Steps:
- Place bacon, chopped onions and beef roast pieces in 4-quart saucepan. Cook over medium-high heat, stirring occasionally, 8-10 minutes or until bacon and beef are browned. Stir in parsley, apple juice, broth, tomato paste, bay leaves, garlic, salt, pepper and thyme.
- Place potatoes, carrots, onions and mushrooms in 4- to 5-quart slow cooker; add meat mixture. Cover; cook on Low heat setting 8-10 hours, or High heat setting 4-5 hours or until meat is fork tender. Remove bay leaves; stir mixture before serving.
