- Heat a large pot of salted water to a boil, drop in pasta. Cook pasta to just shy of al dente.
- Heat sauce pot with butter over medium heat, whisk in flour and cook for 1 minute, whisk in stock then milk, allow the sauce to thicken, and season with salt, pepper and nutmeg. Stir in cheeses in a figure eight motion. Stir in Dijon and ham and remove the sauce from heat. Drain pasta and combine with sauce.
BAKED MACARONI AND CHEESE WITH HAM

- White sauce:.
- In medium saucepan, combine cornstarch, salt and pepper; using wire whisk, stir in milk until smooth. Add butter. Stirring constantly with rubber spatula, bring to boil over medium-high heat and boil 1 minute. Remove from heat.
- Stir dry mustard into white sauce; add 1 3/4 cups grated cheese and stir until melted (reserve 1/4 cup cheese for topping). Cook elbow macaroni for six minutes; drain. Add cheese sauce to macaroni; stir. Turn into a greased, 2-quart casserole dish; stir in ham cubes. Top with reserved grated cheese.
- To freeze:.
- Cover casserole with aluminum foil; seal dish in jumbo freezer bag. Freeze.
- To prepare:.
- Place frozen casserole (covered with aluminum foil) in preheated 375ºF oven. Bake for 25 minutes; remove aluminum foil. Bake 25 minutes more, or until hot and bubbly.

- cook the macaroni, using a splash of olive oil and a dash of salt.
- Drain.
- heat cheese soup and milk, stirring frequently.
- Gradually add other cheeses, and seasonings to make it all nice and smooth and gooey.
- Mix together the cheese, the cooked macaroni and the ham.
- At this point, you can bake it in the oven in an 8x8 pan - 350F for about 30 minutes, or heat it through on the stove top - depends on how patient your family is!

- In a saucepan, melt butter over medium heat; saute onion and ham until onion is soft.
- Add flour and cook, stirring until well mixed.
- Slowly add milk, whisking constantly, until mixture starts to thicken.
- Add mustard, salt, pepper and cayenne.
- Stir in cheddar cheese until just melted.
- While making sauce, cook macaroni in a separate pot, until tender but firm.
- Drain and put back into pot.
- Combine with sauce, then pour into a 2 litre baking dish or casserole dish.
- In a small bowl combine parmesan and bread crumbs.
- Sprinkle over macaroni mixture.
- Broil for about 3 minutes, until brown.

- Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain.
- Melt 2 tablespoons butter in a saucepan over medium heat. Stir in flour to make a roux. Slowly add milk to roux, stirring constantly. Stir in Cheddar and Parmesan cheeses and cook over low heat until cheese is melted and sauce is thick, about 3 minutes. Place macaroni in large baking dish and pour sauce over macaroni. Stir well.
- Melt 2 tablespoons butter in a skillet over medium heat. Add breadcrumbs and stir until butter is absorbed, 2 to 3 minutes. Spread over macaroni to cover. Sprinkle with paprika.

WHOLE GRAIN MACARONI AND CHEESE
This is a macaroni and cheese that's not too heavy and benefits mightily from the use of whole-wheat pasta and the addition of broccoli. You can assemble it ahead and bake it when you need it, or bake it ahead and reheat. There are a number of excellent whole wheat macaroni products on the market now. - Heat oven to 350 degrees. Oil a 2-quart baking dish.
- Bring a large pot of water to a boil and salt generously. Add macaroni and cook al dente, a minute short of however long you typically cook pasta if you were serving it right away. Use a skimmer or strainer to lift macaroni from cooking water and transfer it to a large bowl. Toss with 2 teaspoons olive oil and set aside.
- Add broccoli to boiling water and boil 3 minutes. Transfer to a bowl of cold water, drain, and then drain again on paper towels or a kitchen towel.
- To make béchamel, heat remaining 2 tablespoons oil over medium heat in a medium-size heavy saucepan. Add shallot and cook, stirring, until softened, 2 to 3 minutes. Stir in flour and cook, stirring, for about 3 minutes, until smooth and bubbling, but not browned. It should have the texture of wet sand. Whisk in milk all at once and bring to a simmer, whisking constantly until mixture begins to thicken. Turn heat to very low and simmer, whisking often and scraping the bottom and edges of the pan with a rubber spatula, for 15 minutes, until sauce has thickened and lost its raw flour taste. Season with salt, pepper and a pinch of nutmeg. Remove from heat.
- Strain béchamel while hot into the bowl with the pasta. Add cheeses and broccoli and stir together until pasta is nicely coated with sauce. Scrape into prepared baking dish.
- Bake 30 to 40 minutes, until bubbly and the top is lightly browned. Remove from oven and allow to sit for 5 to 10 minutes before serving.
