WATERMELON COCKTAILS
Steps:
- Combine the watermelon, lime juice and sugar to taste in a blender and blend until very smooth. Strain through a fine-mesh strainer into a small pitcher. Stir in the tequila and orange liqueur if using.
- Fill 4 glasses with ice. Pour the cocktail into the glasses and garnish with watermelon and lime wedges.
TROPICAL TEQUILA COCKTAIL
Ree uses frozen mangos and strawberries to flavor this cocktail, which is served in a hollowed-out pineapple. However, you can use any frozen fruit that takes your fancy and, if you don't have a pineapple to hollow out, a glass will do just as well for serving!

- Trim the top off the pineapple, then halve the pineapple crosswise. Use a spoon to hollow out the two halves, saving the flesh and discarding the core. Set the hollowed-out halves aside to use as cups later.
- Add the reserved pineapple flesh to a blender with the mango, strawberries, cream of coconut, tequila and lime juice. Top with 2 cups of ice and blend until smooth.
- Pour the cocktails into the hollowed-out pineapple halves. Skewer the fresh fruit, including the lime slices, to use as garnish.

- Pack a large blender full of cubed ripe watermelon (with or without seeds) and blend until you have a juice. One small watermelon should yield roughly 3-5 cups (720-1200 ml), so you will have leftover juice (as original recipe is written) for extra margaritas. You can choose to strain the juice through a fine mesh strainer to remove any seeds or pulp, but I didn't find it necessary.
- To make margaritas, add watermelon juice, lime juice, tequila and a handful of ice to a cocktail shaker and shake vigorously to combine. Sample a small amount and adjust flavor as needed, adding more watermelon juice for sweetness, lime juice for acidity, or tequila for booziness.
- Line the rim of two serving glasses (amount as original recipe is written // adjust if altering batch size) with lime juice and sea salt (optional). Add ice and pour over margaritas.

- In a small saucepan, bring the water to a simmer with the sugar and stir over moderate heat until the sugar is dissolved, about 1 minute; let the sugar syrup cool.
- In a blender, puree the watermelon until smooth. Set a fine-mesh strainer over a bowl and strain the watermelon juice, pressing gently on the solids to extract as much juice as possible. Discard the pulp.
- In a large pitcher, combine the sugar syrup with the lime juice, blueberries and mint leaves. Using a wooden spoon, lightly muddle the blueberries and mint. Add the watermelon juice and tequila. Refrigerate until chilled, about 2 hours.
