WEIGHT WATCHERS CITRUS LOAF (FAT FREE / CORE)
Another recipe from my Weight Watchers Mix & Match recipe book. This one is very novel, but give it a try - it's pretty darn nice for something fat free! This is core or 1.5ww points per serving.

Steps:
- Pre-heat oven to Gas Mark 4 / 180c and line a loaf tin with grase-proof paper.
- Blend the chickpeas in a food processor until smooth.
- Add the eggs, splenda, baking powder and zests of the orange and lemon. Mix again.
- Pour the mixture into the loaf tin and bake for thirty minutes until the cake is golden and a knife comes out clean.
- Remove the cake from the oven and use a knife or skewer to make several holes in the top. Spoon a tablespoon of orange juice over the cake and leave to soak for 10 minutes.
- Remove the cake from the tin and leave to cool on a wire rack.
- Mix the remaining orange juice with the lemon juice.
- Cut the cake into 12 slices and serve 2 slices per person, covered in more of the fruit juice and dusted with mixed spice and some extra Splenda.

- Preheat oven to 180°C. Lightly spray a 23cm (base measurement) round springform tin with oil. Line base and side with baking paper.
- Using electric beaters, beat egg whites and ¼ cup (55g) white sugar in a large bowl until soft peaks form. Set aside.
- Using electric beaters, beat egg yolks and remaining white sugar in another medium bowl until thick and pale. Continue beating while gradually adding olive oil. Add yoghurt, both lemon and orange rind and juice, and a pinch of salt and beat to combine. At low speed, add flour and beat just until combined. Gently fold egg white mixture into flour mixture, in 3 additions, until just combined.
- Spoon mixture into prepared tin and smooth surface with the back of a spoon. Bake for 45–50 minutes or until a skewer inserted into the centre comes out clean. Set cake aside in tin on a wire rack to cool completely before turning out onto a plate. Serve cake dusted with icing sugar.

- Preheat oven to 180°C. Lightly spray a 7cm-deep, 9cm x 25.5cm (base measurement) loaf tin with oil. Line the base and sides with baking paper, allowing the sides to overhang.
- Using electric beaters, beat the spread, sugar and vanilla until light and fluffy. Add the eggs, one at a time, beating after each addition. Stir in the sifted flour and the yoghurt. Divide the mixture between 3 bowls. Add orange rind to 1 bowl. Tint pale orange with food colouring and stir to combine. Add lemon rind to 1 bowl and stir to combine. Add lime rind to last bowl. Tint pale green with food colouring and stir to combine.
- Place alternate spoonfuls of the mixtures into the prepared pan. Using a bamboo skewer, gently swirl mixtures together to create a marbled effect. Tap the base of pan on the bench to smooth the top. Bake for 50 minutes or until a skewer inserted in the centre of the loaf comes out clean. Stand loaf in tin for 10 minutes before transferring to a wire rack to cool.
