VENETIAN APRICOT CHICKEN

This is from the Olive Garden, I had this for lunch and was so impressed I went on to the Olive Garden website, and there it was. Delicious and low in fat and calories. OG does not serve pasta with this, so it is a nice light meal, served with salad and bread sticks, of course.

1/2 cup chicken stock
1/2 cup apricot preserves
salt and pepper
1/2 lb roma tomato, cut into 1 pieces
6 basil leaves, cut into 1/2 pieces
1 teaspoon garlic pepper seasoning
salt
3 teaspoons garlic pepper seasoning
1 teaspoon italian seasoning
1 bunch asparagus (remove bottom inch of stems)
1/2 lb broccoli floret
1 tablespoon extra virgin olive oil
4 chicken breasts, boneless, skinless
chopped parsley (to garnish)

Steps:

  • Combine Garlic Herb Seasoning ingredients in a small mixing bowl and set aside.
  • Blend apricot sauce ingredients in a sauce pan. Add salt & pepper to taste. Bring to a boil and remove from heat.
  • Combine tomato mixture in a separate mixing bowl and set aside.
  • Blanch asparagus and broccoli for 1 minute in a pot of salted boiling water. Transfer immediately to ice bath to stop cooking.
  • Coat sauté pan with 1Tbsp olive oil. While keeping ingredients separated in pan, heat cooled asparagus, broccoli and tomato mixture and until hot. Do not overcook.
  • Grill chicken until internal temperature reaches 165°F.
  • Place grilled chicken on a platter next to hot broccoli and asparagus. Sprinkle Garlic Herb Seasoning on broccoli. Pour tomato mixture on top of vegetables.
  • Top chicken breasts with apricot sauce and garnish with chopped parsley.

A delicious Italian meal. This is from "Rillo's", a local Italian restaurant. My DH doesn't like snow peas, so I omit them. He loves prosciutto so I buy extra. This meal is great served with garlic bread.

2 1/2 lbs boneless skinless chicken breasts, cut into cubes
6 tablespoons butter, divided
1/3 lb sliced mushrooms
1 clove garlic, minced
1 quart light cream
salt and fresh pepper
2 tablespoons chopped parsley
1 1/2 cups frozen peas
1 cup fresh snow pea
1/8 cup parmesan cheese
1/2 cup shredded provolone cheese or 1/2 cup mozzarella cheese
1/4 cup prosciutto ham, sauteed in some butter,& broken into pieces (imported-buy at deli)
1 lb capellini, cooked

Steps:

  • Saute chicken cubes in 2 Tbsp butter.
  • Remove with slotted spoon and set aside.
  • Saute mushrooms in same skillet.
  • Remove with slotted spoon and set aside.
  • Add 1/4 cup butter, garlic, cream, salt, pepper,& parsley.
  • Boil on high heat just till slightly thickened.
  • Add frozen peas; cook 5 minutes.
  • Add chicken, mushrooms, parmesan, and snow peas.
  • Heat through until snow peas are just tender.
  • Place cooked, drained cappellini on large platter.
  • Spoon some chicken sauce over pasta to cover it, reserving some sauce.
  • Top with provolone& prosciutto.
  • Broil until cheese melts.
  • Serve with extra chicken sauce on the side.

We enjoy this recipe and its one we fall back on alot when making chicken. Its relatively easy with not alot of fuss. I found the recipe in Culiaria European Specialties. Italians like their chicken free range and often do their slaughter and pluck at home.

1 tablespoon dried porcini mushrooms
3 1/2 lbs chicken
1 onion
1 (28 ounce) can tomatoes
2 garlic cloves
basil leaves, a few
3/4 cup cabernet sauvignon wine (red wine)
1 teaspoon sugar
salt and black pepper, seasoned to your taste
2 ounces butter
4 tablespoons olive oil

Steps:

  • Preheat oven to 400 degree F.
  • Soak mushrooms in lukewarm water for 15 minutes.
  • Cut the chicken into 4 pieces.
  • Peel and quarter the onions, and cut up the tomatoes into small pieces.
  • Put the onions, tomatoes, mushrooms in their soaking liquid, garlic, basil, red wine, and a pinch of sugar in a roasting pan and mix well.
  • Season the chicken pieces with salt and pepper, then place into the pan as well. Skin side up.
  • Add butter and olive oil and roast for 1 to 1 ½ hours.
  • Remove the meat from the sauce and keep warm.
  • Press the sauce through a sieve, thicken if necessary, season to taste with salt and pepper and serve separately.
  • Grilled polenta and the same wine used in the sauce make a good accompaniment.

Rice is an extremely popular grain in the Veneto region of Italy. If you're making this soup a day or two before serving, don't add the rice. At serving time, reheat the soup until almost boiling. Then add the rice and cook according to the recipe. From Cooking Club of America.

2 tablespoons olive oil
6 ounces pancetta, diced
1 large onion, chopped
2 medium carrots, chopped
2 celery ribs, chopped
4 large garlic cloves, minced
2 bay leaves
1/4 teaspoon saffron thread, crushed
1 1/2 lbs boneless skinless chicken thighs
6 (14 ounce) cans reduced-sodium chicken broth
3/4 cup long-grain rice
1/2 teaspoon fresh ground pepper
3 tablespoons minced fresh Italian parsley
1 tablespoon grated lemon peel

Steps:

  • Heat oil in Dutch oven over medium heat until hot. Add pancetta; cook 5 minutes or until lightly browned. Add onion, carrots and celery; cook 8 minutes or until onion begins to brown. Add garlic, bay leaves and saffron; cook 30 seconds.
  • Add chicken and broth; increase heat to medium-high. Bring almost to a boil; reduce heat to medium-low. Partially cover and cook 12 to 15 minutes or until chicken is no longer pink in center and juices run clear. Remove chicken; cool slightly. Shred chicken meat.
  • Meanwhile, add rice and pepper to Dutch oven. Partially cover and cook 20 minutes or until rice is tender, stirring occasionally. Return chicken to pot; cook 5 minutes or until chicken is heated through. Remove and discard bay leaves.
  • 4. In small bowl, stir together parsley and lemon peel. Ladle soup into bowls; sprinkle with parsley.

1/4 cup flour
1 teaspoon dried basil
1/4 teaspoon salt
1/4 teaspoon pepper
1 (2 1/2-3 1/2 lb) broiler-fryer chickens, cut up
4 dried mushrooms
1/4 cup chopped sun-dried tomato
1 small onion, chopped
2 tablespoons red wine (optional)
1 (8 ounce) can tomato sauce
1 tablespoon lemon peel, grated

Steps:

  • In a large bowl combine paprika, flour, salt, basil, pepper.
  • Coat chicken pieces with mixture and set aside.
  • Rinse mushrooms and break into small pieces (remove and discard thick stems).
  • Place mushrooms, sun-dried tomatoes and onion in a crock pot.
  • Place chicken pieces on top.
  • In a bowl, combine wine, if using, and tomato sauce and lemon peel.
  • Pour over chicken.
  • Cover.
  • Cook LOW 5-6 hours or til chicken is tender.
  • Serving suggestions:.
  • Serve over cooked pasta, top with grated parmesan cheese and parsley.
