Steps:
- Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower; cover the saucepan with a lid and steam cauliflower until tender, 10 to 12 minutes.
- Melt butter in a large pot over medium heat. Whisk flour into melted butter; cook, stirring constantly until raw flour taste cooks off and mixture darkens, 3 to 4 minutes.
- Gradually whisk milk into butter mixture; cook, stirring constantly, until sauce thickens, about 8 minutes. Remove pot from heat; stir in Cheddar cheese. Season sauce with salt and white pepper.
- Stir steamed cauliflower into cheese sauce; season with salt and white pepper.

TWICE-BAKED CAULIFLOWER
This vegetarian and onion-free version of the dish turned out delicious. Even my cauliflower-hating wife loved it! Served with fresh cracked pepper brought the flavors out nicely.

- Preheat oven to 350 degrees F (175 degrees C).
- Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until very tender, about 5 minutes.
- Transfer cauliflower to a bowl and mash with a potato masher until few chunks remain; add 1/2 cup Cheddar cheese, sour cream, cream cheese, and Parmesan cheese and mix thoroughly. Spread the mixture into a 8-inch square casserole dish; top with remaining Cheddar cheese. Cover dish with aluminum foil or lid.
- Bake in preheated oven until hot and bubbling, 20 to 25 minutes. Remove cover and continue baking until the top is browned, about 10 minutes more.

- Preheat oven to 350 degrees F (175 degrees C).
- Place cauliflower in a microwave-safe baking dish with just enough water to cover bottom of dish. Cook in the microwave on High for 5 minutes, or until slightly tender. Drain, and season with salt and pepper. Arrange tomato slices around the cauliflower. Drizzle cauliflower and tomatoes evenly with melted butter, and top with cheese.
- Bake 40 minutes in the preheated oven, until cheese is bubbly.

TWO CHEESE CAULIFLOWER
Thanks go to British chef Delia Smith for coming up with this cheesy cauliflower dish. It's real comfort food for me and pleases even the pickest vegetable eaters.

Steps:
- Preheat the grill to its highest setting.
- Place the florets and a few of the inner leaves in a steamer with the pieces of bay leaf tucked amongst it.
- Pour in some boiling water from the kettle, sprinkle over some freshly grated nutmeg and salt, then cover and steam until tender.
- This should take about 12 minutes.
- After this time, test the thickest parts with a skewer to see if they are tender, then remove it to the baking dish and cover with a cloth to keep warm.
- Now pour 3 fl oz of the steaming water into a saucepan, add the crème fraîche and simmer.
- Whisk well until it has thickened very slightly, then add the cheeses.
- Heat this gently for about a minute, whisking, until the cheeses have melted.
- Season the sauce to taste and pour over the cauliflower.
- Scatter the spring onions and remaining parmesan over the dish, then sprinkle with the cayenne.
- Finally, place the dish under the hot grill until the cauliflower has browned and the sauce is bubbling.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a baking dish with cooking spray.
- Place cauliflower in a microwave-safe bowl with 1/2 cup water. Microwave until tender-crisp, about 5 minutes. Drain and transfer to the prepared baking dish.
- Whisk egg and flour together in a bowl. Add milk, salt, and pepper. Pour over cauliflower florets. Sprinkle Cheddar cheese and paprika on top.
- Bake in the preheated oven until cheese is melted and cauliflower is soft, 30 to 40 minutes.

THREE CHEESE CAULIFLOWER [SOUFLE KOUNOUPITHIOU]
Any pointers would be great, this is the first time I've written up a recipe - so any advice, anything I should add, omit, et. Al would be much appreciated. This is a Greek side dish, which actually can make a nice main course as well. If cauliflower isn't really you bag, you can replace it with broccoli. I got this recipe, along with a few other ones, from a file a friend of mine sent me. It's surprisingly good, and filling.

- Preheat oven to 350°F.
- Mix together the three cheeses together. I've found that a regular zip lock bag works best.
- Wash and trim the core and leaves off of the head of cauliflower.
- Cut into medium-sized pieces, and boil in well-salted water for 10 minutes. Drain and set to the side.
- Heat 3 cups of milk over medium-low heat in a saucepan. Mix in the salt, pepper, and nutmeg. Do not let mixture boil.
- Beat together the remaining milk (1 cup), eggs, and cornstarch.
- When the milk mixture (step 5) starts to steam, add in the beaten egg mixture, whisking continuously to avoid a boil.
- Once sauce thickens, remove from head and stir in roughly 2/3 of the mixed cheeses.
- Spread cauliflower across the bottom of a 13"x10" pan. Pour sauce over evenly, and sprinkle with the remaining cheese.
- Bake for 40-45 minutes.

This is favorite in our house, it can be served as an accompaniment to a roast dinner or as a main course with potatoes either roasted or chipped. I use what ever cheese I have in the fridge and often use two or three cheeses to add flavour.

- Break the cauliflower into florets. In a large pot boil the cauliflower,in salted water, when tender drain and set aside.
- Melt the butter in a pan. Add the mustard, flour, stock cube and half of the milk. Stir till the flour thickens the milk, if the sauce is too thick add milk till the correct consistency is achieved.
- Add the cheese and cook till it has melted in the sauce.
- Place the cauliflower in an oven proof dish, cover with sauce. Decorate with the tomato and bake in the oven till it is heated through.
- Serve with potato and tomato pie it's wonderful.

- preheat oven to 180*c/375*F.
- break cauliflower into florets and soak in warm salted water for 3-4 minutes.
- Drain, place in pan with hot water, cover and bring to boil. Reduce heat to simmer until florets are tender.
- While cauliflower is cooking, melt butter in a pan, add flour, stir over heat heat until flour starts to bubble, remove from heat. Stir in milk, return to heat and stir until mixture boils and thickens.
- Remove from heat and add cheese - let it melt into sauce.
- Drain cooked cauliflower, place on serving plate and spoon cheese sauce over it. Sprinkle with Parsley. If you want you can place cauliflower in dish, top with cheese sauce and broil for a minute until sauce browns.

- Bring a large saucepan of water to the boil, then add 1 large cauliflower, broken into pieces, and cook for 5 mins - lift out a piece to test, it should be cooked.
- Drain the cauliflower, then tip into an ovenproof dish. Heat oven to 220C/200C/gas 7.
- Put the saucepan back on the heat and add 500ml milk, 4 tbsp flour and 50g butter.
- Keep whisking fast as the butter melts and the mixture comes to the boil - the flour will disappear and the sauce will begin to thicken. Whisk for 2 mins while the sauce bubbles and becomes nice and thick.
- Turn off the heat, stir in most of the 100g grated cheddar cheese and pour over the cauliflower. Scatter over the remaining cheese, and 2-3 tbsp breadcrumbs if using.
- Put in the oven and bake for 20 mins until bubbling.
