Whole Wheat Oatmeal Applesauce Banana Bread {healthy + vegan-friendly} image

Naturally sweetened applesauce banana bread made with whole wheat flour and oatmeal. This healthy whole grain banana bread has no butter or oil!

Cooking spray
1 heaping cup mashed banana
1/3 cup honey
1/3 cup unsweetened applesauce
1 teaspoon vanilla
1 egg
3/4 cup unsweetened vanilla almond milk (or skim, coconut, etc.)
1 1/2 cups whole wheat pastry flour
1 cup rolled oats
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F. Spray 9-inch loaf pan with nonstick organic cooking spray.
  • In large bowl combine mashed banana, applesauce, honey, egg, almond milk and vanilla until well combined and creamy.
  • In separate medium bowl whisk together whole wheat flour, oats, baking powder, baking soda, salt and cinnamon. Add wet ingredients to dry ingredients and mix until just combined (don't overmix!).
  • Pour into prepared loaf pan, sprinkle oats over top (if desired), and bake for 60-70 minutes or until toothpick inserted into center comes out clean with a few crumbs attached.
  • Remove from oven and place on wire rack to cool completely. Cut into 12 slices and enjoy! Keep bread tightly wrapped to maintain moisture.

1 1/2 cups white whole wheat flour
1 cup old fashioned rolled oats
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
2 medium ripe bananas, mashed
2 large eggs
2/3 cup unsweetened applesauce
1/3 cup honey
1 teaspoon vanilla

Steps:

  • Preheat oven to 350. Spray a 9x5 bread pan with cooking spray and set aside.
  • Combine the flour, oats, baking soda, cinnamon and salt in a medium bowl and stir to combine.
  • In a separate small bowl, mash the bananas then add the eggs, applesauce, honey and vanilla. Stir well to combine.
  • Add the wet ingredients to the dry ingredients and stir until just combined. Don't overtax.
  • Pour the batter into the greased 9x5 bread pan. Bake at 350 for 35-40 minutes, until a toothpick inserted in the middle comes out clean.
  • Let cool for a few minutes in the pan, then turn out onto a wire rack to cool completely. (You can slice it after about 10 minutes if you want a warm piece.)

Delicious and moist Healthy Banana Bread with whole wheat flour, and naturally sweetened with maple syrup. One bowl and no mixer is required.

4 medium very ripe bananas (1 1/2 cups mashed)
2 eggs (large)
1/2 cup applesauce or Greek yogurt
1/3 cup maple syrup or honey
2 tbsp avocado or coconut oil (melted)
1 tsp pure vanilla extract
2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
2 1/4 cups whole wheat flour or spelt flour

Steps:

  • Preheat oven to 350 degrees F. Line 9 x 5 loaf pan with unbleached parchment paper. In a large bowl, mash bananas with a fork or a masher.
  • Add eggs, applesauce, maple syrup, oil, vanilla, baking powder, baking soda and salt; whisk to combine (masher works fine).
  • Add flour and stir gently just enough to mix.
  • Pour batter in prepared loaf pan and bake for 50 - 60 minutes or until a toothpick inserted in the middle comes out clean.
  • Remove from the oven and let cool for 15 minutes. Then transfer to a cooling rack to cool off completely. Cut into 10 slices and enjoy.

3 cups pumpkin puree
1 ½ cups unsweetened applesauce

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease three 9x5-inch loaf pans.
  • Mix flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves together in a large bowl. Mix pumpkin puree, applesauce, eggs, and bananas together in another bowl.   • Preheat oven to 350.
  • Place bananas in a large bowl and mash with electric mixer.
  • Stir in sugar and let stand 15 minutes.
  • Add applesauce and eggs and beat well.
  • Add remaining ingredients and mix well.

  • Bake for 45 minutes, or until wooden toothpick inserted in center comes out clean.

  • Adjust the oven rack to the lower third position and preheat the oven to 350°F (177°C). Lowering the oven rack prevents the top of your bread from browning too much too soon. Spray a 9×5 inch loaf pan with non-stick spray. Set aside.
  • You can use an electric mixer or mix everything by hand. I like to use an electric mixer because I use it to mash the bananas. Using a handheld or stand mixer fitted with a paddle or whisk attachment on medium-high speed, beat the mashed bananas, applesauce, and eggs together until combined. (Or whisk by hand.) Add the honey, brown sugar, milk, and vanilla extract. Beat on medium-high speed (or whisk) until combined. Set aside.
  • Whisk the flour, baking soda, cinnamon, and salt together. Pour into the wet ingredients and beat on medium speed (or by hand) until combined. Fold in the walnuts.
  • Pour the batter into the prepared loaf pan. Bake for 60-65 minutes, making sure to loosely cover the bread with aluminum foil halfway through to prevent the top from getting too brown. The bread is done when a toothpick inserted in the center comes out clean with only a few small moist crumbs. This may be before or after 60-65 minutes depending on your oven, so begin checking every 5 minutes at the 55 minute mark or so.
