SPOOKY HALLOWEEN EYEBALLS
These taste like Peanut Butter cups. They are fun to make and kids really get a kick out them. A bit time consuming, but the end-product is worth it.

Steps:
- Beat the peanut butter and butter with an electric mixer in a large bowl until smooth. Beat in the sugar and vanilla. Cover and refrigerate for 30 minutes. Roll chilled dough into small, eyeball-sized balls and place on 2 baking sheets lined with wax paper. Refrigerate for another 30 minutes.
- Melt the white chocolate and shortening in a microwave-safe glass or ceramic bowl in 30-second intervals, stirring after each melting, for 1 to 3 minutes (depending on your microwave). Do not overheat or chocolate will scorch. Dip each eyeball into the white chocolate and transfer to the waxed paper until the chocolate has set. You can chill them in the refrigerator.
- Stir a few drops of blue food coloring into the remaining melted white chocolate. Make a round "iris" on the top of the cooled eyeball and press a mini chocolate chip in the center for a "pupil." For an extra spooky bloodshot eyeballs take a toothpick dipped in red food coloring and make squiggly lines on the eye.

PEANUT BUTTER EYEBALLS
Peanut Butter Eyeballs are a holiday variation of a popular candy called Buckeyes. These nutty treats are dunked white chocolate and then decorated to look like bloodshot eyes. Don't be afraid to get creative with your decorating. A platter of different colored eyeballs would look splendidly scary at a Halloween party. Taken from www.food.about.com

Steps:
- In the bowl of a large mixer, blend peanut butter and butter until creamy.
- Add powdered sugar and vanilla to peanut butter mixture and continue beating until it looks smooth.
- Cover a cookie sheet with aluminum foil or waxed paper.
- Using a spoon, scoop out balls of peanut butter and roll between your palms to get them as round as possible. Place on the cookie sheet and freeze for at least 30 minutes.
- Place the white chocolate coating in a microwave-safe bowl and microwave until melted. Stir thoroughly until it is smooth.
- Dip the peanut butter balls into the white chocolate coating. You can use two forks to balance the candy on, or just grasp it in your fingers and roll it around until it is covered completely. Return it to the cookie sheet and proceed to dip the rest of the peanut butter balls.
- While the chocolate is still wet, press an M&M candy in the center for the iris.
- Return the eyes to the refrigerator to harden.
- Once the eyeballs are firm, you can use the red decorator frosting to make squiggly blood vessels.
- Variation: Another option is to take a few drops of red candy coloring and drop them into the melted white chocolate. Use a fork to mix the chocolate around a bit, but don't stir too much: you want blood-red swirls, not pink chocolate! You can then dip your candies straight into your bloody mixture and skip step #9.
ZOMBIE EYEBALL PUNCH

- In a saucepan, bring the cream, sugar and lemon extract to a simmer. Slowly sprinkle the calcium lactate into the pan and mix with a hand blender. Chill.
- Meanwhile prepare the molds (I use a small flexi-mold, but any mold that is able to be flexible will do) with a dot of melted chocolate to resemble a pupil, and place in the refrigerator to set. Then brush the blue cocoa butter to resemble the iris, and pipe in the jelly to resemble bloody veins.
- Once the cream mixture is cold, whip to a soft peak using a hand mixer. Pipe into the prepared molds and freeze until set.
- Unmold the eyeballs and leave them soaking in the Alginate Solution for about 2 minutes. Then rinse with cold water and store in the fridge until you are ready to serve.
- Place the eyeballs in a dish (2 each is appropriately scary) and top with the lime soda. I find that a clear soda without color gives the eyeballs a better look and flavor.
- Sprinkle the sodium alginate into the water and, using a hand blender, mix the solution until there is no more visible powder left. This takes a couple of minutes. Chill the solution until you are ready to use it.
SWEET AND SOUR EYEBALLS
Steps:
- With a fork or clean hands, gently combine the meat, egg, bread crumbs, salt, and pepper. Shape into 1-inch balls. Press a green olive slice into the ball to make "eyes". Melt the butter in a large saute pan and brown the meatballs on all sides. Drain off the fat. In a bowl, stir together the jelly and chili sauce and pour over the meatballs. Simmer uncovered for 30 minutes over medium to low heat, turning the meatballs regularly.
HALLOWEEN EYEBALL COOKIES

- Cream the butter and peanut butter together.
- Beat in the vanilla and sugar.
- Chill for 1/2 hour.
- Roll into small balls, chill on wax paper for another 1/2 hour.
- In a microwave, melt the white dipping chocolate.
- Using two spoons dip the eyeballs into the white chocolate.
- Let cool on waxed paper until firm. Chilling will speed up the process.
- Pour a drop or two of blue food coloring into the remaining melted chocolate.
- Make a round iris on the eyeball, and immediately press a miniature chocolate chip in the center for a pupil, doing 5 at at time.
- For the bloodshot effect, dip the tiny end of a toothpick in red food colouring and squiggle the lines from the pupil outward, but not quite to the edges of the ball.
- These are quite tasty--considering how creepy they are.
- Note: White dipping chocolate is also known as white bark.
