This is our version of wheat banana bread. As its name suggests, it's even more tasty than the original.

2 cups mashed bananas
½ cup honey
¼ cup vegetable oil
2 eggs
2 tablespoons reduced-fat peanut butter
1 teaspoon vanilla extract
1 cup whole wheat pastry flour
1 cup whole wheat bread flour
¾ cup wheat germ
1 teaspoon salt
1 teaspoon baking soda

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
  • Beat bananas, honey, oil, eggs, peanut butter, and vanilla extract in a bowl until smooth.
  • Combine pastry flour, bread flour, wheat germ, salt, and baking soda in a large bowl; make a well in the flour mixture. Pour banana mixture into well and stir wet ingredients into dry ingredients until batter is just moistened. Pour batter into prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

½ cup honey
½ cup packed brown sugar
1 egg
1 ¼ cups whole wheat flour

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a large bowl, mix together the peanut butter, butter, honey, brown sugar and egg until smooth. Combine the whole wheat flour and baking powder; stir into the batter until blended. Roll into small balls, and place on a greased cookie sheet. Flatten slightly using a fork.
  • Bake for 13 to 15 minutes in the preheated oven, or until cookies are slightly toasted at the edges.

  • Preheat oven to 350 degrees.
  • Grease a 9 x 5 inch loaf pan.
  • In a large mixing bowl,sift together flour, sugar,& baking powder.
  • Blend in the peanut butter& oil.
  • Add egg& milk.
  • Mix well.
  • Pour into prepared pan.
  • Bake at 350 degrees for 50 minutes,or until a toothpick inserted into center of loaf comes out clean.

This is so moist and delicious. It is by far the best banana bread I've ever had. I got this recipe from Vegetarian Times. I used regular crunchy peanut butter and decreased the sugar a little bit. It worked fine, but as a general rule, it really is better to buy the all-natural kind with no trans-fat and no added sugar.

3/4 cup light brown sugar or 3/4 cup raw sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 medium bananas, mashed (very ripe)
1/3 cup unsweetened crunchy peanut butter
1/4 cup plain fat-free yogurt
1 large egg
2 tablespoons canola oil
3/4 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F.
  • Coat standard loaf pan with cooking spray.
  • Combine flour, sugar, baking powder, baking soda, and salt in large bowl.
  • Whisk together mashed bananas, peanut butter, yogurt, egg, and oil.
  • Stir banana mixture into flour mixture until combined.
  • Fold in chocolate chips.
  • Scrape batter into loaf pan.
  • Bake 40-50 minutes, or until toothpick comes out with few moist crumbs.

I wanted a 100% whole wheat bread that tasted good with peanut butter and jelly sandwiches and that has a decent rise. This one not only tastes good, it rises more than than white-bread-flour recipe I used to make. It is also soft and freezes well. I make my bread on Sunday, then make and freeze my sandwiches for the week. Each day I take one out of the freezer and Friday's is just as good as the one on Monday. You can use any flavor jelly.
