A modification of a vegan pesto recipe I had been using for a while...I prefer to use walnuts in mine and wanted to adjust for my salt preference, so I decided to post. This makes a LOT of pesto...I like to make extra servings to freeze for later.

Number Of Ingredients 6

1 cup walnuts, toasted
8 cups basil leaves, packed
1 tablespoon coarse salt
8 garlic cloves
1 cup olive oil
4 tablespoons lemon juice

Steps:

  • Combine all ingredients and blend well until smooth.
  • Add additional salt, lemon juice or olive oil if needed.

Make a vegan pesto to add to pasta, pizzas, salads and sandwiches. It will keep in the fridge for up to a week

Yield Makes 1 x 250g jar

Number Of Ingredients 6

50g pine nuts
large bunch of basil , roughly chopped
2 tbsp nutritional yeast
150ml olive oil , plus extra for the jar
2 garlic cloves , roughly chopped
½ lemon , juiced

Steps:

  • Toast the pine nuts in a small pan over a low heat for 3-4 mins until golden brown. Set aside to cool.
  • Blitz the pine nuts with the remaining ingredients in a food processor until smooth. Season to taste.
  • Spoon the pesto into a jar and top with a thick drizzle of olive oil. Will keep stored in the fridge for up to a week.

  • Toast the walnuts in a 375° oven for approximately 4 to 5 minutes or until they’re lightly browned. Shake the pan every minute or so and watch them carefully so they don’t burn. Let them cool for 5 minutes.
  • Bring a small pot of water to a boil and drop the garlic cloves in the water and turn off the heat. Let them sit for two minutes. Transfer the garlic to the food processor with a slotted spoon.
  • Put the basil leaves, walnuts, garlic, nutritional yeast, salt and pepper, and three tablespoons of olive oil in the food processor bowl and pulse until the mixture is smooth and thick. Add more oil if you like your pesto thinner.
