) packages sazon goya con culantro y achiote
2 (5 ounce) cans vienna sausages, save the liquid for the rice
2 (8 ounce) cans tomato sauce
salt, to taste
1/4 cup canola oil
4 3/4 cups hot water
15 pimento stuffed olives
2 teaspoons capers

Steps:

  • In a 5qt pot,add sofrito, sazón, vienna sausages, tomato sauce, salt, canola oil, olives and alcaparras.
  • Rinse the rice well and add to the other ingredients.
  • Add the hot water and liquid of the sausages and water to equal the amount of water specified. Turn heat up to medium high and stir well.
  • When it starts boiling, lower the heat to medium, and let the rice completely dry out. By now, most of the liquid will be absorbed and you will not see the edges around the rice bubbling.
  • Stir the rice with a large spoon, bringing the rice at the bottom to the top.
  • Cover the pot to a tight fit with the lid and aluminum foil and reduce the heat to low.
  • After about 20 minutes, uncover carefully
  • and turn the rice again using the large spoon.
  • Cover the pot again with and cook for another 10 minutes.
  • Remove the pot and set it on a cool burner. DO NOT leave it on a hot burner or it will continue to cook.
  • Let stand for about 5 minutes.

1 kg long grain rice
4 tablespoons oil
2 large onions, finely sliced
3 garlic cloves, finely chopped
8 cups coconut milk
4 teaspoons salt
2 teaspoons ground turmeric
6 curry leaves
banana leaves or bamboo leaves, for serving
marbled egg (recipe 24091)
2 green cucumbers, sliced
3 fresh red chilies
3 fresh green chilies

Steps:

  • If rice needs washing, wash well beforehand and allow to drain at least 1 hour.
  • Heat oil in a large sauce pan with a well-fitting lid. Fry onions and garlic until onions are soft and golden, stirring frequently to prevent burning.
  • Add rice and fry for a minute or two, then add coconut milk, salt, turmeric and elave for flavouring.
  • Bring to the boil, stirring with a long spoon. As soon as liquid comes to the boil, turn heat very low, cover tightly with lid and allow to steam for 20 minutes.
  • Uncover, quickly stir in with a fork any coconut mild that remains unabsorbed around edge of pan, replace lid and leave on same low heat for a further 3 minutes.
  • Turn off heat, uncover and allow steam to escape and rice to cool slightly. Remove leaves used for flavouring and gently fork rice onto a large platter or a tray lined with well washed banana or bamboo leaves. Shape into a cone, pressing firmly. Use pieces of greased banana leaf or foil to do this. Sarround with marbled eggs, halved, sliced green cucumber and fresh chilies for decoration.

Yellow rice is a beloved dish among many cultural traditions. A staple side in Latin American kitchens, arroz amarillo appears in various iterations across the region. The appeal of yellow rice extends to Central and South Asia, and South Africa, and its brilliant hue achieved with saffron, turmeric or achiote. This version uses widely available and economical ground turmeric, and is a canvas upon which you can incorporate other ingredients and spices. Consider adding a bell pepper to the onion and garlic, or stir in a cup of frozen peas at the very end. The amount of cooking liquid you use depends on the type and quality of your rice, and be mindful to cut down on salt if you use a salted broth. Typically served as a side dish, the dish can also be served on its own.

2 cups white basmati rice (or jasmine rice)
1/4 cup extra-virgin olive oil

3 cups water, chicken broth or vegetable broth for basmati rice (or 2 2/3 cups, if using jasmine rice)

Steps:

  • In a fine-mesh sieve, rinse the rice until the water runs clear, then set aside to drain.
  • In a medium saucepan or pot, heat the oil over medium. Add the onion and garlic, and cook, stirring frequently, until softened and fragrant, about 5 to 7 minutes. Take care not to burn the garlic by reducing the heat slightly if necessary.
  • Add the rice and sprinkle it with the salt and turmeric. Stir to combine, then cook the rice and spices in the oil for about 1 minute. Add the water, bring to a lively boil over high heat and then immediately cover and reduce the heat to low. Cook for about 15 minutes, until the water has been absorbed. Turn off the heat and allow the rice to continue steaming, covered, for another 10 minutes.
  • Gently fluff with a fork or a slotted spatula, taking care not to break too many grains. Garnish with the cilantro, if using, and serve.

¼ cup frozen peas and carrots, thawed
1 sprig fresh cilantro

Steps:

  • Pour chicken broth into rice mixture and bring to a boil; stir tomato, cumin, saffron, salt, and black pepper into broth and bring to a boil. Cover, reduce heat to low, and simmer until rice is cooked, about 20 minutes.
  • Stir peas and carrots into cooked rice; garnish with cilantro.

1/3 cup olive oil
1 (16 ounce) can pre-seasoned black beans
1 stick cooked sausage, My family loves Kielbasa Polish sausage
1 cup parboiled rice
1/4 cup chopped white onion
1 tomatoes, chopped
1 ounce Anjou pear, goya seasoning con sazafran (sassafras in English)
1/2 teaspoon salt (add more if desired)
2 -4 cups water (add as needed to cook until rice is tender)

Steps:

  • Add oil to saute pan and heat on medium-low heat.
  • Chop onions and tomatoes.
  • Add onions and tomatoes to the hot oil, cook until vegetables become watery.
  • Add the rice to the vegetables and heat rice for about 1 minute to toast it - toasting rice is a secret that keeps it from getting soggy when it cooks in water.
  • Once rice is toasted, add your water and seasoning.
  • After about 10-12 minutes of the rice cooking, add your beans and pre-cooked sausage.
  • Continue to cook everything until rice is tender and no longer hard.
  • Once rice is close to desired tenderness and most of water dissolved, turn off heat and let things continue to cook in pot.
  • Serve hot and enjoy.
