VANILLA BRIOCHE BREAD PUDDING

- Preheat the oven to 350 degrees F. Space two racks evenly in the oven.
- Cut five 3/4-inch-thick slices of brioche and place them in one layer on a sheet pan. Trim some of the crusts from the remaining brioche and cut in 1-inch dice. Spread out on a second sheet pan. Put both pans in the oven for 5 minutes to lightly toast the bread.
- Meanwhile, for the custard, whisk together the whole eggs, yolks, half-and-half, milk, granulated sugar, vanilla and vanilla seeds in a large bowl and set aside. Line a 3-quart baking dish with the whole slices of brioche, cutting them to fit in one layer. Distribute the diced brioche on top. Pour on the custard and press lightly so all the bread is soaked with custard. Set aside for 10 minutes.
- Place the dish in a roasting pan large enough to allow the baking dish to sit flat. Pour about 1 inch of the hottest tap water into the roasting pan, being sure not to get any water into the custard. Cover the roasting pan tightly with aluminum foil, tenting the foil so it doesn't touch the pudding. Cut a few holes in the foil to allow steam to escape. Bake for 45 minutes. Uncover and bake for 45 to 50 minutes, until the custard is set and a knife inserted in the middle comes out clean. Dust with confectioners' sugar and serve warm with the melted ice cream.
BRIOCHE BREAD PUDDING WITH WHITE CHOCOLATE AND CARDAMOM
Inspired by the Swedish verb/noun fika-meaning coffee break or to enjoy a coffee break--this bread pudding is an easy and satisfying complement to any beverage. Similar to the Swedish cardamom bun made with brioche dough, the custard of this bread pudding is steeped with our favorite Nordic spices, cinnamon and cardamom.

- For the brioche: In the bowl of a stand mixer fitted with the dough hook, whisk the yeast and sugar together with the warm milk. Allow to sit for 5 to 7 minutes in a warm, draft-free place while the yeast blooms and forms a foamy raft on the surface. When this happens, your yeast is alive and ready to go.
- Whisk 4 of the eggs into the yeast mixture until thoroughly combined. Add the all-purpose flour, bread flour and salt. Start the mixer on low speed and mix for 2 minutes, until the dough begins to come together into a shaggy mass. Increase the speed to medium and mix the dough for 2 minutes more to activate the gluten.
- Add the softened butter 1 tablespoon at a time, allowing each addition to completely incorporate before adding the next. The dough will get very sticky. Continue mixing until the dough is shiny and smooth, 3 minutes.
- Transfer the dough to a well-greased large bowl, and cover with plastic wrap or a kitchen towel. Allow the dough to rise in a warm, draft-free place for 1 hour.
- After 1 hour, remove the plastic and scoop the dough onto a lightly floured surface. Punch down the dough by pressing it firmly with your hands until it deflates back to its original size. Spread it out slightly and fold the dough into thirds like a letter, bringing the top half over the center and the bottom half up and over the center. Place the dough back into the greased bowl, seam side down. Cover with plastic wrap and allow to chill in refrigerator for 6 hours or overnight.
- Grease an 8 1/2-by-4 1/2-inch loaf pan (6-cup capacity) with butter or shortening.
- Remove the chilled dough from the refrigerator and punch down once more. Scoop the dough out of the bowl onto a lightly floured surface and flatten into an 8-by-12-inch rectangle. Starting from a shorter end, roll the dough up to form a log and place, seam-side down, in the prepared pan.
- Cover the pan loosely with plastic wrap or a kitchen towel and allow to proof one last time in a warm draft-free place, until the dough expands to reach the top of the loaf pan, 1 to 2 hours. Preheat the oven to 350 degrees F.
- Beat the remaining egg and 1 tablespoon of water to make your egg wash. Lightly brush egg wash all over the top of brioche. Bake until it is deep golden brown on top, 35 to 40 minutes. (If you are unsure if the brioche is done, the internal temperature should measure 200 degrees F.) Allow the brioche to cool in the pan for 10 minutes, then turn out onto a wire rack and allow to cool to room temperature.
- For the bread pudding: Slice the brioche into 1-inch cubes and arrange on a baking sheet. Bake until the bread cubes are crisp and slightly crunchy but not as hard as croutons, 10 to 15 minutes. Remove from the oven and allow to cool while you prepare the custard.
- Add the milk to a medium saucepan and place over medium heat. Add the cinnamon, peppercorns and nutmeg. Smash the cardamom pods with bottom of a bowl or glass, just enough for pod to burst and release seeds and add to the pot. Split the vanilla bean lengthwise and scrape the seeds with the back of a paring knife. Add the pod and seeds to the milk. Bring to a simmer, then remove from the heat to allow the aromatics to steep for 10 minutes. Strain through a fine-mesh sieve.
- In a medium bowl, whisk together the eggs, sugar and sweetened condensed milk. Slowly stream into the infused milk mixture while whisking constantly.
- Add the toasted brioche to a 9-by-13-inch ovenproof glass pan. Pour the milk and egg mixture over. (You may have to add half the milk mixture and let the bread absorb it before adding the rest.) Sprinkle the white chocolate chips over the top.
- Bake until the custard is set, 35 to 40 minutes. If the bread pudding starts to brown too quickly, cover with aluminum foil for the duration of cooking time.
- Allow to cool for 10 minutes. Dust with confectioners' sugar before serving.
WHITE CHOCOLATE BREAD PUDDING
Steps:
- Preheat oven to 325 degrees.
- Cut the brioche loaf into 1 inch dice. Place in a 2 quart baking dish. Drizzle with melted butter. Toss chunked white chocolate with bread cubes.
- Combine milk, cream, sugar, and vanilla bean and bring to a boil over medium heat until sugar is disolved. Whisk eggs until smooth. Add hot milk mixture to eggs slowly, stirring contsantly. Do not wisk or custard will have a great deal of foam on the surface. Skim foam from custard. Strain custard over bread and chocolate. Let stand for 10 minutes to allow custard to soak into bread.
- Place baking dish in another larger pan. Pour hot water into larger dish to reach 1 inch up side of dish. Bake the bread pudding for about 45 minutes to 1 hour, until custard is set and brioche is golden.
WARM CHOCOLATE BRIOCHE PUDDING
Steps:
- Preheat oven to 325 degrees F.
- To make the pudding: In a saucepan add the milk, vanilla, and a 1/4 cup sugar. Heat until just boiling. In a bowl mix yolks, remaining 1/4 cup sugar and salt. Add cream to yolk mixture when cream mixture has reached a boil.
- Meanwhile, heat the chocolate in a double-boiler until melted. Place melted chocolate in a large bowl and add warm cream. Mix in diced brioche.
- Pour the mixture into 8 (4-ounce) ramekins coated with nonstick cooking spray. Bake in preheated oven for 12 to 15 minutes.
- Unmold and serve warm with whipped cream, chocolate sauce and fresh raspberries and mint sprigs.
- Combine water, cream, sugar, and cocoa in a saucepan. Bring to a boil and immediately reduce to a simmer. Let mixture simmer until liquids thicken. Pass through a fine mesh sieve.
BRIOCHE
Here is a delicious eggy breakfast bread, perfect for accompanying sorbetto on a hot summer morning. A nice variation is to knead in 1/2 cup raisins soaked in 1/4 cup rum just before the last rise.

- In a large bowl, dissolve the yeast in the warm milk. Stir in 1 tablespoon of the 1/2 cup sugar and the olive oil. Set aside until foamy, about 10 minutes.
- Whisk the egg yolks into the yeast mixture until well blended. Whisk in 1 cup of the flour, the rest of the 1/2 cup sugar, and the salt. Cover with plastic wrap and let stand in a warm place for 1 hour.
- Whisk in the remaining flour 1/2 cup at a time, switching to a wooden spoon when necessary, until too stiff to stir. Turn the dough onto a floured work surface and knead until smooth, about 5 minutes, adding more flour 1 tablespoon at a time as necessary if the dough is sticky.
- Place the dough in a lightly oiled bowl and turn the dough to coat it. Cover the bowl with plastic wrap and let the dough rise in a warm place until doubled, about 1 hour.
- Divide the dough into 12 portions, shaping each into a ball. Place each ball in a muffin cup and let rise in a warm place until doubled, about 1 hour.
- Preheat the oven to 375 degrees F. In a small bowl, whisk the egg white and sugar just until the sugar is dissolved. Set aside.
- Bake the rolls for 18 to 20 minutes, or until golden. Remove from the oven and brush with the egg white mixture while still warm. Let cool in the pan.
- To serve, slice in half and fill with a scoop of sorbetto.
CHOCOLATE CHERRY BREAD PUDDING
I am a big fan of never wasting things, so of course when I have old bread around I don't wanna waste it. So I'm always playing around with different bread pudding recipes. You can't go wrong with chocolate and cherries.

- For the pudding: Preheat the oven to 350 degrees F.
- In a medium pot add the cream, milk, liquid from the cherries, maple syrup and salt and bring to a boil.
- In a separate bowl crack and whisk the eggs. In a larger bowl add the dark chocolate.
- Pour the warm liquid into the dark chocolate and whisk until the chocolate has melted. Slowly whisk in the eggs. Mix in the diced baguette and let it sit for 30 minutes.
- Place a cherry into each of eight 4-ounce ramekins, then fill the ramekins with the bread pudding mixture.
- Place ramekins on a baking sheet and bake for 30 minutes.
- For the brandy whipped cream: Whip the cream, brandy and granulated sugar until it holds stiff peaks. Serve the puddings topped with the cream.
CHOCOLATE ORANGE BRIOCHE BREAD PUDDING

- Preheat oven to 350°F (180°C). Spread brioche in single layer on parchment paper-lined large baking sheet. Bake, stirring once, until golden; about 10 minutes.
- Meanwhile, whisk together eggs, milk, cream, granulated sugar, brown sugar, orange zest, orange juice, liqueur, vanilla, cinnamon and salt in large bowl until well combined.

- Melt the chocolate and cream together in the microwave, stirring every 30 secs. Warm the milk in a large pan.
- Whisk the eggs and sugar in a large bowl or jug. Pour in the hot milk, whisking as you do, then add the chocolate mixture and whisk to combine.
- Remove the crusts from the bread (these will freeze well for breadcrumbs). Use a sharp serrated knife to cut the loaf into 4 or 5 slices along the length of the loaf (approx. 2cm thick) - this is easiest if you score where you want to cut along the top before slicing.
- Spread one side of each slice with the spread of your choice. Roll the slices up, from the shorter ends, then cut each roll in half or three so you have 10-12 roly-polys. Place them cut-side up in a baking dish. Pour over the chocolate custard, making sure each roll is soaked. Cover with cling film and leave for at least 30 mins so the bread can soak up all the custard, or you can put it in the fridge overnight, if you like.
- Heat oven to 170C/150C fan/gas 3½. Brush the tops of the bread swirls with the marmalade, then bake for 45 mins until the bread has puffed up and the custard is just set. Brush with marmalade again for a glossy finish, then serve warm with double cream.

- Preheat the oven to 350F degrees .
- Melt 1/2 stick butter in a 9 x 13-inch glass baking dish.
- Cut brioche bread into 2-inch cubes, and press into the buttered dish.
