WALDORF SALAD
This Waldorf salad is a combination of apples, grapes, celery and walnuts, all tossed in a creamy dressing. An easy and refreshing salad that's perfect as a side dish or lighter main course.

Steps:
- Place the apples, celery, grapes and walnuts in a large bowl.
- In a small bowl, mix together the mayonnaise, sugar, lemon juice and salt.
- Pour the dressing over the fruit and toss to coat. Sprinkle with parsley then serve, garnished with additional fruit if desired.

WALDORF SALAD ON THE LIGHTER SIDE
The lemon yogurt adds so much flavor and is the key to this dressing. The salad is simply delicious and easy to make. You can make this ahead, cover and chill for up to 6 hours, but do not stir in the walnuts until you are ready to serve it. You may substitute pears for apples for something different. I think it tastes best with fresh pineapple and apples. My GF gave me this recipe that she found in Dieter's Cookbook by Better Homes and Garden. To save time I purchase the fresh pineapple already peeled from the grocery store.

- In a large bowl toss together pineapple, apples or pears, celery, grapes, and kiwifruits.
- In a small bowl stir together the mayonnaise dressing, yogurt and honey.
- Fold dressing into fruit mixture.
- To toast walnuts, place them in a small skillet and cook over medium heat, stirring often, for 5 -7 minutes or until golden.
- Add walnuts when you are ready to serve.

WALDORF SALAD

- Preheat the oven to 350 degrees F.
- Spread the nuts on a baking sheet and toast in the oven for 8 to 10 minutes. Cool and break the nuts up into small pieces.
- Whisk the yogurt, mayonnaise, parsley, honey, and lemon zest in a large bowl and season generously with pepper.
- Halve, core, and cut the apples into 3/4-inch pieces, leaving the skin intact. Add the apples, celery and raisins to the bowl, and sprinkle with the lemon juice; then toss with the dressing. Cover and refrigerate if not serving immediately.
- When ready to serve, toss walnuts into the salad. Arrange the lettuce leaves on a large platter, or divide them among 4 salad plates. Place the salad on the lettuce and serve.

- Place apples, grapes and celery into a medium bowl and toss with juice from half of the lemon.
- In another bowl, whisk together yogurt, mustard and the juice from the other half of the lemon. Pour half of the yogurt dressing on the apples and toss to combine.
- Serve the salad over the greens and drizzle with the rest of the dressing or serve on the side for guests to add more if they want. Garnish with the chopped walnuts.

THE ORIGINAL WALDORF SALAD
"Millions who never visited the Waldorf owe him a debt," The New York Times wrote in 1950, upon Oscar Tschirky's death. Mr. Tschirky, a Swiss immigrant who became known as "Oscar of the Waldorf," is credited with creating this piece of Americana in 1893, a timeless dish whose popularity has spread far past the Waldorf's exclusive doors and into home kitchens. Over time, variations would include blue cheese, raisins and chopped walnuts, which can be added here alongside the celery and apples. But the original is an exercise in simplicity: four ingredients that have lived on for over a century.
