COOKIES 'N' CREAM FUDGE
I invented this confection for a bake sale at our children's school. Boy, was it a hit! The crunchy chunks of sandwich cookie soften a bit as the mixture mellows. It's so sweet that one panful serves a crowd. -Laura Lane, Richmond, Virginia

- Line an 8-in. square dish with aluminum foil; coat with cooking spray. Place half of the broken cookies in pan. , In a heavy saucepan, combine the milk, butter and chips; cook and stir over low heat until chips are melted. Remove from heat; stir in vanilla. , Pour over cookies in pan. Sprinkle with remaining cookies and peppermint candies if desired. Cover and refrigerate for at least 1 hour. Cut into squares.

Steps:
- In a mixing bowl, combine chocolate with sweetened condensed milk and melt in the microwave in 15-second increments.
- Once chocolate is fully melted, add in chopped cookies and stir until combined.
- Pour chocolate mixture into a parchment paper-lined 8x8 inch (20x20 cm) baking tin.
- Chill for 2 hours or until the fudge is firm.
- Cut into bite-sized pieces.

WHITE CHOCOLATE COOKIES 'N CREAM FUDGE
I tried this recently for a work party, and it was a hit, so I figured I'd share (it's a bit different than the other posted recipes I found here). Tastes like a Double Stuf Oreo, turned inside out. Cooking time includes 2 hours of chilling time.

Steps:
- Grease a 9" square pan and line with aluminum foil, making sure to leave a big enough overhang so you can use it to lift the fudge out of the pan once firmed up.
- Combine the sugar, butter and evaporated milk in a medium heavy-bottomed saucepan. Cook over medium-high heat, stirring constantly, until mixture comes to a boil. Cook for 3 minutes, stirring constantly.
- Remove from the heat and add the white chips, marshmallow cream, 2 cups of crushed cookies and salt. Stir until the chips are completely melted.
- Pour fudge into the prepared pan and smooth out as needed. Sprinkle the remaining crushed cookies over the fudge, pressing the cookies into the fudge lightly. Cover pan and chill for about 2 hours, or until firm.
- Remove the solid fudge from the pan using the foil flaps. Peel foil away and cut fudge into small squares for serving.

- In a large bowl, cream together the butter, brown sugar and white sugar until light and fluffy. Add the eggs one at a time, beating well with each addition. - Heat the oven to 180C/160C fan/gas 4 and line two large baking sheets with baking parchment. Beat the butter and sugars together in a large bowl using an electric whisk, or in a stand mixer until just combined. Crack in the egg and beat again. Stir through the vanilla, flour, bicarb, chocolate chunks and ¼ tsp fine sea salt.

- Line 8-inch-square pan with foil so that foil extends over sides of pan; butter foil.
- In large heavy duty saucepan, combine sugar, margarine, and milk.
- Bring to a boil over medium heat, stirring constantly.
- Continue boiling 3 minutes over medium heat, stirring constantly.
- Remove from heat.
- Add marshmallow creme, candy coating and vanilla; blend until smooth.
- Pour half of mixture into foil-lined pan.
- Sprinkle cookie pieces over entire surface.
- Top with remaining mixture.
- Cool to room temperature.
- Refrigerate 1 to 2 hours or until set.
- Remove fudge from pan by lifting foil; remove foil from fudge.
- Using large knife, cut into squares.
- Store in refrigerator.
