3/4 cup butter softened
2 tablespoons powdered sugar
1 cup flour
1/2 cup seedless raspberry or strawberry jam
1/4 cup honey
2 tablespoons brown sugar packed
1 teaspoon vanilla
1 cup quick cooking rolled oats
1 cup granola (without dried fruit)
1 cup Fisher chopped pecans
1 cup semi sweet chocolate morsels

Steps:

  • Preheat oven to 350°F. In mixing bowl cream 1/2 cup butter and powdered sugar; stir in flour. With lightly floured fingers, pat dough into ungreased 9x9 inch pan. Bake 10 minutes. Remove; cool 10 minutes. Spread jam evenly over crust. Combine in a bowl remaining 1/4 cup melted butter, honey, brown sugar and vanilla. Stir in oats, granola, pecans, and chocolate. Pat firmly over jam layer. Bake 30 minutes or until golden brown. Cool; cut into squares. Yield: 16 bars

1 1/2 cups low-fat granola
1 cup old fashioned oats
1/2 cup dried cranberries
1/2 cup raisins
1/2 cup whole wheat flour
1/3 cup slivered almonds
1/2 teaspoon ground cinnamon
2 egg whites
1/3 cup honey
1/4 cup firmly packed brown sugar
2 tablespoons vegetable oil

Steps:

  • Butter or spray 8x8-inch baking pan.
  • Preheat oven to 350°F.
  • Combine granola, oatmeal, cranberries, raisins, flour, almonds, and cinnamon in large mixing bowl.
  • In smaller bowl, lightly beat egg whites. Stir in honey, brown sugar, and oil.
  • Stir in honey mixture into dry ingredients until all coated.
  • Press evenly into pan.
  • Bake 20-25 minutes or until golden brown.
  • Let cool fully then cut into bars.

SUPER SEED GRANOLA BAR

High Protein, all natural ingredients. These are not super sweet. The chia buckwheat groats can be found at Trader Joes or other stores carrying health foods and whole foods. I used a product called Super Seeds Ancient Grains for this recipe. Feel free to play around with it. Also, the almond butter can be swapped for any other kind of nut butter and the honey can be swapped for maple syrup or agave syrup. If you like sweeter bars, consider adding chocolate chips or drizzling melted chocolate on top prior to slicing. It's all about experimenting! Keep these in the fridge, stored in an airtight container.

1 1/2 cups quick cook steel cut oats
3 tablespoons chia buckwheat groats, mixed
1/2 cup almonds, sliced
1/2 cup sunflower seeds
1 scoop eas whey protein powder vanilla
1/4 teaspoon sea salt
3 ounces dates
1/2 cup almond butter
1/3 cup honey
1 1/2 teaspoons vanilla

Steps:

  • Place one oven rack at the topmost oven position and preheat oven to 350*.
  • On a cookie sheet, mix together and spread out the oats, chia buckwheat groats (or super seed ancient grains from Trader Joes), sunflower seeds and sliced almonds. Roast in the preheated oven, on the top rack, for 15 minutes. Check every 5 minutes during this process and stir the mixture around to get even roasting and prevent burning.
  • While the grain mixture is roasting, slice open the dates, discard the pits. Place cleaned dates in a small food processor and process until they form a thick ball.
  • Combine the dates, honey, and almond butter in a large saucepan. Heat on medium to medium high, stirring constantly until a thick sauce is formed. Remove from heat.
  • When the oats are finished, and while they are still warm, pour them into the saucepan with the almond butter/date/honey sauce. The warmth of the oats will help mix them with the sauce more easily. Add the protein powder and the vanilla.
  • Mix all ingredients until all ingredients thoroughly combined. This is a very dry looking mix. Do not add more liquid or it will not bind together in the next step.
  • Spray a square pan 8x8 with nonstick spray. Press the mixture into the pan evenly. Place in Freezer to firm up for 15 minutes.
  • Remove from freezer and slice into 12 even pieces. Enjoy!

1/4 cup bob's red mill wheat bran or 1/4 cup oat bran
3/4 cup walnuts, chopped
1/2 cup unsalted sunflower seeds
2 teaspoons avocado oil or 2 teaspoons any vegetable oil
1/3 cup honey, use a good quality
3 -4 drops sweetleaf stevia, to taste
1 teaspoon vanilla extract
1/2 cup dried cranberries
1/4 teaspoon sea salt

Steps:

  • Preheat oven to 350 degrees, spray an 8 inch square baking pan with cooking spray and line with parchment paper. Spray again and set aside.
  • Place the oats, wheat bran, walnuts and sunflower seeds on a cooking sheet. Bake for about 10 to 12 minutes or until lightly toasted. Then set aside.
  • Place the honey in the microwave for about 15 seconds. Just to loosen up a little. . In a medium mixing bowl, add the honey, oil and vanilla along with the salt and SweetLeaf.
  • Add the toasted dry ingredients and mix gently to combine. Add in the dried cranberries.
  • Pour into baking pan and with wax paper, press the mixture to make sure you level out and covers the pan.
  • Bake for about 15 to 17 minutes. You will see the top will be lightly browned. Try not to over bake.
  • Place on a cooling rack. Let cool down at least 1 hour. Cut into 16 squares and enjoy!

Since so many elementary schools are nut free zones, I like making these for my kids to take as wholesome snacks since taking a store bought granola bar would be considered unsafe for those around them with nut allergies. We all LOVE this recipe! Enjoy!

Number Of Ingredients 9

4 cups oatmeal
2 cups flour
1 cup coconut
1/4 cup sugar
2 teaspoons baking soda
1/2 teaspoon salt
3/4 cup vegetable oil
3/4 cup honey (OR 1/2 cup honey, 1/4 cup molasses , OR 1/2 cup honey, 1/4 cup corn syrup depending on your taste)
raisins, chocolate chips, Craisins (or whatever you prefer to add)

Steps:

  • Mix dry ingredients together well.
  • Add oil and honey.
  • Mix well. Get your fingers in there and mix it until all is blended and sticky feeling. If you don't, they will turn out crumbly.
  • Add raisins and whatever else you enjoy.
  • Firmly press into jelly roll pan (12 x 15 inch).
  • Bake 15 to 20 minutes at 375°F They will look puffy and soft when you take them out.
  • Don't wait until they are brown or they will be very hard.
  • Cut into squares while still warm. (I find a pizza cutter works well.).

I am always looking for a good granola bar recipe. I have tried so many other recipes, but none of them even come close to being as good as this one. These are so easy to make, and they are great for lunches or just for a snack. One word of caution.....the more you add to the recipe (ex more nuts), the more likely it is to crumble. These bars freeze really well. Hope you enjoy!

1 1/2 cups granola cereal
1 1/2 cups rolled oats
3/4 cup brown sugar
2/3 cup peanut butter
1/2 cup corn syrup
1/2 cup melted butter
2 teaspoons vanilla
1/2 cup coconut
1/2 cup chocolate chips
1/2 cup raisins
1/2 cup nuts (any kind)
1/2 cup sunflower seeds (optional)
1/3 cup wheat germ (optional)

Steps:

  • Melt butter in microwave. Add butter to brown sugar, peanut butter, corn syrup, vanilla and mix with a mixer. Add wet ingredients to dry, and stir until completely mixed. Pat mixture into a 8x11 pan.
  • Bake at 325°F for 20 minute
  • Let bars cool completely before cutting.
