MRS. SCOTT'S CHOCOLATE VINEGAR CAKE



Mrs. Scott's Chocolate Vinegar Cake image

A wonderful, easy, moist, eggless chocolate cake recipe that my mother acquired from a dear friend of hers. The vinegar reacts with the soda, so there is no vinegary taste leftover as long as you use the right amounts of vinegar and baking soda. Fabulous with a rich, fudgy frosting, such as a chocolate sour cream frosting. Time doesn't include cooling time, so be sure to allow a couple-few hours to cool before frosting. Note: I usually bake this in a Pyrex tempered glass pan, and then I frost and serve it right in the pan. If you are planning to remove it from the pan before frosting and/or serving it, it may work better to lightly grease the pan and dust it with cocoa before you pour the batter in (thanks, I'mPat!).

3 cups all-purpose flour
2 cups sugar
1/3 cup cocoa (I like Hershey's baking cocoa)
2 teaspoons baking soda
1 teaspoon salt
2 tablespoons white distilled vinegar
1/2 cup canola oil
2 cups water
1 tablespoon vanilla

Steps:

  • Preheat oven to 350* F.
  • Place all ingredients into a bowl and mix well. Pour into an ungreased 13x9 inch pan.
  • Bake at 350 for 40 minutes or until done. Cool completely; frost as desired.

2 teaspoons baking soda
½ cup unsweetened cocoa powder
¾ cup vegetable oil

Steps:

  • Sift flour, sugar, salt, soda, and cocoa together into a 9 x 13 inch ungreased cake pan. Make three wells. Pour oil into one well, vinegar into second, and vanilla into third well. Pour cold water over all, and stir well with fork.
  • Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes, or until tooth pick inserted comes out clean. Frost with your favorite icing.

6 ounces unsweetened chocolate, chopped
3 cups cake flour
2 teaspoons baking soda
½ teaspoon salt
2 cups white sugar
1 ¾ cups water
⅔ cup vegetable oil
2 teaspoons vanilla extract
1 teaspoon balsamic vinegar

Steps:

  • Melt unsweetened chocolate in top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching. Set aside to cool slightly, about 5 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Line two 9-inch cake pans with waxed paper.
  • Sift cake flour, baking soda, and salt together in a large bowl.
  • Whisk sugar, water, vegetable oil, vanilla extract, and balsamic vinegar in a large bowl until well-combined. Stir in half of the sifted flour mixture. Fold in melted chocolate. Stir in remaining sifted flour mixture. Beat with an electric mixer on medium speed until batter is smooth, about 2 minutes. Divide batter between cake pans.
  • Bake in the preheated oven until toothpicks inserted in the centers come out clean, about 45 minutes. Cool in the pans, 5 minutes. Invert cakes onto wire rack and let cool completely before frosting, about 1 hour.

  • cream together sugar and margarine.
  • add together in a bowl milk, vinegar and bicarbinate allow it to froth then add the liquid and flour mixing slow to the sugar and margarine add your chosen from list and bake in a greased 7 inch tin or place in muffin cases until mixture has gone.
  • cook cake for 1 hour and muffins until golden brown and firm on top.

1 1/2 cups flour
3 tablespoons cocoa
1 teaspoon baking soda
1 tablespoon vinegar
1 cup sugar
1/2 teaspoon salt
1 teaspoon vanilla
6 tablespoons vegetable oil
1 cup cold water
1 1/2 cups sugar
4 tablespoons cocoa, sifted
1 pint cream, whipping cream
1/2 cup milk, 2 percent milk
vanilla
butter

Steps:

  • Sift ALL dry ingredients in an ungreased teflon 8X8 pan.
  • Make 3 holes, vanilla in one, vinegar in another, oil in another. Pour water overall, mix. Bake 350 degrees for 30-35 minutes. Toothpick in center should come out clean.
  • Frosting: 1 1/2 Cups sugar, 4 Tbls sifted cocoa, 1 pint whipping cream, 1/2 cup 2% milk. Slow boil until small soft ball forms in bottom of a cold glass of water, remove from heat, add a bit of vanilla and a bit of butter. Cool, beat, spread on cake.

1 lb plain flour
8 ounces sugar
8 ounces currants
4 ounces raisins
1 egg, beaten (optional)
6 fluid ounces milk
3 tablespoons distilled white vinegar
1 tablespoon bicarbonate of soda

Steps:

  • Rub the butter into the flour until the mixture resembles fine breadcrumbs.Add the sugar and fruit,and then the egg if using.
  • Put 1/4 pint of the milk into a large jug and add the vinegar.Warm the remaining milk, stir in the soda until dissolved and add this to the jug.
  • Stir this mixture quickly into the cake dough.
  • Pour into a greased and floured cake tin (9 inch),and put into a pre-heated oven(375F.) for 30 minutes, then lower the temperature to 300°F Continue to bake for a further 30 minutes or until firm to the touch.
  • Cool in the tin for 5 minutes before removing and cooling on a wire rack.
  • Cut into slices and enjoy.
