1 1/2 cups all-purpose flour
1/3 cup unsweetened dutch process cocoa (such as droste)
1 teaspoon baking powder
1/2 teaspoon salt
2/3 cup sugar
1/2 cup espresso or 1/2 cup strong coffee, cooled
2 large eggs
2 tablespoons canola oil
1 teaspoon vanilla extract
1/2 cup confectioners' sugar
1 -2 tablespoon water

Steps:

  • Preheat oven to 325 degrees. Spray 24 mini-donut cups with nonstick spray.
  • Whisk together the flour, cocoa, baking powder, and salt in a small bowl.
  • Whisk together the sugar, coffee, eggs, oil, and vanilla in a large bowl, beating until smooth.
  • Gently fold in the flour mixture, a little at a time, and stir just until smooth.
  • Place about 2 tsp of the batter into each donut cup, filling them halfway.
  • Bake until firm, about 8 minutes.
  • Transfer to a rack to cool 1 minute, then carefully remove the doughnuts and let cool completely on the rack.
  • To make the glaze, stir the confectioner's sugar and 1 tbsp of the water in a small bowl until smooth, adding a little more water if needed (the glaze should be thin).
  • Brush a thin layer of the glaze on top of each cooled donut, let stand 10 minutes to set.
  • 2 Points per serving (1 donut).

2 tablespoons packed dark brown sugar
1 teaspoon cinnamon
1 teaspoon unsalted butter, melted
1 (11 ounce) package refrigerated breadstick dough
1/4 cup low-fat cream cheese (Neufchatel)
1/4 teaspoon vanilla extract
1/4 cup confectioners' sugar

Steps:

  • Preheat oven to 375°F Spray a 9x13 inch baking pan with cooking spray.
  • Combine brown sugar, cinnamon, and butter in small bowl, set aside.
  • Separate breadsticks into 12 strips. Sprinkle tops with brown sugar mixture and roll each one into a spiral, pressing to seal the ends. Arrange in baking pan 1 inch apart. Bake until lightly golden, about 15-18 minutes. Cool for 10 minutes.
  • To prepare frosting, combine confectioners sugar, cream cheese, and vanilla in a small bowl, adding a few drops of water if needed to make a smooth, spreadable glaze. Drizzle over the tops of the warm rolls and let stand a few minutes to set. Serve warm.

500 g plain flour
1 pinch salt
50 g caster sugar
7 g instant yeast
1 beaten egg
250 ml lukewarm milk
jam, of your choice
50 g caster sugar, extra
1/2 teaspoon ground cinnamon

Steps:

  • Sift the flour and salt into a large bowl. Stir in 50g sugar and yeast.
  • Make a well in the flour. Add the beaten egg. Add milk and mix into a dough.
  • On a floured board, knead the dough until soft - about 5 minutes. Divide the dough into 20 portions and roll into balls. Place on a greased baking tray, cover with clingwrap or a damp teatowel and leave the dough to double in size in warm place.
  • Bake in a 220 degree celcius oven for 12 - 15 minutes or until well risen and browned. Cool slightly.
  • Combine extra sugar and cinnamon.
  • Make a small incision in the doughnut and fill with a teaspoon of jam (a syringe or narrow spoon works well). Brush lightly with water and roll into the cinnamon sugar.

2 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon nutmeg
1 large egg
1/2 cup milk
1/2 cup melted butter or 1/2 cup margarine
1/2 teaspoon vanilla
1/2 teaspoon ground cinnamon

Steps:

  • In a bowl, mix flour, 1/2 cup sugar, baking powder, salt, and nutmeg.
  • In another bowl, beat egg to blend with milk, 1/4 cup melted butter, and vanilla.
  • Add flour mixture and stir just enough to moisten.
  • Spoon into well-greased mini muffin tins.
  • Bake in a 350ºF.oven until golden, about 15 minutes.
  • Mix 1/3 cup sugar and cinnamon.
  • Brush doughnut tops with 3 tablespoons melted butter and roll in sugar/cinnamon.
  • Serve warm or cool.
  • If making ahead, cool, then store airtight up to 2 days.

My former neighbor, Carol, shared this recipe (her own creation) after we sampled some of these delicious "doughnut hole" shaped treats at her house. Carol always was experimenting with whole wheat baked goods, and we really enjoyed these unique tasting doughnuts. They do taste wheaty, but if you enjoy wheat products, this is the recipe for you. (Hint: A tall champagne flute is the perfect size to make a round doughnut hole shape if you don't have a small round cutter.) Prep time includes 2 hours chilling time. Cook time is per batch. I am completely guessing on the yield - I have never counted. Next time I make them, I will count them and update the yield. Also - if you want bigger doughnuts, then just allow follow an adjustment in the cooking time.

1 1/2 cups all-purpose flour
1 3/4 cups whole wheat flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 large eggs, beaten lightly
2/3 cup granulated sugar
1 teaspoon vanilla extract
2/3 cup milk
1/4 cup sweet unsalted butter or 1/4 cup margarine, melted
shortening or cooking oil, for deep fat frying
cinnamon sugar or powdered sugar, for dusting cooked doughnuts, to taste

Steps:

  • Mix together both types of flour, baking powder, salt, cinnamon, and nutmeg.
  • In another bowl, combine eggs, sugar, and vanilla; beat until thick.
  • Combine milk and melted butter.
  • Add some of the flour mixture to the egg mixture, then some of the milk mixture, alternating between each until all is incorporated- do not overmix, just blend each addition until ingredinets are combined.
  • Cover and chill 2 hours.
  • On a lightly floured surface, roll dough out to 1/2" thickness.
  • Cut using a mini doughnut cutter (Carol used just a round shape to make doughnut "holes" out of all of them).
  • Prepare oil for deep fat frying to 375 F according to your fryer instructions (or in a very deep, large pot, using a deep fat thermometer).
  • Fry in small batches, without crowding the pan, about 1 minute per side or until golden, turning with a slotted spoon once.
  • Remove and drain on paper towels - cool slightly (enough to handle without burning hands).
  • Roll in a bowl of cinnamon sugar to coat and serve as soon as they cool enough to not burn your tongue.
  • If using powdered sugar, you will may to wait until the doughnuts are fairly cool as it tends to melt on contact from the heat.
