UPSIDE-DOWN ORANGE FRENCH TOAST
Steps:
- Place butter in a 13x9-in. baking dish. Combine the sugar, pecans, orange zest and cinnamon; sprinkle over butter. Arrange bread in dish. Spread with cream cheese. In a large bowl, whisk the eggs, orange juice, orange liqueur if desired and butter flavoring; pour over bread. Cover and refrigerate overnight., Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 325° for 25-30 minutes or until a knife inserted in the center comes out clean. To serve, invert slices onto plates.,

BLOOD ORANGE OLIVE OIL UPSIDE DOWN CAKE
Steps:
- Preheat the oven to 350 degrees F (180 degrees C). Grease a round loose-bottomed 9-inch (23-centimeter) cake pan with cooking spray and line the bottom with parchment paper.
- In a small bowl, mix the brown sugar and water to make a thick paste. Spread this thinly and evenly onto the base of the cake pan and set aside.
- Zest 1 orange and add this to a large bowl with the superfine sugar. Rub the zest into the sugar with your fingertips until the zest is evenly distributed. Set aside.
- Slice both oranges as thinly as you can with the skin on and arrange the slices on top of the brown sugar base in the cake pan. You can cut some of the slices in half to create a different pattern and to fill in all the gaps.
- Add the yogurt to the bowl with the superfine sugar and whisk briefly to combine. Whisk in the eggs and olive oil. Stir in the flour, baking powder, baking soda and salt until smooth. Gently pour the batter on top of the orange slices, being careful not to disturb the oranges underneath.
- Bake for 30 to 35 minutes, or until the sponge is firm to the touch and golden brown. Leave the cake in its pan to cool completely before attempting to turn it upside down. Serve with creme fraiche.
UPSIDE-DOWN ORANGE BISCUITS
This recipe comes from an old church cookbook from Belfast, Maine dated 1954. I love to collect cookbooks, and I bought this one years ago at an antique shop. These biscuits are so good--and with orange being my favorite flavor, it's easy to eat at least 2 at a time. Remember, they are biscuits, not rolls. enjoy!

- 1. Combine butter, orange juice, sugar and orange rind, and cook for two minutes.
- 2. Pour into nine muffin pans.
- 3. Sift flour, salt and baking powder, then cut in the shortening.
- 4. Add milk and then stir until the dough follows the fork around the bowl.
- 5. Knead 1/2 minute
- 6. Roll 1/4 inch thick
- 7. Sprinkle with cinnamon and sugar mixture and then roll like a jelly roll.
- 8. Slice 1 inch thick, and then place cut-side down over the orange mixture in the muffin cups
- 9. Bake in a 400 degree oven for 20 minutes (maybe a couple more) makes 9 biscuits
- 10. After they come out of the oven, take each muffin from the cups and turn them right side up--you can spoon any sauce that is left in the muffin cups over the muffins

- For the topping:.
- Combine ingredients in a saucepan and cook over medium heat until butter and sugar melt, about two minutes.
- Divide the topping among a standard muffin tin.
- Do not line the muffin tin with paper baking cups.
- For the biscuits:.
- Preheat the oven to 425 degrees.
- Sift the flour, salt and baking powder into a large bowl.
- Cut in the shortening with two knives or a pastry blender until it forms coarse, uneven crumbs.
- Add the milk.
- Mix well, but with a light touch.
- On a flour-dusted surface,roll the dough into a large rectangle.(approx 11x9).
- Spread with butter.
- Mix the sugar and cinnamon and sprinkle it over the dough.
- Roll as you would a jelly roll and slice into 12 biscuits.
- Place a single biscuit in each muffin cup.
- Bake until golden, about twenty minutes.
- Cool a couple of minutes,then invert cautiously onto a plate,taking care that the sticky topping doesnt burn you.

- Preheat oven to 400 degrees. Lightly toss cranberries with 1/2 cup sugar.
- Divide berries into 8 buttered muffin cups using about 1 tablespoon per cup.
- Mix remaining ingredients for the puffs and beat for 30 seconds. Fill muffin cups 2/3 full with batter.
- Bake about 15 minutes or until golden brown. Invert onto a cooling rack.
- Serve warm with hot butter sauce drizzled over.

- In medium sauce pan, heat sugar and cream, stirring constantly until just boiling.

ORANGE UPSIDE-DOWN CAKE

- Make the caramel:
- Preheat the oven to 350°F.
- Lightly butter the cake pan. Slice the oranges as thinly as you can (about 1/8 to 1/4-inch thick), preferably using a mandoline and picking out seeds as you go; set aside.
- Make sure you have all the ingredients for the caramel ready to go before you begin cooking it. In a medium pot, combine the sugar and 6 tablespoons water and place over medium-high heat. Bring to a boil and cook, swirling the pan occasionally, until the mixture turns a medium-dark amber color, about 10 minutes. Remove pot from heat and carefully stir in the butter and salt until incorporated. Pour the caramel into the buttered cake pan.
- Starting in the center of the pan, layer the orange slices on top of the caramel, overlapping a bit and working your way toward the outer edge (you may not need to use all the orange slices). Set pan aside.
- Make the cake:
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt; set aside.
- In a separate large bowl, use an electric mixer to cream the butter and sugar until fluffy, about 3 minutes. Add the eggs one at a time, beating well after each addition, and then blend in the vanilla and orange zest.
- Add the flour mixture in three parts, alternating with the buttermilk, beating just to combine. Spoon the batter in dollops over the oranges in the cake pan, being careful not to move them around too much. Smooth the top of the batter with a wet offset spatula or the back of a spoon. Bake until a toothpick inserted in the middle of the cake comes out clean, 35 to 40 minutes, rotating the pan halfway through.
- With an offset spatula or a butter knife, loosen any parts of the cake that seem to be sticking to the side of the pan. Invert the cake onto a plate or platter while it's still hot. Let cool until warm or room temperature, then cut into wedges with a serrated knife to serve.
