WATERMELON HERB COOLER
Inspired by visions of clear blue water, sandy toes, and a cold drink dripping with condensation, you opt for a very Summer Friday libation. This refreshing watermelon mint & basil margarita is the perfect warm weather companion, whether you're relaxing on a rooftop in Brooklyn or a beach in Mexico (we'll keep our harbored resentment to ourselves). Like keeping things spicy? Substitute your favorite mezcal and a chili-salt rim to garnish.

WATERMELON COOLERS
Not every gelatin is meant to be completely firm. Halfway between a drink and a dessert, these loose-set watermelon treats include chunks of the fruit. If you like, top them with cubes of rose hip-hibiscus gelee flavored with fresh mint and basil. The bracing results combine seasonality and different textures sure to tempt any palate.

Steps:
- Blitz together the watermelon with the juice of the limes and caster sugar until completely juiced. Push the juice through a sieve into a measuring jug. Measure the amount of juice you have and soak as many leaves of gelatine as you need, using the ratio of 1 leaf of gelatine per 200ml. Dissolve the soaked gelatine in a little hot water from the kettle and add to the watermelon juice. Pour the juice into small moulds and leave to set overnight. Unmould the jellies and serve alongside bite-sized chunks of watermelon scattered with chopped mint and drizzled with honey.
