WATERMELON RUM COCKTAIL
Shake rum and orange liqueur with lime juice and pureed watermelon for a seriously refreshing cocktail.

Steps:
- Puree the watermelon in a blender until very smooth. Pour into a cocktail shaker filled with ice and add the rum, liqueur and lime juice. Shake vigorously and strain into 2 ice-filled cocktail glasses. Garnish each with a lime round if using.

Steps:
- Puree chunks of seedless watermelon in a blender. You may have to add a little bit of water to get the puree started. Then strain the juice through a fine mesh strainer. Keep in the fridge until ready to use.
- Combine watermelon juice, rum, lime and agave nectar in a mixing glass. Stir well. Add ice to two rocks glasses and then fill with the juice mixture. Stir again and then garnish with a tiny slice of watermelon and a lime. Makes two drinks. When I make it by the pitcher, I use 8 cups of watermelon juice, 2 cups of rum, 1/2 cup of lime juice and a quarter cup of agave nectar. Makes two drinks.
