SPELT BREAD RECIPE WITH SEEDS (VEGAN, NO OIL, NO SUGAR)
This simple spelt bread recipe made from 100% whole spelt flour with various seeds is a great bread for sandwiches and easy if you want to make some toast. It doesn't take much effort to prepare this bread. About 2 hours in which you can devote yourself to other things while the dough is rising. Really it is just about 10-15 minutes active time where you have actual stuff, the rest is rising and baking time.

Steps:
- Place the flour, seeds, and yeast in a mixing bowl of a stand mixer. Mix it briefly until the yeast is mixed with the flour. Add the water and knead the dough on a low level for about 4 minutes. Now add the salt and apple cider vinegar and knead for another 2 minutes. Sprinkle some flour over the dough and cover it with a cloth. Let it rise in a warm place for 1 hour. The dough should now have twice the volume. Take parchment paper and use it to line a loaf pan. Put a few seeds on the bottom of the loaf pan. Briefly knead the dough and put it in the loaf pan. Let the dough rise for an additional hour. Preheat the oven to 430°F (220°C). Sprinkle a few more seeds on the bread and put it in the oven. Set the oven to 400°F (200°C) and bake for 45-60 minutes. Let it cool completely before you cut it.

- Measure out and add all dry ingredients into a large bowl.
- mix thoroughly with whisk, so baking soda is evenly distributed.
- mix plant milk and maple syrup and pour into the dry ingredients.
- Stir and mix thoroughly until you have a very thick batter.
- Spoon this into a parchment-lined metal loaf pan.
- bake for 50 min at 350.
- remove bread from loaf pan and let it cool.

SPELT SEED BREAD
A combination of two recipes I developed. You can use unsweetened almond milk, soy milk or hemp beverage instead of the 1% milk. Honey can be substituted for the white sugar, if desired. Makes a 2 lb. loaf that almost fills my 3 lb. Black and Decker loaf pan. I haven't tried a 1 lb loaf in my old B&D bread maker with a 1 1/2 lb. loaf pan but I suspect it should work. 1 cup of seeds is needed. The recipe below is what I use but you should be able to use any combination of seeds you have available to make up the 1 cup.

- Please ingredients in loaf pan in order suggested by manufacturer. (The above order is for my Black & Decker bread machine).
- Set to Rapid Bake, 2 lb. Loaf, Light Crust.
- Let cool on rack for 40 to 45 minutes. Wrap in plastic bag (I use a Ziplock). Can be sliced and frozen.

- Heat oven to 350°F.
- Oil a loaf pan.
- In a bowl, mash bananas and mix in the maple syrup, canola oil, and vanilla.
- In a separate bowl sift the dry ingredients together, adding the nuts last.
- Blend the wet and dry mixtures and pour into the loaf pan.
- Bake for 42 minutes.

- For bread success, use a scale! Read through my post and follow the pics for reference and follow these directions. It's SO EASY, but I've written very detailed instructions to help you. You'll need a 9x5 metal loaf pan for this. Other materials bake up differently, so use metal, the loaf will bake up the best that way.
- Get a very large bowl with tall sides to allow for rising. Add your spelt flour, instant yeast, salt and give it a good whisk to ensure it's evenly mixed.
- Add your juice (1 1/2 tbsp) and water (1 cup) to a glass and warm up for 30 seconds in the microwave. Stick your finger in it, it should feel warm, but not so hot that you can't keep your finger in there. Too hot of water will kill the yeast. Add the syrup and applesauce to the water and stir.
- Pour over the flour slowly as you are stirring the dough. Use a sturdy rubber or silicone spatula/spoon, as this will help it not stick to the utensil. Stir and press the dough using the spatula until all the flour has is mixed in, a couple of minutes. Knead a bit inside the bowl with your hands. If it it too sticky to handle, sprinkle another tablespoon of flour or so and flip the dough over and knead a bit more, using the spatula/spoon to assist. Add only a tiny bit as needed for it to come together, too much flour and you'll end up with dry bread. If for some reason after continually mixing it seems too dry and is not becoming cohesive, add just a tiny bit of water, starting with a teaspoon just so it comes together. Do this for about 5 minutes, no more. It should become elastic/stretchy and slightly sticky. Test it by pressing down and dragging the spatula/spoon. - First, mix the water with the yeast and maple syrup. Now, grind the oat flakes. For this I just use my high speed blender. Now add the spelt flour or wheat flour with oat flour and add the water and yeast mixture and let it knead for about 3 minutes with the dough hook of a food processor. Remove the mixing bowl and cover the bowl with a damp dishcloth.
- Now take the seeds and nuts and roast them briefly. Pour over a little water. Seeds do absorb a relatively large amount of water.
- Now pour off the excess water and add the seeds and nuts to the dough with the salt and knead it for about 7 minutes.
