VEGAN BANANA CAKE
Our whole family loves banana cake and this is a vegan version without eggs or dairy. If you like, you can add raisins and nuts. If using raisins, reduce the amount of sugar.

Steps:
- Preheat oven to 350 degrees F. Grease your loaf pan.
- In a medium sized mixing bowl, mash 3 - 4 bananas (about 1 1/2 cups to 1 3/4 cups works well), add oil/applesauce and vanilla extract, mix again. Add the flour, sugar, baking soda, baking powder and salt, and mix well, but don't overmix, just enough until the flour is combined. Batter will be slightly thick and a few lumps is ok. If mixture seems too thick, add milk, especially if using heavier flours such as whole wheat or whole spelt (you're more inclined to need it).
- Pour batter into a greased loaf pan. Bake for about 50 min - 1 hour. Ovens vary, mine usually takes 50 minutes. You can also do the toothpick test in the center of the loaf, if it comes out clean it should be ready. Remove from oven and let cool for 10 min before slicing.
- Original method: In a medium/large size bowl, combine flour, sugar, baking powder, baking soda and salt, set aside. In a medium bowl, mash bananas. Add the oil, vanilla and bananas to the dry ingredients and mix until combined, do not overmix. If mixture seems too thick, add the almond milk (especially if using heavier flours such as whole wheat or whole spelt, you're more inclined to need it).
- Keep covered on the counter for up to 3 days or in the refrigerator up to 1 week. Keep in the freezer for up to 2 months. Thaw the wrapped loaves overnight in the refrigerator. Reheat in the microwave or a toaster oven with a door.

VEGAN BANANA BREAD
This banana bread is eggless and dairy-free, but you'll hardly notice the difference. The crumb is moist and tender, and the flavor gets better each day (if it lasts!).

Steps:
- Preheat the oven to 350 degrees F. Line the bottom and two long sides of a 9-by-5-by-3-inch loaf pan with parchment, leaving a 2-inch overhang on each long side, and lightly coat with cooking spray.
- Whisk the flour, baking soda and salt together in a medium bowl. Whisk the bananas, sugar, yogurt, oil and vanilla together in another medium bowl. Gently fold the wet ingredients into the dry ingredients with a rubber spatula until the batter just comes together (it's OK if there are lumps). Transfer the batter to the prepared loaf pan and bake until a tester inserted in the center comes out clean, 55 to 60 minutes; tent the loaf with foil if it is browning too quickly. Cool the loaf in the pan on a wire rack for 30 minutes, then lift it from the pan by the parchment overhangs and cool completely on the rack. Store the loaf in an airtight container at room temperature for up to 5 days.

- Peel and mash one of the bananas into a rough paste using a fork. Reserve in a bowl and place to one side. Then slice the remaining banana lengthways twice so you end up with 4 long banana strips. Roughly chop these strips into 1-2 cm banana chunks.
- Take a large mixing bowl and pour in the flour, sugar, baking powder, cinnamon, mashed banana and sunflower oil. Whisk the bowl into a cookie dough like paste. Pour in your plant based milk of choice, I like to use oat or soya milk. Then whisk the bowl contents into a smooth batter.
- Mix half on the chopped banana chunks into the batter using a fork, just so they are evenly spread in the mixture. Then pour the batter into a shallow baking dish. Cover the batter with the remaining banana chunks. Pro tip: Don't be tempted to use a large or wide dish for the baking. The cake isn't designed to rise a lot, so you'll want a good thickness of batter in the dish (at least a couple of inches), otherwise you risk having a pancake-like cake.

- Preheat the oven to 350 F. Grease two 8″ cake pans with cooking oil, and line them with parchment paper. Set aside. See note for different cake pan sizes.
- Prepare the vegan buttermilk. Combine the dairy free milk with the apple cider vinegar, and set aside to sit for 5-6 minutes. You can weigh and measure the remaining ingredients during this time, including mashing the banana.
- In a medium bowl, whisk together the flour, cinnamon, baking powder, baking soda, arrowroot starch, and sea salt. Set aside.
- In a stand mixer with paddle attachment or a large bowl with hand mixer, cream together the vegan butter, granulated sugar, and coconut sugar until fluffy, about 2-3 minutes. Scrape down the sides as needed. Then add in the banana, applesauce, dairy free yogurt, and vanilla extract. Mix again on medium speed until combined, scraping down the sides and at the bottom of the bowl as needed. Add in about half of the dry mixture, along with half of the vegan buttermilk, and mix on medium speed until just combined. Add in the remaining dry mixture and vegan buttermilk, and mix on medium speed until there are just no more dry streaks. Make sure to scrape the bottom of the bowl as well as the sides.

- To prepare the frosting, place the cashews, syrup, non-dairy milk or water, salt, and extract in a high-speed blender or food processor. Blend or process until the mixture is mostly smooth; in a high-speed blender, this will be about 2 minutes once you get to high speed, and in a food processor it should take about 4 minutes, with a few breaks to scrape the bowl down. Then, with the machine running, drizzle in the coconut oil. Continue blending till the frosting is smooth and emulsified. Transfer it to an airtight container to chill for at least 2 hours. It will keep in the fridge for up to 4 days.
- Preheat your oven to 350F. Grease and flour a 9-inch, springform cake pan (I like to place a piece of round parchment in the bottom as well, to prevent any chance of the cake sticking).
- Sift the flour into a large mixing bowl, then stir it together with the salt, baking soda, baking powder, and sugar.
- In a separate mixing bowl, stir together the banana, yogurt, oil, non-dairy milk, lemon, and vanilla. Add these wet ingredients to the dry ingredients and fold them together until the batter is evenly mixed and no flour remains at the bottom. A few lumps in the batter is OK.
