WHOLE GRAIN BLACKBERRY SPICE MUFFINS

- Preheat oven to 375°F. Line 17 muffin cups with paper liners and spray lightly with nonstick spray.
- In a large bowl, combine flour and next 6 ingredients (through allspice). Make a well in the center of the mixture. In a small bowl, combine milk, butter, vanilla and egg; add to flour mixture, stirring until just moist. Gently stir in blackberries.
- Spoon 1/4 cup batter into each muffin cup. Sprinkle each lightly with sugar. Bake for 16 minutes, or until center springs back when touched. Cool in pans 10 minutes on wire racks.

- Heat oven to 375°F. Line a standard 12-cup muffin tin with paper liners. In a food processor, process the flour, oats, flaxseed meal, pecans, baking powder, baking soda, and salt until finely ground.
- In a large bowl, whisk together the yogurt, sugar, butter, orange zest and juice, egg, and vanilla. Add the flour mixture and mix just until incorporated (do not overmix). Fold in the blueberries.
- Divide the batter evenly among the muffin cups. Bake until a toothpick inserted in the center comes out clean, 22 to 25 minutes. *Measure the flour by spooning it into a dry measuring cup, then sweep off the excess with a knife.

- Preheat oven to 400.
- Lightly spoon flour into dry measuring cups, level with a knife. Combine flour and next 6 ingredients (through apple pie spice) in a large bowl. Make a well in the center of the mixture. Combine milk, butter, vanilla and egg in a small bowl. Add to flour mixture stirring until just moist. Gently stir in berries.
- Spray each muffin tin with nonstick spray.
- I used a large Pampered Chef scoop and put one scoop into each muffin tin. Bake @ 400 for 16 minutes or until knife inserted in middle comes out clean.

KATO'S BLACKBERRY & BLUEBERRY MUFFINS
These muffins are at their best when served warm with plain or peach butter. They are very quick and easy to make. If you can find them, wild blueberries have a deeper flavor. Frozen fruit may be used, but need to be thawed first. This is a very versatile recipe, feel free to experiment with it.

- Preheat oven to 400 degrees.
- Combine flour, sugar, baking powder, salt and lemon rind in a large bowl.
- Stir the blackberries and blueberries into the flour mixture, coating the fruit well.
- Next add the milk, egg and butter, mixing just until moistened.
- Do not overbeat, the batter should be lumpy.
- In a small bowl mix the sugar, nutmeg and cinnamon together.
- Pour the batter into greased muffin cups and top with the sugar spice garnish.
- Bake in a 400 degree oven for 25 minutes.

This comes from Cooking Light magazine. You can freeze these by letting them cool completely and storing them in zip-top plastic bags in the freezer. Then you can just reheat them in the microwave for about 20 seconds.

- Preheat oven to 400 degrees F (200 degrees C). Grease 12 muffin cups, or line with paper liners. Whisk together the flour, sugar, salt, and baking powder in a large bowl.

I am always looking for ways to add fiber to our diet. These muffins originally called for 1/2 white and 1/2 whole wheat flour. I made some adjustments and the end result were moist, fruit filled muffins. The recipe calls for cinnamon; however, for a true taste delight add 1/2 to 1 teaspoon of my Baking Spice Blend Mix Recipe #145505.

- Preheat oven to 400 degrees.
- Place the oats in blender container and process until fine flour.
- In a medium bowl, thoroughly mix oat flour, oat bran and pastry flour; stir in baking powder and soda.

- Place a rack in the center of your oven and preheat to 400 degrees F. Lightly coat a standard muffin tin with nonstick spray or line with paper liners, then coat the liners with nonstick spray. Set aside.
- In a large mixing bowl, stir together 1 1/2 cups white whole wheat flour, rolled oats, brown sugar, baking powder, cinnamon, and salt. In a separate bowl, whisk together the milk, butter, eggs, and vanilla. Make a well in the center of the dry ingredients, add the wet ingredients to the well, then carefully stir with a wooden spoon, just until blended.
- Gently toss the blueberries with the remaining 1 tablespoon flour, then fold them into the batter, discarding any excess flour that doesn't stick to the blueberries. (This will prevent the blueberries from sinking to the bottom of the muffins.)
- Divide the batter among the prepared muffin cups. Bake for 18 to 20 minutes, until golden brown and a toothpick inserted in the center comes out clean. Remove from oven, and let cool in the pan for 10 minutes, then transfer to a rack to cool completely.
