Another forbidden dish for me. But I found a way around it. Using my recipe for "Forget Mashed potatos, Save your heart & save your life, make this instead" which is Mashed Cauliflower and Broccoli, I substituted the that recipe instead of using starchy- not good for you mashed potatoes. Instead of artery clogging sausage, I used a leaner, vegan sausage from Morningstar Farms. Topped with a very light onion gravy, it's hard to believe this isn't the real thing. Plus, the 'Mashed Cauliflower and Broccoli" is LOADED with vitamins and antioxidants.PLEASE NOTE: NUTRITION CALCULATOR ON THIS RECIPE IS VERY WRONG! 5 MORNINGSTAR FARMS VEGAN SAUSAGES=300 CALORIES 62.5 CALORIES FROM FAT.

1/2 cup of frozen onion
1 garlic clove (minced)
1/4 cup vegetable stock
5 vegan sausage links (Morningstar Farms, Lightlife or Acorn are good brands)
1 cup mashed cauliflower and broccoli

Steps:

  • Preheat oven to 350 and cook sausages in there until crispy (about 20 minutes).
  • While sausages are cooking, on the stove top, take the onions, garlic and saute in a non-stick pan. If onions are frozen -- you shouldn't need to use oil because as the onions melt -- the water will lubricate the pan. (calorie saver!) When they start to stick, start to gradually add in the veggie stock. Reduce heat and simmer.
  • While those 2 things are working, scoop the mashed cauliflower-broccoli on to the plate.
  • When sausages are done, put them on the plate with the mashed cauliflower-broccoli.
  • Add a squirt of brown sauce into the onion mixture (less than a teaspoon) and mix one last time before pouring this onion gravy over the "mashed cauliflower-broccoli".
  • Serve hot. Yum!

  • While you are waiting for the oven to pre-heat for the garlic, grab a large pot and fill with water to boil the cauliflower and potatoes.
  • In small sauce pan, add 1 tablespoon of vegetable oil and heat on medium high heat. Once the oil is hot add 2 tablespoons of flour and constantly whisk until it thickens (5-10 minutes). Set aside.

  • Cook the sausages in a medium saute pan until browned and cooked through. Remove from the pan and set aside.
  • Add onions to same pan, along with the butter and olive oil. Cook for 5 – 7 minutes at medium heat until onions are browned and softened. Add chicken stock and red wine (if using) and cook for another 3 – 5 minutes until reduced. Add the heavy cream and cook another 2 minutes. Season with salt and pepper.
  • To plate, place 1/2 cup of cauliflower puree in a shallow bowl. Add one sausage to each plate and top with onion gravy. Garnish with chopped parsley or another herb of your choice.

  • Melt some butter in a large saucepan. Add onions and cover with a lid. You'll be simmering these for about 10 minutes or until soft.Add sugar and the balsamic vinegar, still well, and cover with the lid. Cooking for an additional 5 minutes. After, add the vegan beef broth and gently boil for 5 minutes, uncovered.Mix the arrowroot powder and the cold water to form a thin paste, pour about a tablespoon of hot gravy into the starch mixture and mix thoroughly. Pour it back into the onion gravy.Raise the heat to 'high' and boil for 10 minutes or until the gravy is thickened—season with salt to taste.
  • Cut your potatoes into bite sizes, bring to a boil, then reduce to a simmer. Cook until the potatoes are done, about 10 minutes. Drain.Finish the mash by placing the plant milk and 2 taplespoons of vegan butter in the pot, turn the heat onto low and melt the butter. Start mashing away! You can use a potato masher, or you can use a hand mixer for more whipped mash.
  • Heat the remaining butter in a large non-stick pan, add the Beyond Sausages and fry until golden brown on all sides. That'll take about 10 minutes.To plate, spoon the mash onto your dishes. Place two vegan sausages ontop and pour the onion gravy over the food, add your peas, and serve warm. Cheers!
