This is a refreshing treat for a hot summer day that our family really enjoys. Diet soda can be used to cut calories. We often refer to them as Pop Pops.

Steps:
- Pour cream soda into a bowl and whisk until no longer bubbly; set aside.
- Heat water and sugar in a saucepan over medium high heat, stirring until the sugar is dissolved, about 5 minutes.
- Stir sugar mixture and vanilla extract into the cream soda.
- Pour mixture into small plastic cups or ice pop molds, then insert wooden ice pop sticks. Freeze until firm.

COCONUT, CHERRY AND VANILLA BEAN ICE POPS
Juicy cherries, creamy coconut milk and a generous amount of vanilla come together to create a delicious frozen dessert that's ideal for scorching days. These are not your regular ice pops, loaded with refined sugar: Small amounts of honey and maple syrup give just the right amount of sweetness and add flavor. Try experimenting with layering the ingredients to create different patterns. The only difficult part is waiting for them to freeze!

Steps:
- Bring the cherries, maple syrup, cinnamon and almond extract to a simmer in a small pot over high heat. Cover the pot, reduce the heat to low and simmer until the cherries are juicy and soft, 10 to 15 minutes. Remove the pot from the heat, and set aside.
- In another small-to-medium pot, bring the coconut milk and vanilla bean seeds and pods to a simmer over high heat, whisking occasionally. Reduce the heat to low, cover the pot and simmer for 5 minutes. Remove from the heat, let cool for 5 minutes, then whisk in the honey and vanilla extract. Remove and reserve the vanilla bean pod. Pour the mixture into a pitcher or measuring jug and set aside.
- Place a strainer over the blender jar. Add the cooked cherries, and press out the juice. Add 1/3 of the cherry pulp and 1 cup of the coconut milk mixture, and blend until smooth. You should have about 2 cups of liquid. Refrigerate. Divide the remaining coconut milk mixture among ice pop molds, and place them in the freezer until semifrozen, about 1 hour. Remove them from the freezer, and divide the remaining cherry pulp among the molds. Top with the blended cherry-coconut mixture, place the lids on top, add sticks and freeze until solid, at least 8 hours.
- To remove the ice pops, dip the molds in warm water for a few seconds, then carefully pull on the sticks to release.

Steps:
- Take milk, icing sugar and vanilla in a bowl and mix well so the sugar is melted.
- Now whip cream till lightly thickened. Add in milk mix and whip well.
- Pour this into a jug, fill popsicle moulds and insert popsicle stick into it.
- Freeze overnight.
- Now run the mould under water and remove it carefully.
- Serve immediately.
VANILLA PUDDING POPS
Make these ahead and you'll have an after-school treat for two kids for a whole week.

- Place a fine-mesh sieve over a medium bowl; set aside. In a medium saucepan, off heat, whisk together sugar, cornstarch, and salt. Gradually whisk in milk, mixing until ingredients are dissolved. Whisk in egg yolks.
- Whisking constantly, cook over medium heat until the first large bubble sputters. Reduce heat to low; continue to whisk, and cook 1 minute. Remove from heat, and immediately pour through sieve into bowl; stir in vanilla.
- Divide mixture among 10 3-ounce ice-pop molds. Chill in refrigerator until cool and thickened, about 1 hour. Insert pop sticks, and freeze until solid, at least 4 hours and up to 2 weeks. Run molds briefly under warm water to release pops.

- Combine milk, sugar and vanilla in a large bowl and stir until sugar dissolves.
- Pour mixture into the paper cups until they are half full.
- Freeze for 1 hour or until slushy enough to support stick.
- Put popsicle sticks in the cups for handles.
- Freeze in freezer for a total of about four hours.
PEAR VANILLA ICE POP
Steps:
- Peel and halve the pears and remove seeds with a spoon or melon baller. Combine 2 3/4 cups water and the sugar in a large saucepan over medium-high heat. Split the vanilla bean and scrape the seeds into the water. Heat until the sugar is dissolved and the syrup comes to a simmer, about 3 minutes. Submerge the pears in the vanilla syrup and cover. Cook over medium heat until the pears are tender in the center when poked with a knife, 15 to 20 minutes. Remove from the heat. Add the lemon juice and salt. Use an immersion blender to puree the mixture. Cool the mixture 10 minutes. Pour the mixture into 16 large ice pop molds (2 1/2 to 3 ounces each) and freeze for 6 hours or overnight. Run the popsicles under warm water briefly to unmold.;
