WILD BOAR COPPA STEAKS

Standing with your uncles and your dad outside while grilling wild boar over a fire is a rite of passage for a Hmong boy. When they were kids, my father and uncles would hunt wild boar in their homeland of Laos. For me, using wild boar and grilling it over an open hardwood fire brings me closer to understanding and experiencing their childhood. Wild boar is a little leaner than regular pork, so you have to be extra careful to not overcook it. I especially like to use the cut of wild boar from the shoulder that is called coppa steak because it has some intramuscular fat that can withstand high heat.

Number Of Ingredients 20

1/4 cup canola oil
4 teaspoons finely chopped cilantro stem
4 teaspoons fish sauce
4 teaspoons chopped lemongrass
4 teaspoons oyster sauce
4 teaspoons chopped shallots
2 teaspoons chopped garlic
Eight 8-ounce wild boar (or pork) coppa steaks
Kosher salt and freshly ground black pepper
Tiger Bite Hot Sauce, recipe follows
Sticky rice and grilled vegetables, for serving
4 to 5 cloves garlic
3 fresh Thai bird chiles
1 large shallot, halved
2 to 3 tablespoons canola oil, plus more for brushing
Kosher salt and freshly ground black pepper
2 cups chopped fresh cilantro leaves
2 tablespoons fish sauce
1 tablespoon oyster sauce
Juice of 2 limes

Steps:

  • For the marinade: Mix together the oil, cilantro stems, fish sauce, lemongrass, oyster sauce, shallots and garlic in a small bowl and set aside.
  • For the boar: Place one sheet of plastic wrap on a clean cutting board. Put one wild boar coppa steak in the center of the plastic wrap and top with another sheet. Pound the steak with the flat side of a meat mallet, starting in the center and working your way to the edges, until the steak is about 1/2 inch thick. Repeat with the remaining steaks. Layer the steaks in a baking dish and season with salt and pepper. Add the marinade between the layers. Cover and refrigerate for at least 3 hours and up to overnight.
  • Set up a hardwood fire and let it burn to low-burning embers (see Cook's Note). Set up your grate for direct and indirect heat cooking.
  • Grill the steaks over direct heat, flipping every few minutes, until cooked through, 6 to 8 minutes. Let rest for 5 minutes. Slice the steaks on the bias and serve with the Tiger Bite Hot Sauce, sticky rice and grilled vegetables.
  • Set up a hardwood fire and let it burn to low-burning embers (see Cook's Note). Set up your grate for direct and indirect heat cooking.
  • Brush the garlic, chiles and shallot with oil and sprinkle with salt. Place the garlic and chiles on a small baking sheet or boat made with heavy duty aluminum foil. Place the tray and the shallot, cut-side down, on the grill grate over indirect heat. Grill until soft and tender, 3 to 5 minutes per side. Transfer to a cutting board. Stem the roasted chiles and quarter the shallots.
  • Using a mortar and pestle, combine the chiles, garlic, shallots, salt and pepper into a coarse paste. Add the cilantro and combine until it is broken into small pieces. Stir in the fish sauce, oyster sauce, lime juice and 2 to 3 tablespoons oil. Season to taste with salt and pepper.

SUGO DI CINGHIALE: WILD BOAR SAUCE

4 tablespoons/60 ml extra-virgin olive oil
1 onion, finely chopped
1 carrot, finely chopped
1 celery stalk, finely chopped
1 pound/450 g wild boar beef, minced
1/2 teaspoon/2.5 ml nutmeg
Salt and freshly ground black pepper
2 cups/500 ml red wine
3 tablespoons/45 ml tomato paste

Steps:

  • Heat up the extra-virgin olive oil in a saucepan and saute the onion, carrots, and celery until soft. Add the minced wild boar and mix with the vegetables. Add the nutmeg, salt, pepper, and 1 cup wine. Allow the wine to reduce. Then add the tomato paste and mix well with the meat. Add the remaining 1 cup wine. Let the sauce simmer on medium heat for about 20 minutes. Serve the sauce with pasta or with polenta.

Wild Boar Sausage with Onions, Mushrooms, and Homemade Chutney image

12 tablespoons (1 1/2 sticks) unsalted butter, plus 2 tablespoons for roux
1 1/2 cups of any of the following dried fruits: prunes, cherries, apricots, raisins, apples*
2 tablespoons all-purpose flour
1 medium onion, roughly chopped
2 celery stalks, roughly chopped
1 tablespoon chopped fresh garlic
1 tablespoon herbes de Provence (available in most large supermarkets)
Salt
1/2 cup red wine vinegar
2 cups port
1/4 teaspoon ground cloves
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 cup white wine
4 to 5 tablespoons honey
2 tablespoons extra-virgin olive oil
4 pieces wild boar sausage
1 medium onion, chopped
1 1/2 cups sliced button mushrooms or fresh wild mushrooms, if available
1 tablespoon herbes de Provence
Sea salt
1 1/2 cups Homemade Chutney
1/2 cup port

Steps:

  • For the chutney: Heat 2 tablespoons butter in a small skillet over medium heat. Stir in the flour and cook, stirring frequently, for about 5 minutes. The roux should still be light colored; set aside. Chop the fruit medium fine in a food processor. Melt the butter in a saucepan over medium heat. Add the onion, celery, garlic and herbs, season with salt and cook until softened, about 3 to 5 minutes, stirring often. Add the fruit, vinegar, half of the port, clove, cinnamon, and nutmeg and simmer 10 to 15 minutes so all the flavors are extracted and mixed. Add the rest of the port and bring to a boil. Add the white wine and half of the honey. Reduce the heat and simmer for 10 minutes. Taste and adjust the flavor with more honey if needed. Add the roux, a little at a time, until the chutney is lightly thickened. Remove from the heat, cover, and let stand until cool. The chutney will keep in a wide-mouthed glass container in the refrigerator for 2 to 4 weeks.
  • For the sausages: Heat the olive oil in a saute pan over medium heat. Add the sausages, onion, mushrooms, and herbs de Provence and season with salt. Cook for 6 to 8 minutes keeping the sausage in contact with the pan. Add the chutney and port and cook for 3 to 5 minutes, or until the sauce has reduced. Serve on a hot plate.

Assorted dried whole or powdered California and Mexican chilies like anchos (dried poblanos), moritas (smoked serranos), habaneros
Sea salt
Cayenne pepper
Paprika
3 tablespoons olive oil
2 Maui, Vidalia or other sweet onions, coarsely chopped
2 red bell peppers, seeded, sliced into thin rings
8 ounces okra, trimmed, cut crosswise in half
6 ounces portobello or other mushroom caps, coarsely chopped
1 16-ounce package fresh or frozen blanched, shelled soybeans (edamame)
1 pound wild-boar or other lean sausage seasoned with fennel or garlic and parsley, removed from casings
Tips from 1 bunch asparagus (optional)
Mashed purple Peruvian potatoes seasoned with butter, salt and pepper

Steps:

  • To make spice mix: grind chilies in a mortar and pestle and mix according to taste with salt, cayenne and paprika. (To make a medium-hot mix, combine about 2 tablespoons each powdered anchos and moritas, 1 tablespoon each paprika and salt and 1/2 teaspoon each powdered habeneros and cayenne.) Store in a saltshaker.
  • To make goop: heat the oil in a 4-quart dutch oven over medium-high heat and sauté onions until translucent, about 10 minutes. Stir in about 1 tablespoon spice mix and cook 1 minute. Stir in bell peppers, okra, mushrooms and soybeans, cover and cook about 15 minutes, stirring occasionally.
  • Meanwhile, brown the sausage in a large nonstick skillet over medium heat, breaking up into small pieces with a wooden spoon. Stir into the goop. Cover and simmer about 40 minutes, stirring occasionally. Season to taste.
  • Stir in asparagus, cover and cook about 5 minutes longer. Serve with mashed potatoes.
