Vegan Raita - Made With Cashew Cream image

I gave this a try with dinner tonight and it was pretty delicious. Vegan, gluten-free and added-sugar free. It is totally appropriate for the 21 Day Quantum Wellness Cleanse.

3/4 cup cashews, raw
3/4 cup water
1 lemon, juiced
1/2 cucumber, diced
1/2 cup frozen corn
1 teaspoon salt

Steps:

  • Make the cashew cream by combining the cashews, water and lemon juice in a blender. Puree until it attains a yogurt like consistency. If the cashews are really dry, let them soak in the water and lemon juice for an hour or two before blending.
  • Spoon the cashew cream into a bowl and add the cucumber, corn and salt. Mix well.
  • Serve cold with Indian food.

This vegan raita recipe is so versatile and easy to make. It only takes a few minutes to whip up, and it's the perfect way to cool down a spicy meal.

1 cucumber (American) (or 2 ½ cup finely chopped )
2 cups vegan yogurt (i used cashew yogurt)
1 tsp Himalayan/ pink salt
1 tsp mustard seeds
½ tsp cumin seeds
2 dry red chilies (halved)
2 tsp olive oil
5-6 mint leaves
1 tbsp chopped cilantro

Steps:

  • Wash and peel the cucumber. Grate the cucumber using the large holes of a box grater or a food processor fitted with the shredding attachment. or chop them as shown in the video.
  • Finely chop the mint leaves.
  • In a small mixing bowl, combine the grated cucumber, chopped mint, cashew yogurt, and salt. Mix well.
