1/2 cup dark rum
1/2 cup fresh lemon juice
1/2 cup fresh orange juice
3 tablespoons orange Curacao
3 tablespoons orgeat syrup or 3 tablespoons almond syrup
ice cube
4 slices pineapple, cut into wedges (optional)
4 fresh mint sprigs (optional)

Steps:

  • Mix first 6 ingredients in pitcher.
  • Fill 4 small glasses with ice.
  • Pour rum mixture over; stir to blend.
  • Garnish with pineapple and mint, if desired.
  • Makes 4 servings.

1 ounce dark rum
1/2 ounce light rum
1/4 ounce orgeat (almond-flavored) syrup
2 ounces orange juice
2 ounces pineapple juice
1/4 ounce triple sec
Pineapple wedge and maraschino cherry, for garnish

Steps:

  • Mix the dark and light rum, orgeat syrup, and orange and pineapple juice in a cocktail shaker with ice cubes or crushed ice. Pour into a glass. Float the triple sec on top by pouring it over the back of a spoon. Garnish with the pineapple wedge and cherry.

The Mai Tai originated in California and was introduced to Hawaii in the 1940s, where orange and pineapple juices were added to create the Royal Hawaiian Mai Tai. This is Ree's favorite version of the famous drink.

6 ounces light rum
3 ounces dark rum
2 ounces lime juice
2 ounces orange liqueur
2 ounces almond syrup (like for coffee)
4 ounces orange juice
5 ounces pineapple juice
1/4 cup maraschino cherry juice, plus a few cherries for garnish
4 small wedges fresh pineapple, for garnish
Fresh mint leaves, for garnish

Steps:

  • Combine the rums, lime juice, orange liqueur, almond syrup, orange juice and pineapple juice in a mason jar and secure the lid. Shake well. Fill 4 rocks glasses with ice and pour over the mixture.
  • Add a splash of cherry juice to each glass. Garnish with the cherries, wedges of fresh pineapple and mint leaves.

KATIE'S TWISTED TEA

4 cups lemonade
6 sprigs fresh mint, plus fresh mint leaves, for the ice cube trays
8 ounces vodka
6 cups Sweet Tea, recipe follows
6 black tea bags, such as orange pekoe
1/2 cup sugar

Steps:

  • Pour the lemonade into ice cube trays. Add 1 mint leaf to each cube. Freeze for at least 2 hours or overnight.
  • Divide the lemonade ice cubes among 6 tall glasses. Pour the vodka over the ice cubes and top with Sweet Tea. Finish with a straw and a mint sprig.
  • In a medium pot over high heat, bring 2 cups water to a boil. Take off the heat and add the tea bags. Steep the tea for 5 minutes, then remove the tea bags. Stir in the sugar until dissolved. This will be the concentrated base of your tea.
  • Add the tea mixture to a pitcher filled with ice. Top off with 4 cups of water. Serve immediately or refrigerate, covered, for up to a week.

1/2 cup almond syrup (such as Torani)
1/2 cup of fresh mint, chopped
2 cups pineapple juice
1 1/2 cups orange juice

Steps:

  • Stir lime juice, syrup and chopped mint leaves in heavy small saucepan over medium heat just until the mixture simmers. Cool.
  • Strain syrup into pitcher.

  • Pour mixture over.

This iconic rum-based cocktail was invented by Victor Bergeron in the 1940s at his first Trader Vic's restaurant, in Oakland, California. (Bergeron's nickname was Trader Vic.) There are countless interpretations, many of them sugar bombs. We stayed true to the original to create a balanced Mai Tai that includes the key flavors of almond (in the form of orgeat syrup, an essential ingredient in many tiki cocktails), citrus and caramelized sugar.

1 cup demerara sugar
1 ounce fresh lime juice (from about 1 lime, halved crosswise), reserve one half of the spent rind for garnish
1 ounce gold rum
1 ounce light rum
3/4 ounce orange curaçao
1/2 ounce orgeat syrup
Fresh mint sprig, for garnish

Steps:

  • Combine the demerara sugar with 1/2 cup water in a small saucepan and cook over medium-low heat until the sugar is fully dissolved, about 5 minutes. Transfer the demerara syrup to a small bowl and set aside to cool completely, about 15 minutes (see Cook's Note).
  • Combine the lime juice, gold and light rums, orange curaçao, orgeat syrup, 1/4 ounce demerara syrup and 1 cup ice in a cocktail shaker and shake vigorously until chilled, about 10 seconds. Pour the cocktail into an old fashioned or rocks glass. Stick the stem of the mint sprig into the center of the cut side of the spent lime half (it should look like a palm tree on a floating island). Place the garnish in the drink lime-side down.

25ml golden rum
1 tbsp orange curacao
2 tsp orgeat syrup
25ml lime juice
2 tsp sugar syrup
ice cubes
crushed ice
25ml dark rum
wedge of pineapple, a lime wheel or a cocktail cherry (or all three!)

Steps:

  • Pour the golden rum, curacao, orgeat, lime juice and sugar syrup into a cocktail shaker with a handful of ice cubes. Shake until the outside of the shaker feels really cold.
  • Fill a tumbler with crushed ice then strain the cocktail over it. Slowly pour the dark rum over the top so it stains the top of the drink a rusty gold.
  • Garnish with fruit like pineapple, lime and cocktail cherries if you like.
