A tried and true, classic vegan banana bread! Perfectly moist and delicious, this healthy vegan banana bread recipe makes a terrific snack or great way to start the day.

1 3/4 cups (210 g) spelt flour (whole wheat, unbleached all-purpose, or gluten free blend), see notes
1/3 cup (75 g) organic pure cane sugar (or 1/2 finely chopped dates)
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
pinch of mineral salt
1/3 cup (75 ml) neutral flavored oil (or coconut oil in liquid state, vegan butter at room temp or applesauce
1 teaspoon vanilla extract
4 small or 3 large overripe bananas (about 1 1/2 - 1 3/4 cups (338-410g)), mashed
1/4 cup (56 ml) almond milk, use only if needed
1/2 - 2/3 cup chopped walnuts
1/4 - 1/2 cup chocolate chips (mini or regular)
1 teaspoon cinnamon

Steps:

  • Preheat oven to 350 degrees F. Grease your loaf pan.
  • In a medium sized mixing bowl, mash 3 - 4 bananas (about 1 1/2 cups to 1 3/4 cups works well), add oil/applesauce and vanilla extract, mix again. Add the flour, sugar, baking soda, baking powder and salt, and mix well, but don't overmix, just enough until the flour is combined. Batter will be slightly thick and a few lumps is ok. If mixture seems too thick, add milk, especially if using heavier flours such as whole wheat or whole spelt (you're more inclined to need it).
  • Pour batter into a greased loaf pan. Bake for about 50 min - 1 hour. Ovens vary, mine usually takes 50 minutes. You can also do the toothpick test in the center of the loaf, if it comes out clean it should be ready. Remove from oven and let cool for 10 min before slicing.
  • Original method: In a medium/large size bowl, combine flour, sugar, baking powder, baking soda and salt, set aside. In a medium bowl, mash bananas. Add the oil, vanilla and bananas to the dry ingredients and mix until combined, do not overmix. If mixture seems too thick, add the almond milk (especially if using heavier flours such as whole wheat or whole spelt, you're more inclined to need it).
  • Pour batter into a greased loaf pan. Bake for about 50 min - 1 hour. Ovens vary, mine usually takes 50 minutes. You can also do the toothpick test in the center of the loaf, if it comes out clean it should be ready. Remove from oven and let cool for 10 min before slicing.
  • Keep covered on the counter for up to 3 days or in the refrigerator up to 1 week. Keep in the freezer for up to 2 months. Thaw the wrapped loaves overnight in the refrigerator. Reheat in the microwave or a toaster oven with a door.

Cooking spray
1 1/4 cups unbleached all-purpose flour
1 teaspoon baking soda
1/2 teaspoon kosher salt
3 very ripe medium bananas, mashed (about 1 1/4 cups)
3/4 cup sugar
1/2 cup plain soy milk yogurt
1/2 cup vegetable oil
1 teaspoon pure vanilla extract

Steps:

  • Preheat the oven to 350 degrees F. Line the bottom and two long sides of a 9-by-5-by-3-inch loaf pan with parchment, leaving a 2-inch overhang on each long side, and lightly coat with cooking spray.
  • Whisk the flour, baking soda and salt together in a medium bowl. Whisk the bananas, sugar, yogurt, oil and vanilla together in another medium bowl. Gently fold the wet ingredients into the dry ingredients with a rubber spatula until the batter just comes together (it's OK if there are lumps). Transfer the batter to the prepared loaf pan and bake until a tester inserted in the center comes out clean, 55 to 60 minutes; tent the loaf with foil if it is browning too quickly. Cool the loaf in the pan on a wire rack for 30 minutes, then lift it from the pan by the parchment overhangs and cool completely on the rack. Store the loaf in an airtight container at room temperature for up to 5 days.

1 cup all-purpose flour
1 cup whole wheat flour
2 -3 small ripe bananas (as in, so mushy they are in their last leg)
1/4 cup applesauce
1/4 cup coconut oil
1/2 cup sugar
3/4 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon pumpkin pie spice
1/4 teaspoon salt
1/2 cup raisins (optional)

Steps:

  • Mash the bananas
  • Mix in the remaining wet ingredients.
  • Sift together dry ingredients and add to wet mixture.
  • Mix in raisins if using.
  • Mix until JUST combined.
  • Pour into greased bread pan and bake at 350 for 45-50 minutes.
  • When finished baking, invert onto cooling rack.
  • Slice and enjoy!

3 large black bananas
75ml vegetable oil or sunflower oil, plus extra for the tin
100g brown sugar
225g plain flour (or use self-raising flour and reduce the baking powder to 2 heaped tsp)
3 heaped tsp baking powder
3 tsp cinnamon or mixed spice
50g dried fruit or nuts (optional)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Mash 3 large black peeled bananas with a fork, then mix well with 75g vegetable or sunflower oil and 100g brown sugar.
  • Add 225g plain flour, 3 heaped tsp baking powder and 3 tsp cinnamon or mixed spice, and combine well. Add 50g dried fruit or nuts, if using.
  • Bake in an oiled, lined 2lb loaf tin for 20 minutes. Check and cover with foil if the cake is browning.
  • Bake for another 20 minutes, or until a skewer comes out clean.
  • Allow to cool a little before slicing. It's delicious freshly baked, but develops a lovely gooey quality the day after.

The idea for this wonderful, moist, sweet and healthy(er) banana bread comes from Ann Wilson's book "Brunches". Ive modified it a bit to suit what I had on hand and my family's taste. Feel free to play with it, too. I hope youll enjoy this!

3 ripe bananas, broken into pieces
4 tablespoons low-fat plain yogurt (for vegan, use soy yogurt)
2 tablespoons instant coffee granules
2 tablespoons hot water
1/2 tablespoon flax seed, ground
1 1/2 tablespoons water
8 tablespoons black tea (or use water instead)
1 small egg (for vegan sub this with applesauce or your fav egg sub)
1 teaspoon vanilla extract
200 g whole wheat flour (I used whole spelt flour)
175 g flour (I used spelt flour)
1/8 teaspoon baking soda
2 1/2 teaspoons baking powder
2 1/2 teaspoons apple pie spice (or mixed spice or pumpkin pie spice)
1 pinch salt

Steps:

  • In a microwave safe bowl microwave the banana pieces at high power for about 2 minutes or until slightly melted and fragrant (this might take more or less time depending on the ripeness of your fruit and your microwave). Mash with a fork and stir in yogurt, coffee granules, hot water, flax seeds, water, black tea (or more water) and vanilla extract. Set aside until cooled slightly, then stir in the egg.
  • In a large bowl combine flours, baking soda, baking powder, spice and salt. Add the wet ingredients and stir until combined. The dough should be thick, but not overly so. If it is very thick, add more tea or water until it has the consistency of thick cake batter.
  • Scrape into a greased or lined loaf pan (the standard size) and bake in the preheated oven at 180°C/350°F for about 45 minutes or until toothpick inserted in the centre comes out clean (I had to cover mine after 20 minutes to prevent overbrowning).
  • Allow to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  • Slice and enjoy!

5 ripe bananas
1 cup vegan sugar (Florida Crystals)
1 teaspoon vanilla
2 cups whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/4 cup water

Steps:

  • In a large bowl mash bananas with sugar and vanilla until combined and creamy. Then mix in the water. (I just put these ingredients in my VitaMix Blender and it's much easier).
  • In a smaller bowl, sift together the flour, baking soda, baking powder and cinnamon.
  • Add the dry to wet and stir until just mixed . You don't want to over mix or the bread will be dry. (So important to stir just until mixed.).
  • Pour batter into sprayed loaf pan and bake in preheated 350 degree F oven for one hour. Your house will smell so good you will be temped to take it out a few minutes earlier but don't or it won't be done on the inside.
