2 tablespoons olive oil
1 pound homemade sweet Italian sausage ((click link for recipe - it's super easy and SO much better than store-bought!))
1 medium yellow onion (, finely chopped)
3 cloves garlic (, minced)
2 large carrots (, chopped)
2 large ribs celery (, chopped)
1 large potato (optional) (, diced)
2 Roma or other medium-sized tomatoes (, chopped)
1 tablespoon tomato paste
1 pound dried cannellini beans (, soaked overnight in water, drained and rinsed (can substitute great northern beans))
8 cups quality chicken broth ((we recommend Aneto's 100% All-Natural Chicken Broth))
1/2 teaspoon dried rosemary
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1/4 teaspoon dried ground sage
2 bay leaves
1 1/2 teaspoons salt
1/2 teaspoon freshly ground black pepper
2 bunches lacinato kale (aka Tuscan kale) (, tough ribs removed and leaves roughly chopped)

Steps:

  • Heat the oil in a stock pot and cook the ground sausage until no longer pink. Add the onions and garlic and cook for another 5 minutes until softened. Add the carrots, celery and potatoes and cook for another 5 minutes. Add the tomatoes and cook for an additional 3-5 minutes. Add all remaining ingredients except for the kale and bring to a boil. Reduce the heat, cover and simmer on low for an hour or until the beans are tender.
  • Add the chopped kale and simmer for another 5-10 minutes until the kale is tender. Add more salt and pepper to taste.*This soup tastes even better the next day.

2 tablespoons margarine
4 potatoes, peeled and cubed
1 onion, chopped
2 stalks celery, chopped
water to cover
1 (16 ounce) package turkey kielbasa, cut to 1/4 inch slices
1 (1 ounce) package dry Ranch-style dressing mix
1 quart half-and-half cream
salt and pepper to taste

Steps:

  • Place the butter or margarine, potatoes, onion and celery in a large pot over high heat. Add water to cover and cook for 20 minutes, or until potatoes are tender.
  • Puree the cooked potato mixture in small batches in a blender or food processor. Return the pureed mixture to the pot over medium heat. Add the kielbasa, ranch dip mix and half-and-half. Stir well and season with salt and pepper to taste. Allow soup to heat through, but do not boil.

1 large onion, chopped

1 pound Italian sausage
1 1/2 pounds potatoes, cubed
1 bunch kale, chopped
1/2 cup almond cooking milk

1 15-ounce can cannelini beans
Salt & pepper, to taste

Steps:

  • If necessary, remove sausage from its casing.
  • Heat a large Dutch oven or stockpot to medium. Add sausage and cooking, breaking into pieces as you go, until no longer pink - about 5 minutes.
  • Add onion and garlic. Continue cooking, stirring occasionally, until onions are translucent - about 5 minutes
  • Increase heat to high, and add chicken broth and potatoes. Bring to a boil and cook until potatoes are soft.
  • Reduce heat to medium, add kale and white beans. Simmer until kale is tender - about 10 minutes.
  • In a small bowl, whisk almond cooking milk and cornstarch together. Stir into soup and let soup continue cooking until it has thickened - about 10 minutes.

1 cup water
2 cups cooked turkey, cubed
turkey stock, to cover
