The Best Turnip Au Gratin Recipe is super easy and just requires a tad bit of layering and a few ingredients and it is ready to pop in the oven!

- Preheat oven to 375F.
- Peel, trim and slice the turnips very thinly. I used my mandoline.
- In a cast iron skillet, melt 2 tbsp butter.
- Put a layer of turnips on the bottom of the skillet on top of the butter.
- Season lightly with salt and pepper and add 1/3 cup cheddar cheese and 1/3 cup parmesan cheese.
- Add a tbsp of butter, cut into small pieces and place on top of this layer.
- Drizzle 2 tbsp milk over the turnips, top with some fresh thyme.
- Repeat steps 4-7 until a total of 3 layers are formed. Finish with a cheesy top.
- Bake for 25-30 minute until bubbly and brown.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 2-quart casserole.
- Bring a pot of water to a boil and add turnips. Reduce heat to low, and simmer turnips until tender, about 15 minutes. Drain.
- Transfer turnips to a large bowl and mash with applesauce, 6 tablespoons softened butter, brown sugar, eggs, salt, black pepper, and half the bread crumbs. - 1. Heat oven to 400 degree's. Thinly slice the cubed rutabaga. Slice thin in a food processor, with a mandolin or knife. Place rutabega (turnip) in to a large kettle.
- 2. Mix the cream, nutmeg, chopped garlic, onion, sugar, flour. Salt, pepper,and Thyme together.
- 3. Pour cream mixture over the turnip. Melt the butter and add to pot. Stir well to combine. Cook until it boils. Reduce heat to medium and cover. Cook until it is softened . About 10 minutes.
- 4. Pour mixture into a casserole dish. Cover and bake until it boils rapidly, thickened and cooked all the way through. Remove cover. continue baking until thickened.
- 5. Mix breadcrumbs Parmesan cheese and melted butter together. Sprinkle over casserole. Place casserole under broiler about 6-8 inches from broiler. Brown the breadcrumbs. Remove from oven and serve.

- Boil turnip till tender (15-20 minutes). Remove turnip and allow to cool.
- When cooled, mash turnip with potato masher or ricer in a medium bowl. Mix in all other ingredients.

I first had this recipe at my husband's aunt's home back in 1979; got the recipe from her and have been making it to serve with turkey dinner ever since. I love the apples and turnip together! If you want to make it ahead of time, you can; just make it up to the layering stage then cover tightly and refrigerate. Put topping on, though, just before it goes into the oven.

- Preheat oven to 350F; butter a casserole dish (or spray with Pam) and set aside.
- Peel and dice turnip (this can be a tough job, as turnips are very dense) and place in a large pot.
- Cover with cold, lightly salted water and bring to a boil.
- Boil until turnip is tender (this takes longer than potatoes, usually), then drain and return to the pot.
- Mash turnip with the 1 tbsp butter and cream; stir in 1/4 cup brown sugar and the cinnamon; set aside.
- Peel apples, core, and slice.
- In prepared casserole dish, layer 1/3 of the turnip, then half the sliced apples, then 1/3 of the turnip, then the remaining apples, then the remaining turnip; smooth top.

- Preheat the oven to 375º.Start by peeling and thinly slicing the turnips and mincing the cloves of garlic. Grate about 2 cups of Gruyere cheese.In a large oven-proof skillet, melt 2-3 tablespoons of butter over medium-low heat. Place a single layer of turnips on top of the butter. Next, sprinkle a little of the garlic on top, then - and this is purely optional and really not all that necessary - add a couple of tablespoons of butter. Next drizzle a healthy splash of chicken broth over the turnips. Next, do the same with the cream. Now add a nice layer of Gruyere - about ½ cup. - Preheat oven to 350 degrees. In an 8-inch square baking dish, arrange a single layer of turnips and sweet potatoes, overlapping slightly. Season with salt and pepper and sprinkle with one-third of the flour. Repeat to make 3 more layers, sprinkling with salt, pepper, and flour between layers. Dot top layer with butter, then slowly pour broth and wine into dish, keeping layers intact. Cover with foil and bake until vegetables are tender when pierced with a knife, 45 minutes.

FINNISH TURNIP CASSEROLE (LANTTULAATIKKO)
My grandfather was born in Finland and came to Canada with his family when he was 2. Eventually he married an English-Canadian girl who learned to make this from his stepmother. I have no idea how close it is to the authentic dish but it is a Markanen family tradition for Christmas dinner.

- 1. Place turnip in a large pot with enough water to cover. 2. Bring to a boil and reduce heat. Cook turnip until it's very soft, 30 to 40 minutes. Drain well and return to pot. 3. Mash well. (My mother uses her electric mixer to beat it but I think it's better if it's not super smooth.) 4. Add the sugar one tablespoon at a time, stirring and tasting after each addition. The turnip should taste a little bit too sweet. 5. Stir in the butter until melted and well mixed then add the beaten egg and mix well. 6. Add milk gradually while stirring. Mixture should be relatively sloppy, so add more if necessary. 7. Spoon turnip into a shallow casserole. 8. Melt butter and stir in bread crumbs. Sprinkle mixture evenly on top of the turnip. 9. Bake in a 350(F) degree oven for about 45 minutes, until crumb topping starts to brown and a knife inserted in the center comes out cleanly.
