Put an Italian spin on tomato soup with the addition of basil, oregano and rotini pasta.

4 cups vegetable or chicken broth
4 cups tomato juice
1 tablespoon dried basil leaves
1 teaspoon salt
1/2 teaspoon dried oregano leaves
1/4 teaspoon pepper
2 medium carrots, sliced (1 cup)
2 medium stalks celery, chopped (1 cup)
1 medium onion, chopped ( 1/2 cup)
1 cup sliced mushrooms
2 cloves garlic, finely chopped
1 can (28 ounces) diced tomatoes, undrained
1 1/2 cups uncooked rotini pasta (4 1/2 ounces)
Shredded Parmesan cheese, if desired

Steps:

  • Mix all ingredients except pasta and cheese in 4- to 5-quart slow cooker.
  • Cover and cook on low heat setting 8 to 9 hours.
  • Stir in pasta. Increase heat setting to high. Cover and cook 15 to 20 minutes or until pasta is tender. Sprinkle each serving with cheese.

4 cloves of garlic, minced
1½ cups diced onions
1½ cups diced celery
1½ cups diced carrots
6½ cups vegetable broth
1 bay leaf
1 teaspoon dried oregano
1 teaspoon dried dried basil
2-3 sprigs fresh thyme
1 - 14 ounce diced tomatoes
1 - 6 ounce tomato paste
1 teaspoon salt, more to taste
1½ teaspoons granulated sugar
2 cups chopped broccoli
½ large zucchini, sliced

Steps:

  • In a large pot, add a little vegetable oil over low to medium heat, and allow it to warm up for a minute or two. Add minced garlic to the oil and allow it to cook for a minute or two until aromatic and golden brown. Then add chopped onions, carrots, and celery to the mix. Cook for a few minutes until the vegetables have softened.
  • Pour in the vegetable broth and stir in the dried oregano and dried basil. Add bay leaf and stir to incorporate all the ingredients. Add sprigs of thyme. Let it simmer for a few minutes.
  • Stir in diced tomatoes and tomato paste. Season with salt. Then add a little bit of sugar to balance out the acidity of the tomatoes.
  • Add chopped broccoli and sliced zucchini. Cook until the vegetables are soft and tender.
  • Serve this hearty vegetable rotini tomato soup warm.

VEGETABLE TOMATO ROTINI SOUP

2 large carrots (peeled and sliced)
1 medium sweet onion (diced)
2 ribs celery (sliced)
1 Tbsp olive oil
salt and black pepper to taste
4 clove garlic (minced)
2 14.5 oz can Italian seasoned diced tomatoes
3 14 oz can low sodium chicken broth
1 28 oz can tomato sauce
2 medium bay leaves
1 Tbsp sugar
2 tsp Mediterranean Herb seasoning (i.e. McCormick's Perfect Pinch or dry Italian seasoning)
1/4-1/2 tsp crushed red pepper flakes (or to taste)
2 cups dry rotini pasta
grated Parmesan cheese and basil for garnishing (optional)

Steps:

  • Stovetop method: In a heavy bottomed pot or dutch oven, cook the carrot, onion and celery in a couple of drizzles of olive oil. Season with salt and black pepper to your taste. Cook for 5-7 minutes until the vegetables are beginning to soften and brown. Add the garlic and saute for another minute.
  • Add the remaining ingredients and seasonings to the pot, reserving the pasta to add at the end of cooking. Bring to a boil.
  • Cover and reduce the heat to low. Simmer for 30 minutes.
  • Uncover, adjust the seasonings if needed, and add the pasta.
  • Replace the lid and continue to cook for an additional 15 minutes or until the pasta is al dente.
  • Serve with a sprinkle of Parmesan cheese and chopped fresh basil, if desired.
  • Slow Cooker method: In a skillet over medium-high heat, cook the carrot, onion and celery in a couple of drizzles of olive oil. Season with salt and black pepper to your taste. Cook for 5-7 minutes until the vegetables are beginning to soften and brown. Add the garlic and saute for another minute.
  • Add the cooked vegetables to the slow cooker with the remaining ingredients and seasonings, reserving the pasta to add at the end of cooking. Stir well.
  • Cover and cook on low for 6-8 hours.
  • Uncover, increase the slow cooker to the high setting and add the pasta.
  • Replace the lid and simmer on high for an additional 20 minutes or until the pasta is al dente. [tip: If using cooked pasta, cook until the pasta is heated through]
  • Serve with a sprinkle of Parmesan cheese and chopped fresh basil, if desired.

4 cups tomato juice
1 tablespoon dried basil leaves
1 -1 1/2 teaspoon salt
1 teaspoon dried oregano leaves
1/2 teaspoon pepper
1 cup sliced carrot
1 cup sliced celery
1/2 cup chopped onion
1 cup sliced mushrooms
2 -3 cloves garlic, minced
1 (28 ounce) can diced tomatoes, undrained
1 1/2 cups uncooked rotini pasta
shredded parmesan cheese

Steps:

  • Add all ingredients except for pasta and cheese to a slow-cooker.
  • Cover and cook on LOW for 8-9 hours.
  • Add in pasta; stir.
  • Increase setting to HIGH; cover and cook 15-20 minutes or until pasta is tender; season with more salt/pepper if desired.
  • Ladle into individual bowls; sprinkle with parmesan cheese.

This pantry-friendly soup is as easy on the cook as it is on the wallet. All you need are the three cans (tomatoes, beans and mixed vegetables) and some staple seasonings. To give the soup extra body and a creaminess without adding dairy, mash some of the beans directly in the can. The result is a hearty, satisfying soup with minimal effort.

One 15-ounce can mixed vegetables with potatoes, such as Goya, drained well
Kosher salt and freshly ground black pepper
One 14.5-ounce can petite diced tomatoes with their juices
One 15.5-ounce cannellini beans with their liquid

Steps:

  • Combine the olive oil, Italian seasoning, and onion powder in a medium saucepan over low heat. Bring to a gentle simmer, stirring occasionally, until the spices infuse into the oil, about 5 minutes.
  • Add the mixed vegetables, 1/4 teaspoon salt, and a few grinds of black pepper. Increase the heat to medium and cook, stirring occasionally, until everything is well- coated, 1 to 2 minutes.
  • Add the tomatoes with their juices, then fill the empty can halfway with water; swirl and add to the soup. Add one-third of the beans along with half their liquid. Simmer for 3 minutes.
  • Meanwhile, mash the remaining beans and their liquid with a fork directly in the can until slightly smooth; stir into the soup. Add 2 tablespoons water to the empty can, scrape with a rubber spatula to release any mashed beans, then stir into the soup. Let simmer for 5 minutes. Season with salt and pepper.
  • Divide among bowls and enjoy.

1 onion, chopped

Steps:

  • Heat olive oil in a large soup pot over medium heat; cook and stir onion and garlic in the hot oil until onion is tender, 2 to 5 minutes. Stir chicken broth, tomato juice, diced tomatoes and their juice, spinach, zucchini, carrots, celery, cannellini beans, Italian seasoning, salt, and black pepper. 1 small zucchini, cut into 1/2-inch slices
1/4 pound medium whole mushrooms

2 cans (14 1/2 ounces each) Italian-style stewed tomatoes, undrained
1 1/4 cups uncooked rotini pasta (4 ounces)

Steps:

  • Set oven control to broil. Toss potatoes, onion, bell peppers, carrot, zucchini, mushrooms, garlic and oil. Spread vegetable mixture, skin sides up, in ungreased jelly roll pan, 15 1/2 x10 1/2 x1 inch.
