WALDORF SALAD (WITH WONDERFUL COOKED DRESSING)
If you don't care for the mayonnaise dressed Waldorf Salads, this one is for you. It's from my grandmother and probably from the period of the 1930's or so. It's ABSOLUTELY DELICIOUS! I could eat this for dessert, and when I make it usually double or quadruple the recipe so I can send some home with everyone after the holiday dinner. It's best to make the dressing ahead of time so it has time to cool. I usually make it the day before the dinner so it's done and out of the way and ready to go when the salad is assembled the next day.

- Cook all of the dressing ingredients except the whipping cream in a double boiler stirring until it thickens. Take off the heat and set aside and let cool.
- While the dressing is cooling, prepare the fruit and celery by cutting into the size pieces you like and chop the nuts.
- When you are ready to assemble the salad, whip the cream and fold it into the dressing carefully, to make sure you keep as much volume as you can. Then mix in the fruit and nutmeats and put in the serving bowl.
- If you are going to add bananas, do so close to serving time, so they don't turn brown. While grapes and bananas are optional, IMO they make the salad much nicer, and I've never made it without them. Don't use overly ripe bananas. Firm ones with a touch of green still on the stem, or solid yellow ones are best.
COOKED WALDORF SALAD DRESSING
Slightly tangy with a hint of mustard, this dressing is a nice variation on the mayonnaise and whipped cream versions of waldorf salad dressing

- Cook over low heat until thick, stirring constantly.

WALDORF SALAD

- Whisk together the yogurt, mayonnaise, lemon juice, salt and pepper until smooth. Add in the Poached Chicken, celery, grapes, raisins and apples. Mix until the salad is coated in the dressing. Line the bottom of four serving bowls with 3 leaves lettuce. Divide the salad evenly among the bowls, over the lettuce. Sprinkle the walnuts on top of the salads and finish with the chives to serve.
- Place the celery, onions, carrots and wine in a large saucepot set over medium-high heat. Bring to a simmer and cook until the liquid reduces by half, 5 minutes. Add the chicken, and then pour enough stock to cover, adding more if needed. Bring to a simmer and cook until the meat falls off the bone, 30 to 45 minutes.
- Remove the chicken to a baking sheet and cool. Strain and reserve the broth for another use, like a soup or sauce. Cool the chicken, then shred the meat.
WHERE'S WALDORF? SALAD WITH MY FRIEND IZZY'S EPIC DRESSING

- Toast nuts in a small skillet over moderate heat in a small pan until aroma develops and nuts crisp a bit, 5 to 6 minutes. Set aside to cool.
- Combine walnuts, celery, onion, grapes and apples in a medium bowl. Whisk lemon juice, honey, vinegar, cardamom, dill and mustead, then whisk in extra-virgin olive oil in a slow stream. When oil becomes incorporated stream in cream, then season the dressing with salt and pepper, to taste.
- Dress salad and adjust salt and pepper, to taste. Use 2 large lettuce leaves per serving to form a bed for the salad.
SIMPLY WONDERFUL WALDORF SALAD
Love this fresh version of the waldorf salad you use cream cheese and orange juice instead of mayo. I got this one from my Mom over 18 years ago, not sure where she got it. My boys will even eat this one.

JENNY'S SWEET WALDORF SALAD
I couldn't ever find the perfect Waldorf salad - one that wasn't too mayonaise-y tasting, yet one that still held enough of the original flavor to be called a Waldorf. CHEF JOHN'S WALDORF SALAD
A fruit salad has to be pretty darn good to actually get a name, and the venerable Waldorf salad is certainly worthy. Embellish this as you see fit, but I really like it best with just the four ingredients seen here. Things like dried cranberries can add a nice seasonal touch but, for me, the chewy fruit gets in the way of that addictive crunchy/crisp texture.

- Whisk mayonnaise, creme fraiche, lemon juice, tarragon, sugar, salt, black pepper, and cayenne together in a bowl.
