YAMS WITH TOASTED SPICE RUB



Yams with Toasted Spice Rub image

4 medium sized yams, or sweet potatoes, cut in 1/2
1/2 cup unsalted butter
1/4 cup brown sugar
2 tablespoons lemon juice
2 tablespoons Toasted Spice Rub, recipe follows
1/2 teaspoon gray salt
1/4 cup fennel seeds
1 tablespoon coriander seeds
1 tablespoon peppercorns
1 1/2 teaspoons red pepper flakes
1/4 cup (1-ounce) pure California chili powder
2 tablespoons kosher salt
2 tablespoons ground cinnamon

Steps:

  • Preheat oven to 375 degrees F.
  • Put sweet potatoes in a glass or stainless steel bowl.
  • Melt the butter in a small saucepan over low heat. Stir in brown sugar and lemon juice. When sugar is completely melted, stir in Toasted Spice Rub and gray salt. Pour mixture over sweet potatoes. Toss well.
  • Arrange sweet potatoes in a baking dish, cut side up. With rubber spatula, scrape all the butter and spice mixture over the top of the sweet potatoes, and then add a sprinkling of Toasted Spice Rub on top of each one. Cover with foil and bake at 375 degrees F until easily pierced with a knife.
  • Toast the fennel seeds, coriander seeds, and peppercorns in a small, heavy pan over medium heat. When the fennel turns light brown, work quickly. Turn on the exhaust fan, add the red pepper flakes, and toss, toss, toss, always under the fan. Immediately turn the spice mixture out onto a plate to cool. Put in a blender with the chili powder, salt, and cinnamon and blend until the spices are evenly ground. If you have a small spice mill or a coffee grinder dedicated to grinding spices, grind only the fennel, coriander, pepper, and chili flakes. Pour into a bowl and toss with the remaining ingredients.

4 tablespoons oil
2 onions, finely chopped
2 red chilies, pounded to a paste
1 teaspoon onion powder
6 tablespoons tomato paste
4 1/2 cups yams or 4 1/2 cups sweet potatoes, cubed
salt, to taste

Steps:

  • Add a little water to a pot and add the onions and tomato paste. Stir and cook until the onions have softened then add the yams, chillies and onion powder.
  • Season with salt and boil until the yams are thoroughly cooked (about 40 minutes). Add a little more water as necessary. When ready, mash and serve.

2 (29 ounce) cans sweet potatoes
2 tablespoons butter
1 tablespoon lemon juice
½ (16 ounce) package gingersnap cookies
1 (16 ounce) package miniature marshmallows

Steps:

  • In a medium saucepan over medium heat, mix the sweet potatoes, butter and lemon juice. Break the gingersnap cookies into the mixture. Stirring occasionally, cook until thick, about 15 minutes.
  • Cover the mixture with desired quantity of marshmallows. Remove from heat and cover 5 minutes, or until marshmallows have melted. Serve warm.

SPICY YAM CURRY



Spicy Yam Curry image

The yam in this (suran), is related to the sweet potato. However, that being said, do not look for a marshmallow topped, brown sugar filled concoction. This is definitely all curry, and is a bit spicy as well. Eat as a vegetarian main dish, or as a side dish to other recipes. If you cannot find suran, just substitute sweet potato or white potatoes. I am sure they would work well.

2 tablespoons mustard oil or 2 tablespoons ghee
1 teaspoon cumin seed
1 onion, chopped
3 garlic cloves, minced
1/2 teaspoon cayenne pepper (add as much as you want)
14 ounces suran yams, cut into cubes
14 1/2 ounces diced tomatoes with juice
1/2 teaspoon salt
1 -2 tablespoon mild curry powder (to taste)
1/2 teaspoon tamarind paste
1/2 cup warm water
1/2 cup frozen peas, thawed
2 tablespoons chopped cilantro (coriander leaf)

Steps:

  • Heat mustard oil or ghee in a large saucepan and add cumin seed.
  • Cook 30 seconds or until fragrant, but do not burn.
  • Add chopped onion, garlic, and cayenne pepper, cooking for several minutes or until onions begin to soften.
  • Stir in diced yam, diced tomatoes, salt, and curry powder.
  • Mix tamarind paste with warm water and add to pan.
  • Reduce heat, cover and simmer for 20-25 minutes, stirring occasionally, or until yam is tender, adding water if necessary to keep from sticking.
  • Stir in thawed peas and cook for 1-2 minutes more, or until peas are tender.
  • Serve garnished with chopped cilantro, with freshly steamed basmati rice (optional).
