LOW-CAL FETTUCCINE ALFREDO
This lighter version of alfredo gives you all the creaminess of the original without loads of heavy cream and butter.

- Make the sauce: Melt the butter in a skillet over medium heat. Add the garlic and lemon zest and cook until the garlic is slightly soft, about 1 minute. Add in the flour and cook, stirring with a wooden spoon, 1 minute. Whisk in the milk and 3/4 teaspoon salt and cook, whisking constantly, until just thickened, about 3 minutes. Add the Neufchâtel and parmesan cheese; whisk until melted, about 1 minute. Stir in the chopped parsley.
- Meanwhile, bring a large pot of salted water to a boil. Add the fettuccine and cook until al dente, 2 to 3 minutes. Reserve 1 cup cooking water, then drain the pasta and return to the pot. Add the sauce and 1/2 cup of the reserved cooking water to the pasta and gently toss to combine, adding more cooking water as needed to loosen. Season with salt. Divide among bowls and top with parmesan and pepper.

Steps:
- Heat olive oil in a medium skillet over medium heat. Add onion and garlic, saute until onion is tender.
- Combine milk, chicken broth, flour, salt and pepper in a small saucepan. Heat over medium-low heat, stirring frequently, until sauce becomes thick. Add Parmesan cheese.
- Cook pasta according to package directions.
- Add broccoli florets to the pasta during the last 3-4 minutes of cooking. Cook pasta to al dente.
- Drain pasta and broccoli. Transfer to a large serving bowl, add sauce, toss, and enjoy.

LIGHT ALFREDO SAUCE WITH LINGUINE

Steps:
- Saute garlic in oil, in a sauce pan 1-2 minutes.
- In small bowl mix flour and broth together until there are no lumps. Add to pan and simmer until it thickens.
- Turn off heat. Stir in yogurt, pasta, optional meat/veggies and half of the parsley and half of the cheese. Add salt and pepper to taste.
- Stir again and top with remaining parsley and cheese.
- We love this with chicken. I usually serve it with a salad and bread.
- Enjoy!
LIGHTER ALFREDO SAUCE
This actually turned out very good. I served it with whole wheat pasta, scallops, peas and mushrooms all mixed together. Also, I LOVE garlic, so I added a lot and I didnt add any salt while cooking, so adjust it to your tastes.

- on med-low heat sautee garlic in butter until softened and fragrant.
- turn down the heat and slowly add milk and half and half.
- stir in cheeses and flour.
- stir frequently to combine.
- when fully mixed turn up the heat a bit and continue stirring until sauce thickens.
- remove from heat and serve with pasta and your choice of anything else!

- For the sauce, bring a pot of water to a boil. Add the cauliflower and cook for 5-6 minutes, until fork tender. Drain the water off and transfer cauliflower to a blender. Meanwhile, saute the minced garlic in the butter over very low heat for 3-4 minutes, until fragrant. Add the broth, sautéed garlic, and salt. Puree until very smooth.
- Cook the bacon (I baked mine for about 10-15 minutes at 375 degrees). Crumble and set aside.
- Bring another pot of water to boil. Add the fettuccine and cook until al dente. Drain and reserve the water. Add the sauce, bacon, Parmesan, and peas to the pasta as well as 1/2 cup or more of reserved pasta water (it’s starchy so it helps the texture). Return to low heat and stir very gently – the fettuccine breaks fairly easily. When everything is heated through, remove from the heat and serve topped with parsley, salt, pepper, and if you like, a dash of nutmeg or extra Parmesan.
