6-8 boneless and skinless chicken thighs, ((about 1 1/2 pounds))
1/2 teaspoon each garlic powder and onion powder
1/2 teaspoon salt
1/3 teaspoon paprika
1/4 teaspoon cracked black pepper
2 tablespoons reserved sun dried tomato oil, (from jar)
1 small brown shallot
4 cloves garlic (minced)
1/2 cup (4 oz | 120g) sun dried tomato strips
1/2 cup (4 fl. oz | 120ml) dry white wine, ((or chicken broth))
1/2 cup (4 fl. oz | 120ml) low sodium chicken broth
3/4 cup (6 fl. oz | 185ml) heavy cream
1/3 cup (1 oz. | 30g) fresh shredded parmesan cheese
1 teaspoon Italian seasoning
3/4 cup fresh baby spinach leaves (packed)
1/4 cup fresh basil leaves (packed)

Steps:

  • Season chicken with garlic powder, onion powder, paprika, salt and pepper.
  • Heat sun dried tomato oil in a large skillet over medium-high heat.
  • Sear chicken in batches of two or three until golden brown on both sides, about 3-4 minutes each side. Transfer to a plate, keep warm.
  • Add the shallot and cook until soft, about 3 minutes. Sauté garlic until fragrant, about 30 seconds. Add the sun dried tomato strips and cook to release flavours, about 1 minute.
  • Pour in wine; bring to a simmer while scraping up the browned bits from the bottom of the skillet.
  • Let simmer for 2 minutes, then add in the chicken broth, cream, parmesan and Italian seasoning.
  • Bring to a gentle simmer, then reduce heat to low-medium. Let simmer for 2-3 minutes until thickened. Stir regularly to melt parmesan cheese.
  • Taste test sauce and season with a pinch of salt and pepper, if needed.
  • Stir through spinach and basil leaves. Stir through and let leaves wilt through the sauce. Return chicken to the pan; drizzle sauce over chicken and let simmer for a further minute.
  • Serve immediately over mashed potato, mashed cauliflower, rice, pasta, or fresh bread to mop up the sauce!

4 bone-in, skin-on chicken thighs
2 teaspoons salt, for the chicken
1 teaspoon pepper, for the chicken
1 tablespoon oil
3 cloves garlic, chopped
½ onion, diced
1 tomato, diced
2 cups spinach
2 cups heavy cream
1 teaspoon salt
1 teaspoon pepper
½ cup grated parmesan cheese
2 tablespoons fresh flat-leaf parsley, chopped

Steps:

  • Season the chicken all over with salt and pepper.
  • Heat the oil in a skillet over medium-low heat.
  • Place the chicken thighs skin side down in the skillet and cook for about 13 minutes to crisp up the skin. Move the chicken around from time to time to ensure it cooks evenly. The skin should be hard to the touch.
  • Flip the chicken, then cook for about another 15 minutes, until the chicken is cooked through. Remove from pan.
  • Add the garlic and onion, stirring until onions are translucent. Stir in the tomatoes and spinach until the spinach is wilted.
  • Add the heavy cream, salt, and pepper, bringing to a boil.
  • Add the Parmesan cheese and parsley, stirring until the sauce has thickened slightly.
  • Place the chicken back in the pan, spooning the sauce on top of the chicken.

12 ounces fettuccine
4 slices bacon, chopped
1 pound chicken tenders, cut into 1-inch pieces
2 cloves garlic, minced
4 plum tomatoes, chopped
1 cup heavy cream
5 ounces baby spinach
3/4 cup grated Parmesan
3 tablespoons chopped fresh basil

Steps:

  • Bring a large pot of salted water to a boil. Cook the fettuccine according to package directions; drain.
  • Meanwhile, put the bacon in a large, cold skillet, then cook over medium-high heat, stirring occasionally, until crispy, about 8 minutes; transfer to a plate with a slotted spoon.
  • Sprinkle the chicken lightly with salt and pepper and add to the skillet in a single layer. Let cook, undisturbed, until golden brown on the underside, 2 to 3 minutes. Continue to cook, stirring occasionally, until cooked through, about 4 minutes more. Transfer to the plate with the bacon.

5-6 whole chicken thighs (skinless and boneless)
1 tbsps. Italian seasoning
2 tsps. paprika
1 tsp. black pepper
1/2 tsp. chili flakes (optional)
2 tsps. coriander (dry)
2 tsps. onion powder
2 tsps. garlic powder
1/2 tsp. ginger powder (or fresh ginger)
1 tbsp. sriracha (or chili sauce of your choice)
1 tsp. salt
4 oz. sundried tomatoes ( in oil, julienned)
1 cup chicken broth (low sodium)
4 tbsps. olive oil
1 small onion (or 1/2 large onion, petite diced)
4 cloves garlic (mined)
16 oz. cremini mushrooms (washed and sliced)
4 oz. pimentos (diced )
1 tbsp. tomato paste

Steps:

  • Preheat the oven to 400 F.
  • Trim all fats from the chicken thighs.
  • Mix all the spices in a small bowl. Use 1/2 of the spices to season the chicken thighs and save half for later.
  • In a cast iron skillet or stainless steel skillet (something oven safe), heat the olive oil on medium-high heat.
  • Pan sear the chicken thighs on each side for 5-7 minutes to get a golden crispy coat on the outside. Once done, remove the thighs and set aside on a plate.
  • In the same skillet, pan sear the onion until translucent in color and add in the minced garlic. Simmer for another minute then add in the sliced mushrooms. Cook for a few minutes to reduce the mushrooms.
  • Add in the chicken broth, tomato paste, sundried tomatoes, sriracha sauce, pimentos and the remainder of the spices. Mix and cook for a couple of minutes then add in the chicken thighs.
  • Using a spoon to drench the chicken thighs with the mushroom sauce and transfer the skillet to the oven. Bake for 20 minutes or until until the thighs are fully cooker. Every oven is different so use an instant read thermometer to check if the internal temperature of the chicken is at 165 F.
  • Remove the skillet from the oven and cover with aluminum foil to rest for 5 minutes then serve.
  • NOTE: If you don't want to cook the chicken in the oven, you can continue to cook the chicken after you add to the sauce, covered on medium low heat for an extra 10-15 minutes, or until the chicken thighs are fully cooked.

One 6-pound whole chicken, cut into 8 pieces
Kosher salt and freshly cracked black pepper
Olive oil, for cooking
3 cloves garlic, sliced
4 ounces dry vermouth
2 beefsteak tomatoes, cut into eighths
1/2 cup pitted green olives (your favorite kind)
Small bundle fresh oregano, tied with butcher's twine
1 1/2 cups chicken stock
2 tablespoons unsalted butter
Fresh basil, torn, for serving

Steps:

  • Set up a grill for cooking with direct and indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only. Place a large cast-iron pan on the direct-heat side of the grill to preheat.
  • Sprinkle the chicken with salt and pepper on both sides. Add a film of olive oil to the pan, followed by the chicken pieces, skin-side down. Allow the chicken to deeply brown, 4 to 5 minutes, then flip and add the garlic. Briefly sauté until fragrant, then deglaze with the vermouth. Scatter in the tomatoes, olives and oregano bundle. Add the chicken stock and season with salt and pepper. Move the pan to the indirect-heat side of the grill and close the lid. Allow to cook until the chicken is cooked through and the internal temperature reads 160 degrees F, 15 to 20 minutes. Remove the pan from the heat and stir in the butter. Discard the oregano bundle. Top with the basil and serve.

This is a favourite from 30 Minute Meals although I alter it a bit. For example, it works out quite well with all bone-in dark meat. Some sherry or cider vinegar can be substitued for some of the wine and wine vinegar. I have been liberal with cooking time since leaving the bone in increases the cooking time. Preparation is VERY easy, though -- despite the number of steps which are truly easy.

  • Heat a large, heavy, deep skillet over medium high heat.

  • Brown chicken 2 minutes on each side and remove from pan.
  • Add remaining oil and swirl around pan. Add remaining chicken pieces and garlic. Brown chicken 2 minutes on each side and remove.
  • Add vinegar to the pan and let it sizzle till most evaporates.
  • Add butter, shallots, and rosemary to the pan and cook 2 minutes.
  • Add flour and cook 1 minute.
  • Whisk in wine and allow to reduce and thicken for 1 minute.
  • Whisk in broth and bring liquids up to a low boil.
  • Return chicken to the pan and simmer over moderate heat 7 to 8 minutes for boneless (or nearly double that for bone-in) to cook chicken thoroughly.

3 tablespoons olive oil, divided

8 skinless chicken thighs
1 1/2 teaspoons olive oil
1 yellow onion, thinly sliced
2 red peppers, thinly sliced
2 garlic cloves, minced
1 (28 ounce) can peeled tomatoes
2/3 cup dry white wine
1 teaspoon dried oregano or 1 large fresh oregano sprig, chopped
1 (14 1/2 ounce) can cannellini beans, drained and rinsed
salt and pepper
4 sprigs oregano (optional)

Steps:

  • Heat the oil in a non-stick skillet until hot, not smoking. Saute the chicken in the oil until brown. Remove chicken from the pan and reserve. Add the onions and peppers to the pan and cook 3 to 5 minutes until soft but not browned. Add minced garlic.
  • Carefully drain tomatoes reserving liquid in a cup or bowl. Mash the tomatoes into a thick paste - more concentrated than tomato sauce but not as thick as tomato paste.
  • Add chicken, tomatoes, wine and oregano to the onions and peppers. Simmer 30 minutes, until chicken is cooked through. If the pan becomes dry, add a little of the reserved tomato liquid. Do so sparingly.
  • Add cannelloni beans to the pan, and simmer another 5 minutes until hot.
  • Garnish with sprigs of oregano (optional).

  • Coat the bottom of a large shallow cast iron skillet or braising pan with olive oil and heat on medium heat until hot. Season the chicken on both sides with salt and pepper and then brown, skin side down for about 15 minutes, until the skin is nice and crisp. Flip the chicken and cook for another 15 minutes, or until done. The meat should read 160F on an instant read thermometer. Set aside on a plate and cover with foil, or put in a warm oven while you make the sauce.
  • Add the shallot and garlic to the pan and saute, stirring constantly, for a couple of minutes. Then add the Marsala wine and let it bubble down while you scrape up the browned bits from the bottom of the pan.
  • Add the chicken stock, heavy cream, and sun dried tomatoes, and cook the sauce for a few minutes until it starts to thicken, stirring frequently. Scrape up everything from the bottom and sides of the pan into the sauce. NOTE: This isn't a super thick sauce, but it will thicken somewhat as it cooks.
  • Add the cheese and stir until incorporated. Add the chopped spinach and fresh tomatoes to the pan, and cook until the spinach has wilted. Add the chicken back into the pan and heat through before serving, garnished with fresh parsley or thyme.
