2 1/4 cups (302g) graham cracker crumbs
3 tbsp (39g) sugar
1/2 cup (112g) salted butter, melted
24 ounces (678g) cream cheese, room temperature
1 cup (207g) sugar
3 tbsp (24g) all purpose flour
3/4 cup (173g) sour cream, room temperature
1 1/2 tbsp vanilla extract
3 large eggs, room temperature
1 1/2 cups (310g) sugar
2 tbsp cornstarch
1 1/2 cups pureed strawberries (from about 1 lb strawberries)
1/2 tsp vanilla extract
2 cups chopped strawberries
1/2 cup heavy whipping cream, cold
1/4 cup powdered sugar
1/2 tsp vanilla extract

Steps:

  • Preheat oven to 325°F (163°C). Grease a 9×13 pan. 2.

  • To make the strawberry topping, combine the sugar and cornstarch in a large saucepan. Stir in the strawberry puree. 14.
  • Cook over medium heat, stir constantly until mixture thickens and come to a boil, about 15 to 20 minutes. 15.
  • Allow to boil for 1 1/2 minutes, then remove from heat. 16.
  • Stir in vanilla extract and chopped strawberries and allow to cool for about 15-20 minutes. 17.
  • Pour the topping over the cheesecake and allow to cool completely, 3-4 hours or overnight. You could serve the sauce immediately, but it will thicken as it cools. 18.
  • To make the whipped cream, add everything to a large mixer bowl and whip on high speed until stiff peaks form. Serve slices of the cheesecake with the whipped cream, if desired.

Strawberries are a quintessential Valentine's Day staple. Here they are set atop a chewy brownie bottom and buried under a decadent cheesecake. Each bar will have the perfect slice of fruit to share with your main squeeze.

Nonstick cooking spray, for greasing the pan
One 18.4-ounce box brownie mix (plus required ingredients)
45 to 50 medium strawberries (about 2 1/2 pounds), stemmed
Two 8-ounce packages cream cheese, at room temperature
1 cup sugar
4 cups heavy cream
1 cup sour cream
1 teaspoon pure vanilla extract
Two 1/4-ounce packages unflavored gelatin
Warm chocolate fudge sauce, for drizzling

Steps:

  • Preheat the oven to 350 degrees F. Lightly spray the bottom and sides of a 9-by-13-inch metal baking pan with cooking spray. Line the pan with parchment, leaving at least a 2-inch overhang on all sides.
  • Prepare and bake the brownies in the prepared pan according to the package directions for a 9-by-13-inch baking pan. Let cool completely on a rack, about 1 hour.
  • Meanwhile, slice 5 to 6 strawberries into 1/8-inch-thick slices--you will need enough to fit around the edges of the pan; set aside. Leave the remaining strawberries whole.
  • Beat the cream cheese, sugar and 3 1/2 cups of the heavy cream in a large bowl with an electric mixer on medium speed until stiff peaks form, 3 to 4 minutes. Fold in the sour cream and vanilla until smooth.
  • Bring the remaining 1/2 cup heavy cream to a boil in a small saucepan, then whisk in the gelatin. Continue to whisk off heat until the gelatin is dissolved, 2 to 3 minutes. Fold the gelatin mixture into the cream cheese mixture until well combined.
  • Stand the sliced strawberries upside down around the perimeter of the pan with the flat/cut sides touching the side of the pan, cutting an extra strawberry or two if needed. Pour 3 cups of the cream cheese mixture on top of the brownies and use an offset spatula to spread and smooth it out. Press the remaining whole strawberries into the cream cheese upside down (pointed ends up); you should have about 8 rows of 5. Spread the remaining cream mixture on top of the strawberries and smooth out the top with an offset spatula. Chill until set, at least 2 hours and up to overnight.
  • When ready to serve, use the parchment overhang to remove the dessert from the pan and place onto a serving platter (trim the parchment from around the edges). Drizzle the top with chocolate fudge sauce and cut into bars.

Have you ever purchased something, thinking Wow! I can think of many ways to use this. THEN, never use it? I've got just the piece! Today, it came out of the cabinet! "The Gelatin Mold" !

1 pkg strawberry cheesecake mix
1 1/2 c cold milk
4 Tbsp melted margarine
1 pkg 8 oz. cream cheese, softened
2 Tbsp sugar
1/2 c chopped pecans, toasted

Steps:

  • 1. Spoon strawberry topping evenly in bottom (top) of gelatin mold. Beat cream cheese until smooth & creamy; slowly add cheesecake mix and cold milk (do not use nonfat dry milk or soy milk, this will cause it not to set firm enough. Mix slow until well blended. Then beat until smooth & creamy.
  • 2. Spoon evenly (do not pour-it dislodges the topping)on top of strawberry topping. Smooth it evenly (if not the cheesecake will be lopsided).
  • 3. Mix melted margarine, pecans and graham cracker crumbs until well blended. Spoon on top of cream cheese mixture. Seal tightly. Refrigerate 3-4 hours.
  • 4. Before serving. Immerse gelatin mold UP TO RIM in hot water for 30 seconds. DO NOT IMMERSE "Upsey Daisy it onto serving plate. Serve immediately.
  • 5. Since I've become severely allergic to wheat, I substituted the graham cracker crumbs for a wheat-free cookie and crushed it. Using it in place of graham cracker crumbs. No one noticed the difference.

Nonstick cooking spray
3/4 cup chocolate graham cracker crumbs (about whole 4 crackers)
2 cups full fat cottage cheese, such as Daisy
One 8-ounce package light cream cheese, softened
3 large eggs
3/4 cup sugar
3 tablespoons cocoa powder
1 teaspoon vanilla extract
One 10-ounce bag frozen strawberries
1/4 cup sugar
2 teaspoons cornstarch
1 tablespoon water
Pinch kosher salt
1 teaspoon vanilla extract

Steps:

  • For the cheesecake: Preheat the oven to 375 degrees F. Spray a 9-inch springform pan with nonstick cooking spray. Use the bottom of a dry measuring cup to gently press the graham cracker crumbs into the bottom of the prepared pan; the crust will not be very thick. Spray the crust with cooking spray. Place on a rimmed baking sheet.
  • In a blender, combine the cottage cheese, cream cheese, eggs, sugar, cocoa powder and vanilla and blend until smooth. Pour into the crust and bake until almost set but still jiggly in the center, about 40 minutes. Let cool completely. Chill in the refrigerator for at least 4 hours, or up to overnight.
  • For the strawberry sauce: While the cheesecake is baking, combine the strawberries and sugar in a medium saucepan over medium-low heat. Bring to a simmer and let simmer until the berries start to break down, 5 to 10 minutes.
  • Mix the cornstarch with the water, salt and vanilla in a small bowl until completely combined, creating a slurry. Add the slurry to the strawberries and cook until it thickens, another 10 minutes. Cool to room temperature, then transfer to a container and refrigerate until ready to use.
  • Serve the cheesecake cold, topped with the strawberry sauce.

250g digestive biscuits
100g butter, melted
1 vanilla pod
600g full fat soft cheese
100g icing sugar
284ml pot of double cream
400g punnet of strawberries, halved
25g icing sugar

Steps:

  • To make the base, butter and line a 23cm loose-bottomed tin with baking parchment. Put the digestive biscuits in a plastic food bag and crush to crumbs using a rolling pin. Transfer the crumbs to a bowl, then pour over the melted butter. Mix thoroughly until the crumbs are completely coated. Tip them into the prepared tin and press firmly down into the base to create an even layer.   • Slice the vanilla pod in half lengthways, leaving the tip intact, so that the two halves are still joined. Holding onto the tip of the pod, scrape out the seeds using the back of a kitchen knife.
  • Pour the double cream into a bowl and whisk with an electric mixer until it's just starting to thicken to soft peaks. Place the soft cheese, icing sugar and the vanilla seeds in a separate bowl, then beat for 2 mins with an electric mixer until smooth and starting to thicken, it will get thin and then start to thicken again. Tip in the double cream and fold it into the soft cheese mix. You're looking for it to be thickened enough to hold its shape when you tip a spoon of it upside down. If it's not thick enough, continue to whisk. Spoon onto the biscuit base, starting from the edges and working inwards, making sure that there are no air bubbles. Smooth the top of the cheesecake down with the back of a dessert spoon or spatula. Leave to set in the fridge overnight.
  • Bring the cheesecake to room temperature about 30 mins before serving. To remove it from the tin, place the base on top of a can, then gradually pull the sides of the tin down. Slip the cake onto a serving plate, removing the lining paper and base. Purée half the strawberries in a blender or food processor with the icing sugar and 1 tsp water, then sieve. Pile the remaining strawberries onto the cake, and pour the purée over the top.
