1 onion, diced
1 (15 ounce) can pinto beans, drained
3 tablespoons tomato paste
chili powder to taste
1 cup vegetable broth

Steps:

  • Heat oil in a medium skillet over medium heat. Saute onions until tender. Stir in beans, tomato paste, chili powder and vegetable broth. Cook 5 minutes, or until stock has reduced. Mash with a potato masher.

These vegetarian refried beans are incredibly easy to prepare and so delicious! Flavoured with lots of seasonings (like chili, chipotle chili pepper, cumin and oregano) and green chiles, they make for such a hearty, budget-friendly meal.

1 tablespoon olive oil
2 tablespoons unsalted butter (divided)
1 yellow onion (peeled and minced)
4 cloves garlic (minced)
4 cups cooked (or canned) pinto beans (drained and rinsed (about 2 (19-ounce) cans))
1.5 teaspoons chili powder
1 teaspoon ground chipotle chili pepper (or smoked paprika)
1 teaspoon ground cumin (or to taste)
1/2 teaspoon dried oregano
1 teaspoon salt (or to taste (see "Notes" below))
1 teaspoon freshly ground black pepper
2/3 cup low sodium vegetable broth
1 (4.5-ounce) can chopped green chiles (about a 127 gram can)
1 tablespoon lime juice (from about 1/2 of a lime)

Steps:

  • Heat olive oil and 1 tablespoon of butter in a 12-inch frying pan over medium heat.
  • Once butter has melted, add minced onion and cook, stirring often, until softened, about 5 minutes.
  • Add garlic, give it a little stir, and cook for 1 minute.
  • Add cooked (or drained and rinsed canned) pinto beans, chili powder, chipotle chili pepper, cumin, oregano, salt (see "Notes" below) and black pepper. Stir and cook for 1 minute or so to get those spices going.
  • Add vegetable broth and chopped green chilies, stirring to combine everything. Bring to a simmer and cook, stirring occasionally, for 7 to 8 minutes to heat through.
  • Turn off heat and add remaining 1 tablespoon of butter and juice of one lime. Mash until you've reached your desired consistency. Note: If you want the refried beans creamier, or feel that they are dry, mix in a little hot water (about 3 tablespoons at a time) until you've reached the consistency you like best.
  • Once desired consistency has been reached, serve and enjoy. Refried beans are great in burrito bowls, tacos, quesadillas and more. Yields about 4 cups of refried beans.Note: Properly store leftovers in an airtight container in the refrigerator and use within 3 to 4 days. Reheat before serving.

Easy Vegetarian Crock Pot Refried Beans (without Lard!) image

Creamy refried beans from scratch, right in your Crock Pot! With a simple list of ingredients, these lard-free vegetarian and vegan refried beans are a cinch to make.

1 pound dry pinto beans
3 cups vegetable broth + a little more for thinning
2 tablespoons olive oil
4-5 medium cloves garlic
1 teaspoon onion powder
1 teaspoon cumin
1 teaspoon chili powder
1 teaspoon salt
1/2 fresh lime (optional)

Steps:

  • Rinse beans under water and pick through, discarding any weird broken bean pieces or other debris. Place beans in a 3-quart or larger Crock Pot and fill Crock Pot with water to about 2 - 3 inches above the beans. Cover and let sit overnight, or for at least 8 hours.
  • Discard soaking water by pouring beans into a colander. Rinse beans. Return beans to the Crock Pot.
  • Add vegetable broth, olive oil, garlic, onion powder, cumin, chili powder, and salt.
  • Cook on low for 8 - 10 hours, until beans are cooked through.
  • Turn off Crock Pot and remove lid to allow beans to cool a bit so that they're safer to handle. Using an immersion blender, blend beans to desired consistency (you might like your beans to be 100% smooth, or chunky with a few beans still left whole). A note on liquid level: Crock Pots can vary, so if before blending, the liquid is still above the level of the beans, you may want to skim a little off and reserve the liquid for possibly thinning later on. Mine cook down and end up at the perfect consistency with exactly 3 cups vegetable broth, and I don't need to remove any of the liquid before blending.
  • Turn Crock Pot back on to low and let pureed beans sit and cook for another 30 minutes or so. This will help the beans to thicken up and the flavors to develop.
  • Taste and add additional salt if desired. I actually like to use 2 teaspoons kosher salt up front, but I like mine a bit salty. If beans are too thick, add additional vegetable broth and stir. If beans are too thin, let sit for a little longer and they will thicken up nicely.
  • Squeeze half a lime over the top of the beans before serving, if desired.
  • These keep in the refrigerator in an airtight container for 2 - 3 days, or you can keep them frozen for several months. They will thicken after sitting. Just thin with vegetable broth or water to the desired consistency.

I've never looked at a recipe for refried beans, and I've never attempted to make them before. So with this recipe, I was just wingin' it and they turned out rather tasty. Adjust flavors with some jalapenos, chili powder, or whatever you like. If the color throws you (it is rather dark), use kidney or pinto beans.

2 (14 ounce) cans black beans, drained and rinsed
2 small garlic cloves, minced
2 tablespoons olive oil
salt and pepper

Steps:

  • Pour the beans in a food processor and pulse to blend.
  • Once most of the beans are mashed up, keep the processor running and slowly drizzle in the olive oil.
  • Add the garlic, salt and pepper and let the beans blend for at least 3 minutes, making sure it's nice and smooth.
  • Scrape the beans into a small saucepan and place over low heat, stirring often, until the beans are warmed through.
  • Taste to adjust for more salt or pepper.
  • Serve hot with tortialla chips or Spanish rice as a side, or smear into a tortilla with some veggies for a burrito -- or just eat them right out of the pot.

3 tablespoons olive oil (or vegetable oil of choice)
⅓ cup of finely chopped white onion
2 to 3 whole dried chiles de arbol (or dried/fresh chile of choice)
large pinch sea salt (adjust to taste (kosher salt may also be used))

Steps:

  • Heat the oil in a large frying pan, once it's hot add the onion and cook until browned and crispy (this gives it a great taste, or you can just sauté until tender.) Next add the dried or fresh chiles and cook just until they brown or begin to blister -- this happens quickly so be ready to proceed.
  • Next add the boiled beans -- be careful because it will splash, allow to fry for about 3 minutes. Next add about ¼ cup of the broth and then begin mashing the beans until you achieve the desired texture. The broth will help with the mashing and you'll need to add a little bit of the broth to help you achieve the texture you desire.
  • Continue to "fry" for about 5-8 minutes or until they have the consistency you want. Remember to adjust the consistency to your needs by cooking longer to thicken or adding more broth/water to thin out. Taste and add salt as desired.

This is the modern, vegetarian version of my Great-Grandma's refried beans' recipe. Real butter replaces bacon fat (manteca). I hope you enjoy these beans!

1 lb pink beans (pinto beans or black beans can be substituted)
2 garlic cloves, finely minced
1/2 cup onion, plus
2 tablespoons onions, finely minced
1 bay leaf
black pepper
1/2 teaspoon cumin powder
1 teaspoon Mexican oregano
1/2 teaspoon liquid smoke, scant
1 1/2 tablespoons real butter
salt, to taste
oil, for frying
scallion, sliced
shredded sharp white cheddar cheese

Steps:

  • Soak beans at least 4 hours or up to 12 hours in plenty of water. (I soak the beans in the crock pot.).
  • Add to the beans one of the garlic cloves, finely minced, 2 tablespoons of the onion, bay leaf and a dash of black pepper.
  • Cover and cook on HIGH for 2-3 hours (or until beans start to boil) then cook on LOW for approximately 5-6 additional hours. Or cook on LOW all day for about 9-10 hours.
  • Once cooking time has commenced, check to see if beans are soft. DO NOT drain!
  • Heat a cast iron skillet* on medium heat and saute the onion, other garlic clove, cumin powder, and oregano in a little bit of oil. With a slotted spoon, transfer the cooked beans to the skillet and begin by mashing using a potato masher. Add some reserved cooking liquid to help mash; mashing to desired consistency. (I puree most of the beans as we like our beans on the soupy side.).
  • Once the beans are mashed to your liking, stir in the liquid smoke and butter, and about 1 teaspoon salt. Cook, stirring constantly until butter is melted. Taste and adjust all seasonings. You will probably need more salt.
  • Serve and garnish each serving with a sprinkle of grated cheddar cheese and some green onion slices.
  • Save about 2 cups of the reserved cooking liquid for reheating the refried beans. DO NOT use water to rehydrate!
  • *Cast iron will alter the color of the beans. This does NOT effect the taste.

2 tablespoons minced garlic, divided
1 medium tomato, diced
2 tablespoons ground cumin
1 tablespoon chili powder
2 tablespoons olive oil
salt to taste

Steps:

  • Place the beans in a large saucepan, and cover with an inch of water. Place over high heat, and bring to a boil. When the beans have come to a boil, drain, and return them to the same pot. Cover the beans with 2 inches of water, and stir in 1 tablespoon of garlic, the tomato, cumin, and chili powder. Bring to a boil over high heat, then reduce heat to low, and simmer until the beans are very soft, about 3 hours and 45 minutes, adding water as needed.
  • Once the beans have cooked, mash them with the remaining tablespoon of garlic, the oil, and salt to taste; use additional water as needed to achieve desired consistency. Place over low heat for 30 minutes, stirring occasionally. Serve.
