1 teaspoon canola oil
⅔ cup finely chopped onion
1 small clove garlic, minced
⅔ cup dried lentils, rinsed
1 tablespoon taco seasoning, or to taste
1 ⅔ cups chicken broth
⅔ cup salsa
12 taco shells

Steps:

  • Heat oil in a skillet over medium heat; cook and stir onion and garlic until tender, about 5 minutes. Mix lentils and taco seasoning into onion mixture; cook and stir for 1 minute.
  • Pour chicken broth into skillet and bring to a boil. Reduce heat to low, cover the skillet, and simmer until lentils are tender, 25 to 30 minutes.
  • Uncover the skillet and cook until mixture is slightly thickened, 6 to 8 minutes. Mash lentils slightly; stir in salsa.
  • Serve about 1/4 cup lentil mixture in each taco shell.

These vegan lentil tacos are full of plant-based protein and easy to assemble. Top them with salsa or add your favorite taco toppings.

1 teaspoon olive oil
1 large white onion, diced
2 cloves garlic, minced
3/4 teaspoon cumin
1 teaspoon chili powder
1/4 teaspoon dried oregano
1 cup French green lentils or brown lentils
2 1/2 cups vegetable broth
6 corn or flour tortillas
Optional toppings: avocado, pico de gallo, diced bell peppers, etc.

Steps:

  • In a large skillet, heat the olive oil over medium heat.
  • Add the onion and garlic and cook for 5 minutes, stirring to prevent burning.
  • Add the cumin, chili powder, and oregano and stir until the onion is coated.
  • Add the lentils and vegetable broth and bring to a boil.
  • Cover and simmer for 25-30 minutes until all the broth has been absorbed and the lentils are soft, but not mushy. You may need to add a bit more water if the lentils are still firm to the bite. If there is broth left in the pan, drain any excess liquid.
  • You can either use the lentils as-is, or you can pulse in a food processor for 8-10 seconds to get a more chunky "meaty" texture. This technique works best with french lentils.
  • Divide into taco shells and add toppings.

2 teaspoons ground ancho chile powder
1 teaspoon ground cumin
½ teaspoon ground coriander
½ teaspoon dried oregano
½ teaspoon salt
¼ teaspoon ground fennel seed
2 teaspoons olive oil
1 small onion, minced
2 cloves garlic, minced
2 ½ cups cooked brown or green lentils
3 tablespoons tomato paste
2 tablespoons water, or as needed
2 canned chipotle chiles in adobo sauce, seeded and minced
1 teaspoon adobo or hot sauce
8 (6 inch) vegan corn or flour tortillas
1 cup shredded lettuce
1 cup chopped tomatoes
¼ cup chopped fresh cilantro
1 cup guacamole
1 lime, cut into 8 wedges

Steps:

  • Combine ancho chile powder, cumin, coriander, oregano, salt, and fennel in a small bowl.
  • Heat oil in a large skillet over medium-high heat. Cook onion and garlic, stirring occasionally, until lightly browned, about 3 minutes. Add spice mixture and cook, stirring, until toasted, about 30 seconds.
  • Reduce heat to medium and add cooked lentils, tomato paste, a few splashes of water, and chipotle peppers. Cook, mashing lightly with a fork and adding water if necessary, until lentils are heated through and hold together, about 5 minutes. Season with additional salt if needed and adobo or hot sauce.
  • Lightly toast tortillas in a cast-iron skillet over medium heat. Spread about 1/3 cup filling down center of each tortilla. Top with lettuce, tomatoes, and cilantro. Serve with guacamole and lime wedges.

2 teaspoons Olive Oil
1/2 Yellow Onion (diced)
1 1/4 cup Cooked Brown Lentils (equivalent 1 can 15 oz, rinsed, drained)
1 1/4 cup Cauliflower Rice (fresh or frozen, see note to make your own*)
1 teaspoon Cumin
1 teaspoon Salt
1/2 teaspoon Garlic Powder
1/2 teaspoon Paprika
1/2 teaspoon Oregano
1/4 teaspoon Chili Powder
1/4 cup Vegetable Broth
3-4 tablespoons Vegan Worcestershire Sauce (or tamari sauce)
1/2 cup Tomato Paste

Steps:

  • In a large skillet, heat olive oil and stir fry the onion until fragrant - about 1 minute.
  • Stir in cooked, drained, canned brown lentils and cauliflower rice and stir fry for 1 minute.
  • Stir in spices: cumin, garlic powder, paprika, oregano, salt chili powder.
  • Stir in tomato paste, vegetable broth, and vegan Worcestershire sauce.
  • Reduce heat, simmer for 5-6 minutes or until the mixture thickens. The longer you cook the lentils, the thicker and dryer the sauce will be. For a smoother sauce, stop heat around 3-4 minutes.

A healthy, spicy, and smoky lentil taco filling that is super easy to make. Perfect for tacos, bowls, nachos, or salads! Vegan and gluten-free.

1 1/2 cups dry green or brown lentils
oil for cooking (olive, avocado, etc.)
1 onion, chopped
4 garlic cloves, minced
1 tablespoon ground cumin
1 tablespoon ground chili powder
1 teaspoon salt
1-2 small chipotle peppers in adobo, finely chopped + 1 tablespoon adobo sauce (see notes)
2 tablespoons pure maple syrup (see notes)
juice of 1 lime
1/3 cup water
taco ingredients of choice like tortillas, avocado, sliced cabbage, cilantro, salsa, cotija, etc.

Steps:

  • Cook the lentils. Add lentils and 5 cups of water to a large pot. Bring to a boil and then reduce heat to a very low simmer. Cook for 20-30 minutes or until just tender but not mushy. Once done, drain and set aside.
  • While the lentils are cooking, prepare the remaining ingredients.
  • Heat a large skillet over medium heat. Add a bit of oil to coat the pan and then add the onion and garlic. Sauté until the onions are softened, about 5 minutes.
  • Add the cumin, chili powder, salt, maple syrup, chipotle peppers and adobo sauce (start with less and work your way up!), lime juice, and water. Stir so that everything is well mixed.
  • Add the cooked and drained lentils and give everything a good stir again, cooking until all the liquid has evaporated. Taste and season with more salt, if needed.
  • Serve with desired taco ingredients!

  • To make lentils on the stovetop: Combine 1 cup rinsed brown lentils with 2 and 3/4 cups vegetable broth, 1/4 teaspoon salt and 2 bay leaves (optional) in a medium saucepan. Bring to a boil over medium-high heat. Once boiling, reduce to a simmer over medium-low heat. Cover and simmer until lentils are cooked through, about 15-20 minutes. Drain off excess liquid and remove bay leaves.
  • When lentils are cooked through, remove the bay leaves. Add the tomato sauce and seasonings (chili powder, cumin, garlic powder, onion powder, oregano, salt). Simmer uncovered over medium-low for 5 minutes to allow flavors to develop. Add a splash of water if the mixture becomes too thick. Squeeze with fresh lime just before serving.
  • Meanwhile, toast corn tortillas on a large skillet over medium-high heat. Flip when golden on one side (or when lightly browned spots appear).
  • Assemble tacos: Add a few pieces of lettuce to the center of each tortilla. Add a little less than 1/3 cup of lentil filling on top. Top with fresh guacamole, salsa, and chopped cilantro. See notes for additional topping ideas.
